- Preheat oven to 400 degrees.
- Combine first 5 ingredients.
- Add 1 pound of shrimp to mixture and marinate for at least 10 minutes.
- Break up Ramen noodles into small pieces.
- Equally divide ramen noodles onto 4 large sheets of foil.
- Place one-fourth of shrimp onto each pile of noodles.
- Pour one-third of a cup of water onto each pile and securely wrap up packages.
- Bake for 10 minutes or until shrimp and noodles are cooked through.
- Pour packets into individual bowls and top with reserved green onion slices.

- Cook the noodles according to package directions; drain, set aside.
- Heat the oil and butter in skillet, then add garlic and scallion; cook while stirring for about 2 minutes.
- Add the shrimp and sauté for about 2 minutes until they begin to turn pink (don't overcook).
- Add the milk, Parmesan cheese, butter, cayenne, and lime juice and cook, stirring, about 4 to 5 more minutes until sauce is created.
- Toss the shrimp and sauce with the cooked egg noodles, serve, and enjoy!

SHRIMP AND VEGETABLE STIR-FRIED NOODLES

- Heat the olive oil in a large saute pan over high heat until shimmering. Add the snow peas, garlic, ginger, carrots and scallions and saute. Add the shrimp and cook until pink, 2 to 3 minutes. - In a measuring cup, combine the fish sauce, lime juice, oil and vinegar and whisk together. Whisk in the sugar, garlic and jalapeno. Pour half into a medium bowl and half into a large bowl. Add the shrimp to the medium bowl and toss.
- Heat a cast-iron grill pan over medium-high heat. Grill the shrimp until they are pink and opaque, 2 to 3 minutes per side. Remove from heat and set aside. Add the carrots, and cucumbers, zucchinis and beets to the dressing and toss until very coated. Fold in the mint, cilantro and scallions. Sprinkle with the peanuts and top with the grilled shrimp. Serve immediately.
EASY SHRIMP LO MEIN
Cheap and easy alternative to take out. Our kid loves ramen noodles, so this is a great way to make him eat his veggies without him even realizing it! You could make this with chicken, beef, or pork as well, just use the corresponding ramen soup flavor. I'm sure that a lot of people would also add sesame oil for more authentic flavor, but I find sesame oil overpowering (personal preference).

- Heat 3 tablespoons oil, curry powder, and cayenne, if using, in a 12-inch nonstick skillet over medium-low heat, stirring occasionally, until fragrant, about 4 minutes. Remove skillet from heat and set aside.
- Bring 1½ quarts water to boil. Break rice noodles into thirds and place into a large bowl. Pour boiling water over noodles and stir briefly. Soak noodles until flexible, but not soft, about 2½ minutes, stirring once halfway through soaking. Drain noodles and add in the curry mixture, soy sauce and sugar; using tongs, toss until well combined. Set aside.
- Wipe out skillet with paper towels. Heat 2 teaspoons oil in skillet over medium-high heat until shimmering. Add in shrimp in an even layer and cook without moving them until bottoms are browned, about 90 seconds. Stir and continue to cook until just cooked through, about 90 seconds longer. Push shrimp to 1 side of skillet. Add 1 teaspoon of oil to the cleared side of skillet. Add eggs to clearing and sprinkle with ¼ teaspoon of salt. Using a rubber spatula, stir eggs gently until set but still wet, about 1 minute. Stir eggs into shrimp and continue to cook, breaking up large pieces of egg, until eggs are fully cooked, about 30 seconds longer. Transfer shrimp-egg mixture to a second large bowl.
- Reduce heat to medium. Heat remaining 1 teaspoon oil in a now-empty skillet until shimmering. Add in garlic and ginger and cook, stirring constantly, until fragrant, about 15 seconds. Add in bell pepper and shallots. Cook, stirring frequently, until vegetables are crisp-tender, about 2 minutes. Transfer to the bowl with the shrimp and egg mixture.
- Return skillet to medium-high heat, add broth to skillet, and bring to a simmer. Add noodles and cook, stirring frequently, until liquid is absorbed, about 2 minutes. Add in the shrimp mixture and vegetable mixture and toss to combine. Add in the bean sprouts, green onions and lime juice, toss again until all of the mixture is well combined.
