EASY BLUEBERRY MUFFINS I
These muffins are absolutely delicious. The secret is in NOT mixing the batter too much: the less you mix, the better the muffins are. You can replace the blueberries with chocolate chips to make an even better muffin--so my kids say.

CORN 'N BLUEBERRY MUFFINS
Here's an easy, ultra moist, muffin recipe that will become one of your very favorites. The addition of fresh blueberries make them extra yummy adding color and a little more sweetness. Instead of oil I used a combination of yogurt and mayonnaise. I like to use my LARGE 6-cup muffin tin which I find makes them much more moist. I've never made them in a smaller tin. NOTE: If you use frozen blueberries, be sure to defrost them in warm water then drain well before using.

BLUEBERRY NUT MUFFINS
Muffins are a great part of a brunch or tea. These are not too sweet, which lends to the favor of the fruit in this muffin. Sprinkle sugar on top of muffins before baking for a sweeter top.

BLUEBERRY WHOLE-GRAIN CORN MUFFINS
Packed with whole grains, tender and moist, just a bit on the crumbly side, but not overly sweet. From The Baking Sheet, King Arthur's publication. Making these with the white whole wheat flour is best, although you can use whole wheat or even regular flour. When I made these, I sprinkled coarse sugar (or sparkling sugar) on top before baking.

TO DIE FOR BLUEBERRY MUFFINS
These muffins are extra large and yummy with the sugary-cinnamon crumb topping. I usually double the recipe and fill the muffin cups just to the top edge for a wonderful extra-generously-sized deli style muffin. Add extra blueberries too, if you want!
