SAUDI DATE SWEET (WITH GLUTEN FREE OPTION)
This delicious sweet with surprise you as to how good it tastes. It's just perfect along with a glass* of tea masha Allah. - A strongly brewed tea is traditionally served in small glasses throughout the Middle East. I'm sure this would be wonderful as a treat during Ramadan as well. Modified from a recipe found on http://www.yasalamcooking.com.

Steps:
- On medium heat in a 9-inch skillet add butter. Add walnuts and mix until lightly toasted. Add cardamom, brown sugar, soft dates and flour. With a wooden spoon mix until nuts and dates are covered. Remove from heat.
- Place your hand in a plastic bag and shape mixture into walnut size ball shapes.
- Enjoy with tea or coffee or devour like we do, alone right away!

A simple delicious Gulf Arabian sweet. perfect with coffee or tea. Dates have always been of prime importance to survival in the desert. They are an ideal food, relatively cheap, easy to transport, and provide excellent nutrition. Recipe modified from The Complete Middle East Cookbook by Tess Mallos. Edit: This has been revised March 15, 2010 I don't use measuring spoons & cups so my guess of butter was off and has being corrected.

Steps:
- Remove pits from the dates and arrange on small plate.
- Melt the butter in a saucepan and stir in the flour.
- Cook over medium heat stirring constantly, until the flour turns a light- medium golden brown.
- Remove from heat and stir in the cardamom.
- Allow to cool slightly, stirring occasionally.
- While still pretty warm pour over the dates and allow to cool to room temperature before serving.
- Serve with coffee, or tea if preferred.
- Enjoy!

Sep 8, 2014 - I would have thought this dessert, Rangina (رنجينة الرطب) was of the Arabian Gulf Bedouin origins, with all the fresh dates, toasted flour, and ghee. I however was quickly corrected. Apparently it originated from port-inhabited areas, specifically Qatar, UAE, Oman, and KSA where people were more exposed to trade and diversity at the time.
