Steps:

  • Remove odd pots and pans from oven.
  • Preheat oven to 350º / 180º.
  • Cream together butter and sugar.
  • Add eggs and crushed bananas.
  • Combine well.
  • Sift together flour, soda and salt. Add to creamed mixture. Add vanilla.
  • Mix just until combined. Do not overmix.
  • Pour into greased and floured loaf pan.
  • Bake at 350º / 180º for 55 minutes.
  • Keeps well, refrigerated.

Steps:

  • Preheat oven to 350°.
  • In a medium bowl, combine the flour, cocoa powder, baking soda, and salt, stirring with a whisk or sift if the cocoa is lumpy.
  • In a large bowl combine sugar and butter and beat with a mixer at medium speed until well creamed, for at least two minutes.
  • Add eggs and beat well.
  • Add bananas, vanilla, and coffee and beat on low speed until blended.
  • Add flour mixture and combine just until moist.
  • Stir in walnuts and spoon batter into a greased 8 x 4" loaf pan.
  • Bake for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean.
  • Cool 10 minutes in pan on a wire rack, then remove from pan.
  • Cool completely on wire rack before slicing.

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, cream the butter. Beat in egg, molasses and banana. Mix in whole wheat flour, all-purpose flour, baking soda, salt, nutmeg and walnuts; stir until well blended. Pour batter into prepared pan.
  • Bake in preheated oven for 55 to 65 minutes, or until a toothpick inserted into center of the loaf comes out clean.

Mocha Chocolate Chip Banana Muffins image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Blend butter or margarine, sugar, egg, banana, dissolved coffee, and vanilla in food processor for 2 minutes. Add flour, salt, baking powder, and soda, and blend just until flour disappears. Add chocolate chips and mix in with wooden spoon. Spoon mixture into 15 to 18 paper-lined muffin cups.
  • Bake for 25 minutes. Cool on wire racks.

BANANA MOCHI BREAD image

Steps:

  • Combine first six ingredients in a large mixing bowl. Separately mix oil and vanilla and add to dry ingredients.
  • Add eggs and mix together until batter is well blended. Stir in bananas and nuts.
  • Pour into 4 greased loaf pans (8 1/2 x 4 1/2 inches). Let batter sit for about 5 minutes before putting it in the oven.
  • Bake at 350 degrees for 1 hour, do a toothpick test, if it comes out clean, it is done.
  • Remove from oven onto a wire rack to cool.
