CRISPY BROILED CATFISH FILLETS
Sneak a bit of the South into your supper plans--without a lot of fat--with this quick way to serve sweet catfish, coated with crunchy seasoned cornmeal.

Steps:
- Spray shallow baking pan with nonstick cooking spray. Beat egg in shallow dish or pie pan until foamy. Add milk; mix well. In another shallow dish, combine cornmeal, lemon peel, salt, thyme and pepper; mix well.
- Dip catfish fillets in egg mixture; dip in cornmeal mixture to coat. Arrange fish in sprayed pan.
- Broil 4 to 6 inches from heat for 8 to 10 minutes or until fish flakes easily with fork, turning once. Serve tartar sauce with fish.

- Preheat broiler pan for five minutes.
- Coat pan with shortening spray.
- In a small bowl, combine soy sauce, lemon juice, garlic powder, and liquid wood-smoke flavouring.
- Place catfish on broiler pan.
- Brush with soy sauce mixture.
- Broil three inches from heat for 4- 6 minutes, basting occasionally for 3 minutes or until catfish flakes easily.

- Mix the oil, parsley, lemon juice, garlic, wine, and pepper in a nonmetallic bowl.
- Put the catfish into the marinade and refrigerate for at least two hours.
- Preheat the broiler and brush the hot rack with the marinade.

- Combine the buttermilk and hot sauce in a 13 by 9-inch casserole dish. Add catfish fillets and cover with plastic wrap and refrigerate for 1 hour. After 1 hour, remove the catfish from the refrigerator and pat dry with paper towels.
- Set up your grill for indirect heat at a medium-low temperature, about 275 degrees F.
- Mix together the oregano, lemon peel and salt, pepper, in a small bowl. Lightly coat the fish with olive oil and sprinkle the seasoning evenly over the catfish fillets.
- Put the catfish on the grill away from the hot coals. Smoke the catfish until it is fully cooked through and golden brown, about for 45 minutes. Remove the fish from the grill to a serving platter and serve with the Orange Dill Cream Sauce.
- Add all the ingredients to a serving bowl and serve with the smoked catfish.

BROILED FISH WITH LEMON GRASS
This is the way I grill large fishes, I wrapped it with aluminum foil so that the liquids will not spill out, it will taste better since the spices will absorb on it.

- Make a some deep slits on both sides of the fish. Sprinkle and rub both sides with the turmeric powder.
- Combine half of the onions with grated ginger, salt and pepper and fill each slit of the fish with the mixture.
- Insert the lemon grass inside the fish (the cavity that contains the intestines which you removed).
- Wrap the fish with aluminum foil then grill over low-medium heat. Grill each side for 8-10 minutes.
- While grilling, mix the remaining onions, olive oil, lime juice, soy sauce, pepper, garlic and ginger powder.
- Unwrap the fish, brush the sauce mixture on it then grill again over low heat, 2 minutes each side.
- Serve with your favorite dipping sauce.

- Line baking sheets with fillets.
- Broil 6-inches from heat, about 3 -5 minutes total for thin fillets, about 10 minutes total for fish about 1-inch thick.

- Combine egg and Italian dressing in shallow dish.

BROILED BASA FISH
I was going to make a WW recipe using Dover Sole, but the store didn't have it. They suggested Basa fish. I ended up only using the spices from the recipe and broiling the fish instead of baking it. It turned out really good. I don't know the points value for Basa fish, but I'll assume it's roughly the same as Dover Sole. So for a 5 ounce serving, this would be about 4 PointsPlus. I used Smart Balance Omega blend for my butter.
