BROWN SUGAR COOKIES
These are really tasty. The flavor is even stronger if you let them sit after baking them overnight!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Beat brown sugar, butter, eggs, and vanilla extract together in a bowl using an electric mixer until smooth and creamy.
- Whisk flour, baking powder, and salt together in a separate bowl. Stir flour mixture into butter mixture until dough is fully combined.
- Pour confectioners' sugar onto a large plate. Spoon dough, 1 1/2 teaspoons per cookie, onto confectioners' sugar and roll to coat. Arrange coated dough on a baking sheet.
- Bake in the preheated oven until edges are lightly browned, 12 to 14 minutes. Cool cookies on baking pan for 2 minutes before transferring to a wire rack to cool completely.

BROWN SUGAR COOKIES (GERMAN)
I found this recipe at www.fooddownunder.com and made these cookies for my family's annual Oktoberfest 2008. They were a big hit. They turned out soft and moist and tasted like a spice cookie with a hint of orange flavor.

Steps:
- Preheat oven to 350°F.
- In a medium mixing bowl, cream together sugar and shortening until light and fluffy.
- Beat in eggs, milk and orange rind.
- Stir together baking powder, spices, salt and flour; mix into sugar mixture.
- Stir in raisins and nuts (optional).
- Drop dough by teaspoonfuls onto greased cookie sheets.
- Bake for 10-12 minutes or until done.
- Remove from baking sheets to wire rack and cool.
- Store in airtight tins.

GERMAN GOSSAMER CRISP SPICE COOKIES
The paper thin cookies are traditional to northern Europe. "Gossamer" refers to something light and delicate and perfectly describes these crisp cookies.

Steps:
- In a medium bowl stir together flour, ginger, apple pie spice, cloves, cardamom, and red pepper; set aside.
- In a large bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add molasses and brown sugar. Beat until combined. Beat in flour mixture just until combined.
- Divide dough in half; cover and chill for 1 hour or until easy to handle.
- Preheat oven to 375°F
- On a lightly floured surface roll half of the dough at a time to a 1/16 inch thickness. Using a 2-inch round scalloped cutter, cut out dough. Place cutouts 1 inch apart on an ungreased cookie sheet.
- Bake in preheated oven for 5 to 6 minutes or until edges are browned. Transfer cookies to wire racks; cool. Makes about 66.
- TO STORE: Place in layers separated by waxed paper in an airtight container, cover. Store at room temperature.

GERMAN CHOCOLATE COOKIES
While a big slice of German chocolate cake may appeal to many, baking one from scratch may not. That's where these cookies come in. They satisfy the craving for deep, dark pools of warm chocolate, sweet pecans and fragrant coconut with only a fraction of the work. To toast the coconut, spread it out on a baking sheet and bake at 350 degrees for 5 to 10 minutes. Take it out of the oven when the edges and some of the coconut in the center are deep golden brown. It's fine if some of the coconut is still pale.

- Heat oven to 350 degrees. In a medium bowl, whisk together the flour, cocoa powder, baking soda and salt. In a large bowl, beat butter, granulated sugar and brown sugar together with an electric mixer on medium speed until fluffy, about 2 minutes. Beat in the egg and vanilla until smooth.
- Reduce the speed to low and beat in the flour mixture. Add coconut, chocolate and pecans and mix to just combine.
- Portion the dough in 2 tablespoon scoops and roll them into balls. Place them on parchment-lined baking sheets, at least 2 inches apart. Bake the cookies until dry on top but still soft in the center, about 10 minutes. Remove from the oven and immediately tap the sheets against a work surface to deflate them slightly. Let the cookies sit on the sheets for 3 minutes, then transfer them to a rack to cool completely.

- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and extracts. In another bowl, whisk flour, baking powder, spices and salt; gradually beat into creamed mixture., Divide dough in half. Shape each into a disk; wrap in plastic. - Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, cream together the butter and brown sugar. Beat in the eggs and vanilla extract until well blended. Combine the flour, baking soda, baking powder and salt; stir into the creamed mixture. On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto cookie sheets.
