  • Preheat the oven to 400 degrees F (200 degrees C). Grease 18 muffin cups or line with silicone baking cups.
  • Combine bananas, sugar, milk, oil, egg, and vanilla extract in a large bowl. Mix well. Add oats, all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, and salt; mix until just combined.
  • Divide batter evenly between the prepared muffin cups.
  • Bake in the preheated oven until tops are golden brown and a toothpick inserted into the center of a muffin comes out clean, about 18 minutes.

  • Preheat the oven to 375. Coat a 12-cup muffin tin with cooking spray.
  • Measure 1/2 cup of the walnuts into a food processor and grind to a fine meal. Place the ground walnuts, flour, chocolate chips, baking powder, cinnamon, and salt in a large bowl and stir until thoroughly combined.
  • Combine the brown sugar, oil, yogurt, milk, egg, banana, and vanilla extract in a medium bowl and stir until smooth. Add the banana mixture to the flour mixture and stir until thoroughly combined. Stir in the remaining 1 cup walnuts and mix well (the batter will be thick).

Yum Banana Split in a muffin. I made adjustment to this recipe. The original recipe says to put the chocolate chip and pecans on top of the muffins before you bake them. I just felt it needed to be in the muffin. Then it states to add a cherry immediately after you remove it from the oven. I just couldn't see the cherry staying on top if I did that. So I've put it all inside the muffin. My only concern is that it may be to much chocolate so you may want to cut the chocolate chips down to 1/2 cup unless you are a serious chocolate lover. You can also leave out the pecans, if you like. But I hope you all enjoy!!

  • Preheat the oven to 350 degrees F. Line a muffin pan with paper liners.
  • Whisk the flour, baking soda and salt in a medium bowl.
  • Whisk the bananas, yogurt, brown sugar, granulated sugar, oil, vanilla and egg in a large bowl until lightened and smooth. Add the flour mixture to the banana mixture and gently whisk until combined, scraping with a rubber spatula as needed. Fold in 1 cup of the trail mix. Divide the batter evenly into the muffin pan. Steps:

  • Preheat the oven to 375 degrees Fahrenheit. Line a standard-size 12-cup muffin tin with cupcake liners.
  • In a large bowl, whisk together the flour(s), oats, baking powder, baking soda, salt, cinnamon, allspice, nutmeg, and cloves.
  • In a medium bowl, mash the bananas, then whisk in the buttermilk, brown sugar, oil, egg, and vanilla extract, stirring until blended.
  • Pour the wet ingredients into the flour mixture, and whisk just until blended.
  • Divide the batter between the muffin cups - about 1/3 cup worth of batter for each cup (I use an ice cream scoop with a trigger and it makes the job SO much easier!)
  • Make the streusel topping. In a small bowl, stir together the flour, oats, brown sugar, cinnamon, and salt. Using a pastry blender, two butter knives, or your fingers, cut the butter into the flour/oat mixture until it is the consistency of coarse crumbs (the butter pieces should be about pea-sized). Distribute the streusel topping evenly over the muffins.

  • Allow to cool for about five minutes in the tins, then remove and place on a wire rack to cool.
