Steps:

  • In a large bowl, cream 1 cup butter and 1/2 cup confectioners' sugar until light and fluffy. Beat in 2 cups all-purpose flour and 1/4 cup cornstarch. Shape into a ball and refrigerate for 1 hour. Roll out to 1/4 inch thickness, cut into appropriate size circles with a glass or cookie cutter and press into tart shells. Spoon 1 teaspoon jam into bottom of each shell.
  • In a large bowl, cream 1/2 cup butter and 1/2 cup white sugar until light and fluffy. Beat in rice flour and cocoa powder. Beat in eggs and 2 teaspoons almond extract. Fill tarts 2/3 full.
  • Bake in the preheated oven for 10 to 15 minutes, or until golden brown and filling is set. Allow to cool.
  • In a small bowl, Stir together 1 cup confectioners' sugar, 2 tablespoons butter and 1/2 teaspoon almond extract. Spread on tarts. Garnish each tart with a maraschino cherry.

A friend gave me this recipe. She got it from a King Arthur Flour catalog. That catalog has everything! These tarts are great! My friend decorates them with piped flowers for showers & teas.

Steps:

  • For dough: Beat the butter, sugars, and salt until fluffy. Add the egg and vanilla, and mix well. Stir in the flour until well blended, then refrigerate the dough for 30 minutes or longer.
  • Shaping: Place a rounded teaspoon of dough (about 1/2 oz.)into each ungreased mini-muffin cup. With floured fingers or a tart tamper, press the dough up the sides of the cups to form the floor and walls of the crust. Place the crusts in the refrigerator to chill while preparing the filling.
  • Filling: Crumble the almond paste into a small bowl. Blend in the sugar, salt and extract(s). Add one egg at a time to the almond paste, mixing well after each addition until there are no lumps.
  • Assembly and Baking: Preheat oven to 350 degrees F. Place a slightly rounded 1/4 teaspoon of the raspberry jam into each dough-filled cup. Top with almond filling. The almond filling should come to the top of the dough. Bake the tarts for 24 to 28 minutes, until they're puffed and golden brown. Allow the tarts to cool in the pan for about 10 minutes before turning them out to cool completely. While they cool, make the glaze.
  • Glaze: In a small bowl, mix the confectioners' sugar with the water until dissolved. Add the food coloring, if you're using it. Drizzle the glaze over the tarts. The tarts store well for 3 - 4 days in airtight containers; freeze them for longer storage.

Steps:

  • For the dough, beat the butter and sugar with the paddle on medium speed until very soft and light. Beat in the vanilla and the yolk and continue beating until smooth and shiny, about 3 more minutes. Stop the mixer, sift the cake flour and add to the butter mixture. Pulse the mixer on and off to incorporate the flour. Scrape the dough onto a piece of plastic, wrap and chill it until firm.
  • For the almond filling, combine almond paste, sugar, yolk and zest and beat by machine until smooth. Beat in butter, scrape bowl and beaters and beat in eggs. Continue beating until light.
  • Stir in flour. Divide the dough into 4 parts and roll one piece at a time on a floured surface. Use each piece of dough to line a 3 to 4 inch diameter tart pan. Mass the scraps together after rolling the dough for the first four pans and line the last two.
  • Arrange the sliced berries evenly on the crust in each pan, then top with the almond filling, spreading it evenly with a metal spatula. Strew evenly with the sliced almonds.
  • Bake the tarts at 350 degrees about 25 minutes, until dough is baked through and filling is set.
  • Cool in pan, unmold and dust with confectioners' sugar. Decorate each tart with a few whole berries.

Steps:

  • In a large bowl, cream the butter and cream cheese until smooth. Gradually add flour until well blended. Refrigerate for 1 hour. , Shape into 1-in. balls. Place in ungreased miniature muffin cups; press onto the bottom and up the sides to form a shell. , For filling, in a small bowl, beat the almond paste, eggs and sugar until blended. Quince and Almond Tart With Rosé image

Steps:

  • Make the poaching liquid: In a large saucepan or small Dutch oven, combine the rosé, sugar, vanilla, cinnamon stick, star anise, salt, and cocktail bitters (if using). Use a vegetable peeler to remove wide strips of lemon zest (just the yellow layer, avoiding the white pith) and add to the pan. Cut the lemon in half and squeeze both halves into the pan, seeds and all (discard the lemon halves). Bring the mixture to a simmer over medium heat, stirring once or twice to dissolve the sugar, then remove from the heat.
  • Prepare the quince: Working with one quince at a time, use a sharp knife to shave off the ends of the quince and then use a vegetable peeler to peel the fruit. Set aside the peels in a bowl and reserve for later. Halve the quince through the stems and use a melon baller or round teaspoon measure to scoop out the seeds and cores, adding them to the peels in the bowl. As you work, drop each peeled and scooped quince half into the poaching liquid.
  • Poach the quince: Once all the quince are in the poaching liquid, add water to the pan if needed just to cover the fruit. Press a round of parchment paper onto the surface of the liquid, eliminating any air bubbles, then place a small plate on top-this will keep the quince fully submerged as they poach. Bring the mixture to a lively simmer over medium-high heat, reduce the heat to maintain a gentle simmer, and cook until the quince are tender but not mushy and a paring knife slides easily through the flesh, as little as 25 minutes for very ripe fruit but possibly as long as 1 hour. Check the quince every 10 minutes or so. Remove the pan from the heat and let the quince cool in the liquid until warm.
  • Make the quince jelly: Use a slotted spoon to remove the quince from the poaching liquid and transfer to a cutting board to continue to cool. Dump the reserved skins, seeds, and cores into the poaching liquid and bring to a boil over medium-high heat. Boil, stirring occasionally, until the mixture is very thick and syrupy and the bubbles are slow to pop, 20 to 25 minutes. Strain the syrup through a fine-mesh sieve into a heatproof bowl. Press on the solids with a heatproof spatula to force as much liquid through the sieve as possible (discard the solids). You should have about ⅔ cup liquid. If you have much more than this, transfer the strained liquid to a small saucepan and simmer until it's reduced to the right amount. Due to all the natural pectin in the seeds and peel of the quince, this liquid will solidify into a soft jelly when chilled. Cover and refrigerate the jelly.
  • Slice the quince: Cut the quince halves crosswise into thin slices between ¼ and ⅛ inch thick. If preparing the quince ahead of time, set them on a plate, cover, and refrigerate.
  • Preheat the oven and prepare the skillet: Arrange an oven rack in the center position and preheat the oven to 400°F. Lightly brush the bottom and sides of a 10-inch ovenproof skillet with a thin coating of oil. Line the bottom with a round of parchment paper, smoothing to eliminate any air bubbles. Brush the parchment very lightly with more oil and set aside.
  • Roll out the almond paste: Working on a separate piece of parchment paper, use the heel of your hand to flatten the almond paste into a round. Place another piece of parchment on top and use a rolling pin to roll the almond paste into a thin, even round measuring about 9 inches in diameter. Set aside.
  • Roll out the pastry: Remove the pie dough from the refrigerator and let soften at room temperature for about 5 minutes. Unwrap the dough and place it on a lightly floured surface. Use a rolling pin to beat the dough all across the surface to make it more pliable. Dust over top and underneath the dough with more flour, then roll it out, dusting with more flour as needed, into an 11-inch round. Use a sharp knife or a wheel cutter to cut the pastry into an even 10-inch round, tracing a dinner plate or a cake pan as a guide. Slide the pastry onto a plate and refrigerate until it's time to assemble the tart.
  • Assemble the tart: Spoon all but about 3 tablespoons of the chilled quince jelly into the bottom of the prepared skillet (reserve the remaining jelly for glazing the tart). Layer the quince slices over the jelly in the skillet, overlapping tightly into whatever pattern you like (rows, a rosette, or free-form!). Uncover the almond paste round and carefully place it in the skillet, centering over the quince. Remove the pastry from the refrigerator and slide it into the skillet, then use a spoon to tuck the edges of the pastry down between the quince and the sides of the skillet. Use a paring knife to make about 8 small slits across the pastry to allow steam to escape.
  • Bake: Transfer the skillet to the oven and bake for 20 minutes. Reduce the oven temperature to 350°F and continue to bake until the pastry is golden brown and the jelly is bubbling up around the sides and starting to turn golden, another 25 to 35 minutes. Remove the skillet from the oven and let cool for 5 minutes.
  • Turn out the tart and glaze: Working over the sink and using towels or mitts to protect your hands from hot flowing juices, place a rack over the skillet and invert. Give the rack a sharp tap on the counter to release the tart, then slowly remove the skillet. Peel away the parchment if stuck to the tart. Let cool for about 10 minutes, then while the tart is still warm, brush with the reserved jelly to glaze the fruit. Slide the cooled tart onto a platter and serve at room temperature.
  • Do Ahead: The poached quince and quince jelly can be refrigerated up to 2 weeks. The tart covered and stored at room temperature, will keep up to 4 days but is best served on the first or second day (the crust will soften over time).
  • Cooks' Note
  • Any inexpensive rosé wine will do for this recipe, just as long as it's decent enough that you wouldn't mind drinking it on its own.
  • Quince will stay hard as a rock even when ripe, so the best indicators of ripeness are their color and scent. Look for quince that are more yellow than green and give off a strong floral, tropical-fruity aroma. If they don't smell like anything, leave them on your counter-they're not ready yet!
  • Be very careful when scooping the cores from the quince, as the raw flesh is very hard and slips happen easily.

Steps:

  • To make two crusts, in a large bowl, combine the sugar and flour.
  • Cut the butter into the flour mixture with a pastry blender or two knives until the mixture has the texture of coarse meal.
  • Using a fork, toss the mixture while adding the water, almond and vanilla extracts. Toss just until the pastry holds together.
  • Divide the pastry in half and press into two nine-inch tart pans. Chill for one hour.
  • Preheat the oven to 400 degrees.
  • Bake the crusts for 10 minutes. Remove from the oven and cool on a rack. Press down any crust that puffs up.
  • To make the filling, in a large bowl, mix all the remaining ingredients. Let stand in a warm place for 20 minutes to dissolve the sugar.
  • Pour the filling into the prepared crusts and bake for 30 to 40 minutes, or until the tops brown and caramelize. Turn the tarts several times during baking to brown evenly.
  • Remove from the oven and cool on a rack. Serve at room temperature with whipped cream, if desired.

Steps:

  • Very thinly roll out the pastry on a lightly floured surface. Stamp out 12 x 9cm circles with a fluted cutter, if you have one, and use to line a bun tin. Spread 1 rounded tsp of the cherry jam in the bottom of each tart.
  • Whizz the cake to crumbs in a food processor, then tip into a mixing bowl and add the flour, butter, ground almonds, caster sugar, eggs and almond extract. Beat together until smooth, then divide between the tarts, spreading a little with the back of a teaspoon to cover the jam. Scatter over the flaked almonds and openfreeze for 2 hrs, then wrap well in cling film and freeze for up to 2 months.
  • Heat oven to 180C/160C fan/gas 4 with a baking sheet in it. Unwrap the tarts from the freezer and loosely top with a sheet of foil. Bake on the heated baking sheet for 30-40 mins until golden, removing the foil halfway. Cool the tarts a little, then add a splash of water into the icing sugar to make a runny icing. Drizzle over the tarts and leave to set.

Steps:

  • Make the almond tart dough: In a small bowl, lightly whisk the egg and set it aside. Put the almonds and sugar in the bowl of a food processor, and pulse until the almonds are finely ground. Add flour and salt and pulse again just until mixed. Add the butter and pulse until sandy (about 6 to 10 quick pulses). Pour in the egg and pulse just until the dough begins to cohere into a ball. Form the dough into a disk, wrap it tightly in plastic wrap, and refrigerate it for at least 1 hour or overnight.
  • Make the coconut cream filling: Place the white chocolate in a heatproof bowl. In a small saucepan set over medium heat, heat the cream just to boil. Pour it over the white chocolate and let stand for 30 seconds. Slowly, starting in the center of the bowl, whisk the cream and white chocolate until smooth. Cover and refrigerate this ganache for 4 hours or overnight before proceeding (the coconut and rum will be added later).
  • Place the tart pans in the freezer for 30 minutes. Preheat the oven to 375 degrees F. Line the tart crusts with aluminum foil, and fill each one three-quarters full with pie weights or dried beans. Bake them for 15 minutes, then remove the foil and weights and bake for another 10 minutes or until lightly browned.
  • Make the coconut cream filling: Meanwhile, in the bowl of a standing mixer fitted with the whisk attachment, beat the white chocolate ganache at medium speed until soft peaks form. Do not over whip. Gently fold in the coconut and the rum. Divide the filling evenly among the cooled tart shells and place in the refrigerator while you make the chocolate glaze.
  • Make the chocolate glaze: Place the milk and dark chocolate in a medium heatproof bowl. In a saucepan, heat the heavy cream until it is just about to boil. Pour it over the chocolates and whisk to combine. Let the mixture set for about 10 minutes. Remove tarts from the refrigerator and spoon the glaze evenly over each one. Top tart with one almond and refrigerate again until glaze sets up, about 10 minutes.

  • Put 2 strips of baking paper across tin to make lifting pie out easier.
  • Line tin with rolled out pastry.
  • Spread Jam over pastry base.
  • Mix together filling ingredients except flaked almonds.
  • Pour filling over jam and sprinkle with flaked almonds
  • Bake for approx. 30 minutes until golden brown. Allow to cool in tin before removing.

  • Prepare the crust: Preheat oven to 400 degrees with rack in center. Butter a 10-inch tart pan with a removable bottom; set aside. In a medium bowl, whisk to combine flour, sugar, and salt. In a small glass measuring cup, stir together butter, vanilla, and 1/2 tablespoon water; pour over flour mixture. Stir to combine. With floured hands, press dough into prepared pan. Bake for 10 minutes. Remove tart shell from oven, and reduce heat to 350 degrees.
