Steps:

  • Oven temp to 350F.
  • Sift together flour, sugar, baking powder and salt.
  • Stir in oats.
  • To the dry ingredients, add eggs, salad oil and bananas; mix until combined.
  • Distribute blueberries evenly through batter.
  • Turn into greased and floured 8x5" loaf pan.
  • Bake 1 hour 10 min.
  • Cool in pan 10 min.
  • ,remove and cool completely before slicing.
  • Yields: 1 loaf.

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter and flour a 9- by 5- by 3-inch loaf pan. Set aside.
  • In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a large bowl, beat the sugar, oil, eggs and vanilla until blended. Stir in the bananas and blueberries. Add the dry ingredients and stir just until blended.
  • Pour the batter into the prepared loaf pan. Bake until a cake tester inserted in the center of the loaf comes out clean, about 1 hour. Cool for 15 minutes. Remove the loaf from the pan and cool completely on a wire rack, about 2 hours.

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.

This recipe is from "Better Homes and Gardens,Best Bread Machine recipes". I have made a LOT of bread, and this is at the top #1 spot on my list. And surprise! Its even better cold! I used ocean spray craisens in place of blueberries,They are cranberries that are cherry flavored. I also substituted 1/4 cup wheat gluten, and 1/4 cup milled flax seed for some of the flour, and used 2 Tablespoons sugar and the rest was splenda.I had some frozen banana so I used that. . (Those are my personal changes, to make it a little healthier.) For 2 pound loaf, your machine must hold 10 cups or more. This is for a 2 pound loaf of bread. Servings are a guess, since I had to list something. This loaf rises nice and high, so its a big sized loaf. Time is a guess as it doesn't take but minutes to throw it in the machine, and I didn't pay attention to the machine time, so the time is a guess .

Steps:

  • Place ingredients in the pan of the bread machine.
  • Select the Dough setting, and press Start. Mix the bread for 3 to 5 minutes until the bananas are mashed and all ingredients are thoroughly combined. If necessary, use a rubber spatula to push the dough from the sides of the bread pan. When 3 to 5 minutes have passed on the clock display, press Stop. Do not continue mixing. Smooth out the top of the loaf with the rubber spatula.
  • Select the Bake setting, and press Start. The Bake cycle time may vary with machines, but should be about 50 minutes. To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is batter on the toothpick, reset the machine on Bake and continue to bake an additional 10 to 15 minutes. Test again with the toothpick to ensure the bread is completely baked. Remove the pan from the machine, but allow the bread to remain in the pan for 10 minutes.
