Steps:

  • In a medium size mixing bowl, add shredded beef and diced onions, mix well and set aside.
  • In a medium size sauce pan, add the oil, flour, and chili powder. Turn to medium heat and whisk the ingredients together.
  • Continue to whisk as the mixture begins to boil for one minute, then whisk in the water, tomato paste, cumin, garlic powder, and cayenne pepper until smooth. Allow the sauce to come up to a simmer. Once it reaches a simmering boil it will begin to thicken slightly after about 20 to 30 minutes.
  • Add salt to taste and 1/4 teaspoon sugar, mix to combine and then add about 1/4 cup of sauce to the shredded beef mixture and stir to combine. Set aside remaining sauce for enchiladas.
  • In a small size skillet, add oil to medium-high heat. Gently add one tortilla at a time and fry to a semi soft stage. Dab each tortilla with paper towels to remove excess oil.
  • As each tortilla is fried and dabbed with paper towels, stack them to keep them soft for rolling.
  • Preheat oven to 350 degrees F. Grease or spray with a nonstick cooking spray a 9x13 baking dish. Set aside.
  • Lay (one at a time) fried tortilla on a flat surface, add about 2 tablespoons shredded beef mixture to the middle of the fried tortilla and top with about 1 teaspoon shredded cheese.
  • Roll the tortilla tightly and place in the baking dish (seam side down). Repeat until all 12 tortillas are filled. (For best results, line the enchiladas into two rows of 6).
  • Pour the enchilada sauce evenly over the top of the filled tortillas, and then add remaining shredded cheese evenly to the top of the sauce and top with the sliced olives.
  • Cover baking dish with foil and bake in preheated oven for 35 to 40 minutes, or until bubbly and hot. Serve with sour cream, optional.
  • Makes: 6 servings.

3 cups beef, shredded
1 small onion, diced
3 tablespoons canola oil
2 tablespoons all-purpose flour
2 tablespoons chili powder
2 cups water
4 ounces tomato paste
1/2 teaspoon cumin
1 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1 teaspoon salt
1/4 teaspoon sugar
1 dozen corn tortilla
1 cup oil, for frying tortillas
4 cups cheddar cheese, shredded
1 (4 ounce) can black olives, sliced, drained
1 cup sour cream, for topping (optional)

Steps:

  • Preheat the oven to 350 degrees F.
  • Trim, cut, pat dry and season the beef with salt and pepper. Coat the bottom of a large heavy Dutch oven with oil. Heat the oil, over medium heat, and brown the beef, in batches, being careful to not crowd. Add 1 tablespoon of oil, if needed, to finish the beef. As the beef browns, add it to a bowl and keep warm. Add 1 tablespoon of canola oil to the pot over medium heat and add the onions; cook for 3 to 4 minutes. Add the garlic, cook for 1 minute more, then stir in the stock to deglaze the pan. Add the browned beef, the vinegar and the water and cover tightly. Put the pot in the oven and after 45 minutes, give the beef a stir. Cover and cook for an additional 2 hours and 15 minutes, stirring every 30 to 45 minutes. Remove from oven and let cool for 20 to 30 minutes. Shred with forks, incorporating the onions and garlic.
  • When ready to assemble, put 1/2 cup enchilada sauce in the bottom of a 13 by 9-inch baking pan. Heat a medium saute pan over medium-high heat with just enough enchilada sauce to coat the bottom. Dip the tortillas, 1 at a time, into the sauce, and cook until tender, about 1 minute each. Combine the cheeses in a medium bowl. Remove the enchiladas to a flat surface. Fill each with some of the shredded meat and cheese, (reserve some cheese for the top of the baking pan). Roll and arrange them, seam side down, in the baking pan, packing the enchiladas tightly. Add additional sauce to come 1/3 up the sides of the enchiladas, then sprinkle a line of cheese, lengthwise, down the center of the pan. Garnish with green onions and black olives. Bake until bubbly, about 25 to 30 minutes. Remove from the oven, let sit for 5 minutes and then serve with sour cream.
  • Add the boiling water to a large bowl and add all of the chiles. Let steep in water for 1 hour.
  • Transfer the chiles and the steeping liquid to a blender and puree for 3 to 4 minutes. Remove from the blender and strain through strainer.
  • Heat the oil in heavy saucepan over medium heat. Add the onions and garlic, saute until soft. Stir in the diced tomatoes, strained chiles, oregano, cumin, salt, black pepper and cloves. Cover, lower the heat and simmer for approximately 30 minutes.

5 1/2 pounds chuck, trimmed and cut into 2-inch cubes
1/2 tablespoon kosher salt
1 tablespoon freshly cracked black pepper

Steps:

  • For the filling: In large pot, cook ground beef, black pepper, chili powder, garlic powder and cilantro over medium heat until beef is browned all the way through.
  • For the gravy: In a large pot on low heat, add flour and vegetable oil. Cook, stirring often, for 30 minutes, to make a dark brown roux for the gravy. • Place tortillas on a flat surface. Add meat to a tortilla and roll up, keeping the seam side down. Place on a microwave/oven-safe plate. Repeat until all tortillas are used.
  • Spoon gravy over enchiladas until covered. Top with Cheddar and place in microwave or oven until cheese melts. Top with onions, if using.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef with onion in a skillet over medium heat until meat is crumbly and no longer pink, about 10 minutes. Drain grease. Stir 1 cup Cheddar cheese, sour cream, parsley, taco seasoning, oregano, and black pepper into the ground beef until cheese has melted. Mix in enchilada sauce, chili powder, garlic, and salt; bring to a simmer, reduce heat to low, and simmer until meat sauce is slightly thickened, about 5 minutes.
  • Lay a tortilla onto a work surface and spoon about 1/4 cup of meat sauce down the center of the tortilla. Top meat sauce with 1 tablespoon black beans and a sprinkling of black olives. Roll the tortilla up, enclosing the filling, and lay seam-side down into a 9x13-inch baking dish. Repeat with remaining tortillas. Spoon any remaining meat sauce over the enchiladas and scatter any remaining black beans and black olives over the top. Sprinkle tortillas with 1/4 cup Cheddar cheese.
  • Bake in the preheated oven until cheese topping is melted and enchiladas and sauce are bubbling, 20 to 22 minutes. Let stand 5 minutes before serving.

BEEF ENCHILADAS

My mom created this recipe and when I tried it I was amazed! It is very, very tasty and super easy to make. Tip: If you have extra filling, like I did, just pour over the top of tortillas and top with extra cheese. You could then add salsa, olives, etc. on top as well. Special Note: I put in 8 oz. cans as I could not remember the can size of each ingredient. Just pick up the normal can size for each item at your grocery store.

Steps:

  • In a large saucepan lightly brown the ground beef with the minced onion and garlic add in salt, pepper, ground cumin, and some jalapeño juice.
  • When meat is light brown, drain fat from beef.
  • Put meat back on stove and add both cans of diced tomato with green chilies and cilantro simmer until tomatoes are soft.
  • At this point you may add some diced jalapeños, or just add more jalapeño juice (i like it hot!) add tomato sauce and enchilada sauce.
  • Simmer on med-low heat with saucepan covered.
  • While meat is simmering, you can start to cook the tortillas.
  • Heat up canola oil in a pan on med-high heat.
  • Add one tortilla at a time, sprinkling both sides with chili powder.
  • Cook until outer ring is harder and the middle part of the tortilla is a bit softer (as long as the tortilla is no longer brittle) continue until all 30 tortillas are cooked.
  • You may want to wipe off the oil after you remove them from the stove.
  • Also, if the heat is too high, the chili powder may turn black, but this will not really affect it's taste, so don't worry, just turn down the heat a lil'!
  • By the time all the tortillas are done, the meat should be perfect!
  • (It should look kinda soupy) in a large square pan scoop a bit of the meat sauce and spread all over (lasagna pan is fine) lay a tortilla down and fill with meat and cheese (try not to get too much sauce with the meat) carefully roll up tortilla and place against the side of the pan.
  • Start at the end of the pan and work your way across.
  • After you can no longer fit any more rolled up tortillas in the pan, use the remainder of the meat sauce and cheese for the topping heat up oven to 400°F.
  • Place in oven for about 20-30 mins or until cheese is melted and light brown and the tortilla edges that stick up from the sauce are a bit hard turn off your oven.
  • For those that like onions on top of your enchiladas, you may add them at this time and place pan back into the oven (make sure oven is turned off!) if you have any meat sauce left, you may enjoy it over some home made Mexican rice!
  • Tabasco sauce, salsa, and/or sour cream is perfect for the topping.
  • Enjoy with some saltines!

Steps:

  • Preheat oven to 350°F. In a medium sauce pan, heat tomato sauce, enchilada mix, and water. Sprinkle a little salt & pepper into sauce. Heat to boiling, remove from heat & place on a hot pad on counter wherever you are preparing your enchiladas.
  • While sauce is heating, place meat with tray in microwave and prepare meat as directed on package. Keep meat in its tray and pull it so it is shredded. Then add about 1 tsp. of salt and mix. Once meat & sauce are ready add 1/4 of the sauce to the meat, & mix.
  • Now take a glass plate and place 1 tortilla shell on it. Brush some of the sauce on both sides of tortilla shell. Put 3 Tbsp. of meat mixture down center of shell and sprinkle with a little cheese. Then roll up like a burrito and place seam side down in a greased 9x13 glass baking dish (use cooking spray). Repeat. Once all enchiladas are in baking dish and all meat has been used, pour remaining juice from meat tray into the remaining sauce and mix together. Pour all of sauce over the enchiladas and top with the rest of the cheese. (Cheese should completely cover them).
  • Bake for 15 minutes until cheese in completely melted. If you want to make a double batch just double all ingredients except for the meat just use a family size pack. This should make about 10 enchiladas.
