CRISPY BAKED BUTTERNUT SQUASH
So much flavor concentrates in the skin of vegetables - I'm always delighted when I find a recipe that includes it. Note that some butternut can be very hard, so take care when slicing them. Baked squash is delicious as an appetizer with wild mushrooms or as a side dish with duck, pork and game.

- Heat the oven to 375 degrees F (190 degrees C).
- Using a large chef's knife, cut the squash in half lengthwise and scoop out seeds with a spoon. Set each half cut side down on a cutting board and cut them crosswise in 3/8-inch slices.
- Brush a heavy baking sheet generously with butter and oil. Line up the squash slices on the baking sheet and brush them. Sprinkle with sugar, salt, and pepper and tuck herbs around the slices.
- Cover with foil and bake in the oven 30 minutes. Remove foil and continue baking until undersides are brown, about 15 minutes, then turn the slices.
- Bake 5 to 15 minutes more until the squash is very tender, brown, and crispy around the edges, 50 to 60 minutes total. Don't hesitate to brush with more butter and oil during cooking if it looks dry. For serving, transfer to a platter or individual plates.

BAKED FARRO AND BUTTERNUT SQUASH

- Preheat the oven to 375 degrees F.
- Place the bacon on a baking rack set on a sheet pan and bake it for 20 to 30 minutes, until browned (it won't be crisp). Cut the bacon in very large dice.
- Meanwhile, in a small (9-inch) Dutch oven, such as Le Creuset, heat the olive oil and butter over medium heat. Add the onion and cook for 6 to 8 minutes, until tender and starting to brown. Add the thyme, 2 teaspoons salt, and 1 teaspoon pepper and cook for one minute. Add the farro and chicken stock and bring to a simmer. Place the squash on top of the farro mixture, cover, and bake in the same oven with the bacon for 30 minutes, until the squash and farro are tender. Check once during cooking and add a little chicken stock if it's dry.
- Sprinkle the bacon and Parmesan on the squash and farro and bake uncovered for 15 to 20 minutes, until most of the liquid evaporates, the farro and butternut squash are tender, and the cheese has melted. Serve hot directly from the pot.

- Preheat the oven to 425 degrees F. Put the squash and potatoes on a baking sheet. Brush the squash with half of the oil and toss the sweet potatoes with the other half, then sprinkle with salt and pepper. Turn the squash and sweet potatoes flesh-side down on the baking sheet and poke the skin of the squash all over with a fork. - Preheat oven to 325°.
- Peel the squash, cut it in half and seed it.
- Turn the cut sides down, and slice into 3/8 inch slices, lengthwise (like a cantaloupe).
- Arrange with the sides down on an oven tray, or baking dish lined with parchment paper.
- Mix the butter, bacon, rosemary and maple syrup together with a fork in a bowl until well blended.
- Room temperature butter makes this a lot easier.
- Salt and pepper to taste.

- Butter 2-quart baking dish and set aside.
- Position rack in center of oven and preheat to 350 degrees.
- Slice squash using firm pressure. If slicing by hand, slice into about 1/4 inch pieces.
- Melt butter in large skillet over medium heat.
- Add shallot and saute until softened, about 5 minutes.
- Stir in squash; add salt, nutmeg and pepper to taste and continue cooking 3 minutes.
- Transfer to prepared dish.
- Squash can be prepared ahead to this point. Cover and refrigerate.
- Bake, covered, 45 minutes.
- Add parsley to squash and toss lightly.
- Taste and adjust seasoning, if necessary, and serve.
