BIRD'S NEST PIE
When we were kids, our favorite dessert at Grandma's house was Bird's Nest Pie. Maybe we were fascinated by the name of the treat, but that can't be the only reason we liked it-there were never any leftovers! This family recipe was handed down from my great-grandmother.

Steps:
- Divide apples evenly between two greased 9-in. pie plates; set aside. In a bowl, combine flour, sugar, baking soda, cream of tartar, buttermilk and egg; mix well. Divide batter and pour over apples. Bake at 350° for 25-30 minutes or until pies are lightly browned and test done. Invert onto serving plates (so apples are on the top). Combine all topping ingredients; sprinkle over apples. Serve warm.

BIRDS NEST PIE
Here's an easy one for ya. Plain and simple. I usually thinly slice the apples with the slicing disc on my food processor and away they go. Enjoy with a dip of your favorite ice cream.

BIRD'S NEST PIE (OAMC)
Modification of Bird's Nest Pie found in Once-a-Month Cooking, removing the egg. Works very well and was a family pleaser.

Steps:
- Break spaghetti in half, and cook as directed on package until al dente; drain.
- While spaghetti is warm, combine with flax seed, 6 tablespoons water, and Parmesan chees.
- Use a spoon to press spaghetti into bottom and up sides of a well-greased, 10-inch pie plate.
- Saute onion in margarine, mix with sour cream, and spread over crust.
- At same time, brown sausage in a large skillet; drain fat.
- Stir in tomato paste and water. Bring to a boil; reduce heat. Simmer, uncovered, for 10 minutes, stirring occasionally.
- Spoon over sour cream mixture.
- Cover dish with foil and freeze. Put cheese slices in a 1-quart bag; attach to side of dish.
- To prepare for serving, thaw pie and cheese, preheat over to 350 degrees. Bake pie, uncovered for 25 miutes. Arrange mozzarella slices on top; return pie to oven until cheese melts.
SHEPHERD'S PIE OAMC
I just made my first batch of this and it smells great. I made homemade gravy and plan on freezing from-scratch mashed potatoes separately. I also think that this would be great to have on hand for when you do have leftover mashed potatoes.

Steps:
- In a dutch oven or stockpot, cook the beef over medium heat.
- About halfway through add the onion.
- Cook until the beef is no longer pink, drain off the grease.
- Microwave the carrots for 2 minutes.
- Add the gravy and veggies.
- Cool and put into 2 freezer containers. I put them in freezer bags.
- To prepare: Thaw frozen beef mixture in the refrigerator.
- Put into a greased 2 quart baking dish.
- Top with mashed potatoes, melted butter and sprinkle with paprika.
- Bake uncovered at 350F for 30-35 minutes or until heated through.

CITRUS PORK CHOPS - OAMC
Adapted from 'Ness' at www.once-a-month-cookingworld.com. I changed recipe only slightly to suit what I usually have in stock and what is easier for me. Easy Pork Chop recipe for the grill or stovetop cooking. OAMC recipe or can be marinated before cooking.

Steps:
- Combine ingredients in a large Ziploc freezer bag.
- Remove as much air as possible.
- Label and freeze.
- Defrost overnight in the fridge; pork will marinate as it defrosts.
- To serve, remove chops from bag and place in a non-stick skillet; reserve marinade.
- Cook for 5 minutes, or until brown, repeat for other side.
- Add marinade, and reduce heat to medium. Cover and cook for 7 minutes, or until chops are no longer pink in the middle. Transfer pork to a plate and cover. Turn heat to high and whisk for 3-5 minutes until sauce is thick. Spoon over pork.
- OR cook on heated grill until done, baste with marinade while cooking.

COTTAGE PIE OAMC
Another recipe from "Don't Panic- Dinner's in the Freezer"- with some alterations. The original recipe calls for cheese sprinkled on top and canned veggies. I have always made it without cheese and never missed it- it is very flavorful. I like to use frozen veggies rather than canned whenever possible. I have used frozen corn, and frozen veggie medley but prefer peas in this recipe. This can be made as a large casserole or as individual pot pies.

- Brown ground beef with the onions, drain. Add salt, pepper, garlic. Spread beef evenly in bottom of 8 x 8 casserole dish.
- Layer veggies on top of the beef, followed by tomato soup and picante sauce. Top with mashed potatoes.
- OAMC- Allow to cool completely, then wrap and freeze.
- To serve, thaw completely if frozen and bake at 350 degrees for 30 to 45 minutes or until heated through.
