OVEN-ROASTED CRAB CAKES

We had about a bunch of king crab left over and my hubby wanted me to make crab cakes with it. I'd never made them before so I did some research. This recipe is a combination of a few different ones - but came out GREAT! He was VERY happy and it is now going to be a repeat recipe! Hope you enjoy it too!

Oven-Roasted Crab Cakes image

Steps:

  • Sort through crab and discard any bits of shell. Press out moisture with paper towels.
  • In a large bowl, combine celery, minced chives, mayonnaise, egg, mustard, and Old Bay; mix well with a fork.
  • Add crab and 1/4 cup panko; stir gently just to mix.
  • Put in fridge for 1/2 an hour or more if time permits.
  • Put remaining panko in a shallow bowl.
  • Shape crab mixture into about 6 cakes about a 1/2 inch thick.
  • Place each cake in panko to coat on each side - place on baking stone or dish and reform into shape. Should be sort of flat across - about a 1/2 inch thick - and formed around the edges.
  • Bake in a 475°F regular or convection oven until golden brown, 15 to 18 minutes.
  • With a spatula, transfer crab cakes to a platter. Add any sauce you want - but they turned out great without any sauce.

Steps:

  • Spread crushed cornflakes in a shallow baking pan.
  • Whisk mayonnaise, mustard, seasoning, cayenne and egg yolk.
  • Add crab meat.
  • S& p to taste.
  • Divide crab cake mixture into 10 equal piles and form slightly flattened cakes.
  • Turn cakes over in crushed corn flakes until covered.
  • Cover pan w/ plastic, transfer cakes to pan and cover with more plastic wrap.
  • Chill 2-4 hours.

Steps:

  • Preheat the oven to 400 degrees F.
  • For the crab cakes: Gently fold together the crabmeat, breadcrumbs, mayonnaise, chives, Dijon mustard, seafood seasoning, 1 teaspoon kosher salt, 1 teaspoon freshly ground pepper and the juice and zest of one lemon in a large bowl. Refrigerate the crab mixture for 15 minutes to firm up; this allows the breadcrumbs to absorb some of the liquid, helping the crab cakes bind together.
  • Meanwhile, make the tartar sauce: Combine the mayonnaise, dill pickles, capers, chives, zest and juice of 1 lemon in a medium bowl and mix until combined. Season to taste with salt and pepper. Cover and refrigerate until ready to use.
  • Scoop heaping half cups of the crab mixture and pat into 2 1/2-inch wide patties. Lightly press them together so they do not fall apart while cooking. You should have 8 patties.
  • Heat 3 tablespoons unsalted butter and 3 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the crab cakes to the pan and cook until golden, about 2 minutes, then flip using a flat metal spatula.   • Preheat the oven to 400 degrees F. Coat a baking sheet with nonstick cooking spray.
  • In a medium bowl mix together the egg, mustard, Worcestershire sauce, lemon juice, crab boil seasoning, and hot sauce. Stir in the bell pepper and scallion. Gently fold in the crab, 1/4 cup of the bread crumbs, salt and pepper. Put the remaining bread crumbs in a shallow dish.
  • Divide the crab mixture into 8 mounds. Shape each mound into a round and coat in bread crumbs. Transfer to the prepared baking sheet and flatten the crab cake to form a patty about 1-inch high. Repeat to form the remaining crab cakes.

BAKED CRAB CAKES WITH LEMON MUSTARD SAUCE

These are great using finely crushed Ritz Crackers in place of the bread crumbs. When zesting the lemon, start with 1/2 and if you like it more lemony use the zest of the other half of the lemon. Same when making the sauce. Taste using the juice of 1/2 lemon and see how you like it. If you want more lemon, then add the rest of the juice. It is really about personal preference with this recipe. If you use canned crab, make sure you squeeze it to get all the juice out before mixing with the other ingredients. Lump crab is great for making these.

Baked Crab Cakes With Lemon Mustard Sauce image

Steps:

  • Preheat the oven to 400.
  • In a large bowl, mix together mayonnaise, Dijon mustard, lemon zest, Old Bay, parsley, scallions, and egg. Add crab meat, season with salt and pepper, and stir well.
  • Form crab cakes into a ball using about 1/4 cup of crab mixture for each cake.
  • Dip the cakes into the breadcrumbs, flatten to about 1 inch high, and place on a lightly oiled sheet pan.
  • Bake for 10 minutes.
  • While the crab cakes are baking, prepare the Lemon Mustard Sauce by combining all the ingredients in a small bowl. You can also mix this up ahead and chill before serving.
  • Serve the crab cakes with Lemon Mustard Sauce.

Having lived by the Chesapeake Bay on Kent Island, MD nearly my whole life, I was challenged to develop this authentic Maryland style crab cake about a year ago. Many people claim to have the true Maryland crab cake, but this one uses all lump meat with almost no filler added and tastes incredible! Let me know what you think!

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
  • Combine bread crumbs, baking powder, parsley, mustard powder, pepper, and seafood seasoning; set aside. Stir together mayonnaise, butter, Worcestershire, and egg product until smooth. Fold in crab meat, then fold in bread crumb mixture until well blended.
  • Shape mixture into 12 crab cakes, about 3/4 inch thick, and place onto prepared baking sheet.
  • Bake in preheated oven for 15 minutes, then turn the crab cakes over, and bake an additional 10 to 15 minutes, until nicely browned.
