MAKE-AHEAD ITALIAN MEATBALLS
Keep these easy-to-make meatballs on hand for last-minute dinner creations. Tossed with pasta or baked into a casserole, the possibilities are endless!

Steps:
- Heat oven to 400°F.
- Mix ground beef, onion, bread crumbs, milk, egg, salt and pepper. Shape mixture into thirty 1-inch balls. Place in ungreased rectangular pan, 13x9x2 inches.
- Bake uncovered about 15 minutes or until no longer pink in center and juice is clear. (To serve immediately, continue as directed in step 5--except decrease simmer time to 15 minutes.)
- Place meatballs on ungreased cookie sheet. Freeze uncovered about 20 minutes or until firm. Place partially frozen meatballs in heavy plastic bag or freezer container. Seal, label and freeze no longer than 3 months.
- About 25 minutes before serving, mix chili sauce, water, pasta sauce and mustard in 2-quart saucepan. Add meatballs. Heat to boiling, stirring occasionally; reduce heat. Cover and simmer about 20 minutes or until meatballs are hot.

SPAGHETTI AND MEATBALLS

Steps:
- Heat oven to 350°. Mix all ingredients. Shape mixture into 1 1/2-inch balls. Place in ungreased jelly roll pan, 15 1/2x10 1/2x1 inch. Bake uncovered 15 to 20 minutes or until beef is no longer pink in center and juice is clear.
- Meanwhile, heat oil in Dutch oven over medium-high heat. Cook onion and garlic in oil, stirring occasionally, until onion is tender.
- Stir in remaining Sauce ingredients except spaghetti and cheese, breaking up tomatoes. Heat to boiling; reduce heat to low. Cover and simmer 30 minutes, stirring occasionally.
- Add meatballs to sauce. Cover and simmer 15 minutes. Cook and drain spaghetti as directed on package. Place spaghetti on large platter. Top with meatballs and sauce. Sprinkle with cheese.

Steps:
- Spray 5- or 6-quart oval slow cooker with cooking spray. Mix melted butter, tomato paste and salt in slow cooker. Add onions and mushrooms; toss to coat. Stir in broth.
- In large bowl, mix beef, bread crumbs, milk, egg, grill seasoning and soy sauce. Shape into about 24 (1 1/2-inch) meatballs. Place meatballs in slow cooker on top of vegetable mixture.
- Cover; cook on Low heat setting 3 to 4 hours or until meatballs are thoroughly cooked (165°F); stir. In small bowl, beat cornstarch and cold water. Quickly stir into slow cooker; cover. Increase to High heat setting; cook 5 to 10 minutes or until thickened. Serve over mashed potatoes. Sprinkle with parsley.

WAIKIKI MEATBALLS

- In a large bowl, combine ground beef, cracker crumbs, onion, egg, milk, ginger and salt. Shape mixture by rounded tablespoonfuls into meatballs.
- Heat olive oil in a large skillet over medium heat. Place meatballs in skillet and cook until evenly brown, and meat is no longer pink. Drain excess fat.
- In a small bowl, combine the cornstarch, brown sugar, reserved pineapple juice, vinegar and soy sauce. Mix until smooth, then pour into the skillet with meatballs. Cook, stirring constantly, until mixture thickens and boils, about 5 minutes. Stir in the green pepper and pineapple chunks. Heat through.

PINEAPPLE SWEET & SOUR MEATBALLS
I have been making this since I was a young girl. Always been a favorite of mine and others. I got this out of an old cookbook by Betty Crocker.

Steps:
- Meat Balls.
- Mix meat ball ingredients well and shape into balls.
- Cook over medium heat, turning occasionally until brown, about 20 minutes.
- OR bake in an ungreased oblong pan (13x9x2 inches), in 400 degree Fahrenheit oven until light brown, 20-25 minutes.
- Drain fat from meat balls.
- Sweet& Sour Sauce.
- Mix brown sugar and cornstarch in pan.
- Stir in pineapple (with syrup), vinegar and soy sauce.
- Heat to boiling, stirring constantly, reduce heat to simmer.
- Add meat balls.
- Cover, simmer, stirring occasionally, 10 minutes.
- Stir in green peppers.
- Cover, simmer until green peppers are crispy-tender, about 5 minutes.

EASY BASIC MEATBALLS
This is originally from the Betty Crocker cookbook. My 3rd and 4th grade daughters are learning to cook and this is simple enough for them, but turns out well enough to serve to guests. (When they use this recipe, they usually sub 1/4-1/2 tsp onion powder for the chopped onion.) It's also a very versatile recipe: sometimes we also add other spices -- oregano, basil, thyme for Italian food or cinnamon and mint for Greek food.) We always oven-bake these, though there are also pan-fry and microwave options in the cookbook that we've not tried. Also good to cook ahead and freeze for later use.

Steps:
- Combine all ingredients and shape into 20-24 meatballs (1 to 1-1/2 inches each).
- To oven bake: preheat oven to 375 degrees F. Place in ungreased 9x13 pan (you may want to line it with foil for easier clean-up).
- Bake 20-25 min or until light brown and cooked through; turn meatballs halfway through, if desired, to help maintain a round shape.
- To pan fry: Cook in skillet on medium heat, turning as needed, until brown (approx 20 min).
- To microwave: Place in micro-proof 12x7 pan and cover loosely.
- Micro on high for 3 minutes; rearrange meatballs.
- Cover again loosely and micro until brown inside, approx 5-7 min more.
- Let stand covered for 3 minutes.
