MACARONI AND BLUE CHEESE

Very rich taste and unique twist on an old favorite. Goes quite well served with a grilled steak or chicken breast. A wonderful recipe given to me by my dear friend (and great cook) Amy.

Macaroni and Blue Cheese image

Steps:

  • Preheat oven to 350* and butter 13x9 glass baking dish.
  • Cook pasta (about 8 min) and drain.
  • Melt butter in heavy large saucepan over medium to low heat, then add flour and cook 1 minute stirring constantly (do not allow to brown).
  • Gradually whisk in cream and milk and simmer until mixture thickens slightly, whisking occasionally (about 3 minutes).
  • Reduce heat to low and add grated cheddar cheese and only 1 cup blue cheese.
  • Whisk about 2 minutes or when cheese starts to melt, then flavor with salt and pepper.
  • Add cooked pasta to sauce, stirring to coat, and transfer mixture to 13x9 dish.
  • Sprinkle with remaining 1/2 cup blue cheese and bake about 25 minutes or until sauce begins to bubble.
  • Sprinkle with chives and serve- enjoy!

Four-Cheese Macaroni image

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a Dutch oven, melt butter over medium heat. Stir in flour, salt and pepper until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 2 minutes or until thickened. , Reduce heat to low; stir in cheeses until melted. Drain macaroni; add to cheese sauce and stir until coated.

Steps:

  • Preheat oven to 350°F. Butter 13x9x2-inch glass baking dish. Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally, about 8 minutes. Drain.
  • Meanwhile, melt butter in heavy large saucepan over medium-low heat. Add flour. Cook 1 minute, stirring constantly (do not allow to brown).
  • Gradually whisk in milk and cream. Simmer until mixture thickens slightly, whisking occasionally, about 3 minutes. Reduce heat to low. Add grated cheddar cheese and 1 cup crumbled blue cheese. Whisk until cheese melts, about 2 minutes. Season sauce to taste with salt and pepper.

Blue Macaroni and Cheese image

Steps:

  • Boil pasta to al dente in salted water, drain, and set aside with a lid to keep warm.
  • In a medium saucepan, melt the butter over medium-low heat, add the flour and cook for about 3-5 minutes or until it smells nutty, stirring constantly.
  • Whisk in the milk and bring to a boil, stirring occasionally.
  • Remove from the heat and add the rest of the ingredients.
  • Stir into the pasta and serve.

1 lb farfalle pasta (farfalle = bowtie) or 1 lb elbow macaroni (farfalle = bowtie)
2 tablespoons butter
2 tablespoons flour
1 1/3 cups milk
8 -10 ounces monterey jack cheese or 8 -10 ounces mozzarella cheese

  • Cook cavatappi pasta (I like to use these spirally noodles because they sop up the cheese) according to package instructions and strain and leave the pasta in a colander while you make the sauce.
  • In the same pot used to cook the pasta that is now empty, melt the butter and as soon as it is almost melted add in ½ pint of heavy whipping cream. Whisking occasionally and let the butter and cream come to a slow boil, add the flour and garlic salt in and whisk until combined.
  • Next add the milk, and whisking occasionally let the milk come to a boil (about 3-5 minutes). As soon as you start seeing bubbles (the mixture will rise in the pot a little) add the shredded cheddar and while whisking occasionally the cheddar will melt and then you’ll add 5 oz of the blue cheese crumbles (1/2 of the blue cheese) and let it melt. Turn the heat off. Add the cooked pasta back into the sauce pot and stir the pasta to coat it with sauce.
