CRESCENT PIZZA
My son want pizza for breakfast this morning. He found the recipe in his 4-H book but we did not have the refrigerated biscuits. So we improvised and this is what we came up with. You can add cooked ham, chopped hard cooked eggs or what ever else you want.

Steps:
- Preheat oven to 400 degrees.
- Grease a cookie baking sheet.
- Gently unroll out the crescent dough on the baking sheet so it stays in a long rectangle.
- Press any seams together.
- Layer the crust with the sauce, pepperoni and then the cheese.
- Bake for 10 - 15 minutes or until center is baked. (Ladypit said her's was ready in 11 minutes).
- Note: 12 minutes leaves the inside still doughy.

BREAKFAST PIZZA

- Preheat the oven to 450 degrees F.
- Brush the pizza crust on both sides with 1 tablespoon olive oil. Place crust directly onto the middle rack of the oven and bake for 10 minutes.
- While the crust is cooking, break the eggs into a bowl and add the reserved spinach liquid. Whisk them well and season them with salt and pepper. Add the remaining 2 tablespoons olive oil to a 10-inch skillet and heat over medium heat. Add the onions and cook until translucent, about 4 minutes. Add the dry spinach, breaking up the pieces, and heat through, about 2 minutes. Scrape the vegetable mixture into the eggs and beat it well to distribute the spinach evenly. Turn the heat down to low and pour the egg mixture back into the pan. Gently stir the eggs until they are just set and still moist, about 3 to 4 minutes.
- Spread the egg mixture evenly onto the baked pizza crust and top with the cheese. Return to the oven until the cheese is melted and lightly browned, about 1 minute. Serve hot.
BREAKFAST PIZZA

- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- Using a rolling pin, roll out the pizza dough to a thickness of about 1/4 inch. Transfer the pizza dough to the lined baking sheet and brush the dough with the melted butter. Sprinkle with 2 tablespoons Cinnamon-Sugar and bake until golden brown, about 10 to 15 minutes. Cool the pizza crust on a wire rack.
- Meanwhile, in a medium bowl, mix together the cheese, cream, lemon juice, and zest.
- Spread the cheese mixture over the cooled crust. Top with mixed berries and sprinkle with the remaining Cinnamon-Sugar. Slice like a pizza and serve.
- Cut the vanilla bean in half, lengthwise. Using the back of a knife, scrape along the inside of the vanilla bean to collect the seeds. Scrape vanilla bean seeds into a small bowl. Add sugar and cinnamon and stir to combine. Set aside in a small serving bowl.

- Preheat oven to 375 degrees F (190 degrees C).
- Brown breakfast sausage in a large skillet until no longer pink and the meat is crumbly, about 10 minutes. Drain excess grease and set sausage aside.
- Separate crescent roll dough into triangles and place into a 12-inch pizza pan with a rim, points toward the inside. Press the triangles together to join; pinch a 1 1/2-inch rim up the side of the pizza pan.
- Spoon cooked sausage into the bottom of the crust. Spread hash browns over the sausage and sprinkle with Cheddar cheese. Whisk eggs, milk, salt, and black pepper in a bowl until smooth and pour the egg mixture over the cheese layer. Sprinkle pizza evenly with Parmesan cheese.
- Bake in the preheated oven until eggs are set and crust is lightly browned, 25 to 30 minutes.

AMAZING BREAKFAST PIZZA
I used to make this when I worked for a gas station/pizza place so I could sell it by the slice to the early morning rush. I would end up selling more for breakfast than lunch at times!

- This recipe is a lot quicker if you precook your Bacon and Sausage the night before and store them in your refrigerator as I do -- the prep time will be based on this.
- Preheat your oven to 400°F
- For the Pizza Dough, if you can find it frozen, uncooked, and preshaped. it's a huge time saver. If not, just prepare it as you would normally on a large pizza pan (I make the crust about 1/4 thick). Excluding the 1 1/2 of the outer crust, make little indentations with your fingertips in the dough. This helps the egg settle and cook more evenly.
- Beat the eggs with the milk, and pour over the center of the crust. Use your fingers, or a pastry brush to evenly disperse the egg.
- Evenly cover the egg with the strips of ham.
- Scatter the sausages, and if you want to have them, add the onion. Salt and pepper it lightly.
- Add a blanket of the Mozzarella cheese, then the Cheddar.
- Sprinkle the crumbled bacon.
- Put this wonderful pie in the oven on the center rack and check it after 15 minutes. It's hard for me to give an approximate cooking time as I used a ride through oven for 7 minutes at 475°F at my work. If it looks done, then it is. The egg layer is thin enough to cook in 10 minutes or so, so it's really just about the crust and how you like it.
- Once you've deemed it to be done, take it out of your oven and garnish it with some chopped chives. Slice, and enjoy! It's great on the go, and is wonderful hot or cold. I'm hoping this recipe will make your household as happy as it made my customers :).

- 1. Preheat the oven to 350°F/180°C, and place one rack in the center and one rack in the top third of the oven. Line the baking sheets with parchment paper.
- 2. Shape the brioche dough into a rectangle about 8 in/20 cm long, 4 in/10 cm wide, and 1 in/2.5 cm thick. Using a ruler and a knife, cut the rectangle into eight 2-in/5-cm squares by first dividing it in half horizontally and then dividing it vertically into strips 2 in/5 cm wide. Each square of dough should weigh about 3 1/2 oz/100 g. Stretch each square into a circle about 5 in/12 cm in diameter as if you are making a small pizza. Stretch the inner part of the circle so that it is quite thin and shape the edge of the circle to create a rim. The center should be almost paper-thin, and the finished circle should look like you are making the crust for a mini deep-dish pizza. Place the brioche circle on one of the prepared baking sheets and repeat with the remaining dough squares, spacing them 2 to 3 in/5 to 7.5 cm apart and using both baking sheets.
- 3. Using the back of a spoon, spread 1 tbsp of the crème fraîche over the base of each brioche circle, spreading it evenly over the base but leaving the rim bare. Cut the bacon slices in half. For each pizza, press three half slices of bacon against the brioche rim to create a bacon wall. Divide the caramelized onions evenly among the pizzas, spooning and spreading the onions next to the bacon and leaving the center of the circle bare except for the crème fraîche.
- 4. Bake the pizzas, switching the baking sheets between the racks and rotating them back to front about halfway during baking, for about 15 minutes, or until the edges of the pizza start to turn light brown. Remove the baking sheets from the oven and carefully crack an egg into the center of each pizza. Sprinkle about 1/4 cup/30 g of the mozzarella on top of each pizza, covering both the egg and the exposed rim of brioche. Bake for another 8 to 10 minutes, again switching the baking sheets between racks and rotating them back to front about halfway during baking, or until the cheese has melted, the edges of the egg are cooked but the yolk is still wiggly, and the edges of the pizza are golden brown. Remove from the oven. Let the pizzas cool for 8 to 10 minutes to allow the eggs to set up a bit before serving.
