CLASSIC MEATLOAF
The secrets to this meatloaf are fresh, very finely diced vegetables that give it moisture and flavor--and a light touch in mixing together the ingredients. This hearty meatloaf is the perfect meal for cool fall and winter evenings, served with mashed potatoes and simple mushroom gravy.

Steps:
- Preheat the oven to 325 degrees F.
- Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
- Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
- Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
- Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
- Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
- Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

CAESAR COCKTAIL
Sometimes it seems there are as many Caesar recipes as there are Canadians of drinking age. The building blocks are usually the same: vodka, hot sauce, Worcestershire sauce, lime juice, spices (for the rim of the glass) and clam-tomato juice, be it the standard Mott's Clamato or one of the newer brands. But every bar and citizen has a special twist, usually in the departments of spices and garnish. This recipe is an adaptation of the one used by the bartender London Richard at his restaurant Sorso, near Calgary, Alberta. For vodka, he prefers Calgary's own Burwood Vodka. For the spiced rim, the nationally popular mix known as Montreal steak spice plays a part. The garnish is a pickled pineapple and a bacon-wrapped, cream-cheese stuffed pickle. This version is a bit less complicated. But since a Caesar is a form of individual expression, follow your creative urge wherever it takes you. As long as you've got the Clamato and a decently complex spiced rim, you'll end up with a wonderfully savory eye-opener that may render the Bloody Mary a dim memory.

10 WAYS TO USE CAESAR DRESSING BEYOND THE SALAD | KITCHN
From thekitchn.com
Estimated Reading Time 3 mins
- Use it as a marinade for meat. Toss chicken in Caesar dressing and let it refrigerate for a few hours or overnight. Then grill or roast to your heart’s content.
- Toss it with vegetables before roasting. Pick your veggies — broccoli, cauliflower, root vegetables, and potatoes all work well — and then toss them with dressing instead of olive oil and roast until they’re extra-caramelized and crispy.
- Use it as a dip for crudité. Just like crisp lettuce loves Caesar dressing, so does just about any other raw vegetable. Pour it in a little bowl and get dunking.
- As a dressing for pasta or potato salad. If you’re making pasta or potato salad, ditch your usual dressing and use Caesar instead. It’s thick enough that it will coat every inch of your ingredients and instantly boost the flavor.
- Spread it on a burger bun or sandwich bread before assembling. Forget plain ol’ condiments like mustard or ketchup and slather Caesar dressing on your burger bun instead.
- Use it instead of mayo for tuna or chicken salad. Caesar dressing makes for a much more interesting tuna or chicken salad. Replace the mayo in any recipe with it and it will be one you actually want to eat.
- Use it to coat chicken wings. Instead of Buffalo sauce, try tossing chicken wings in Caesar dressing before baking them for a fun twist on the crowd-pleasing snack.
- Make a better coleslaw. Just like for pasta or potato salad, using Caesar dressing for coleslaw is a win. It adds instant flavor and brings that touch of richness that coleslaw desires.
- Spread it on fish before baking. Use Caesar dressing as a quick and flavorful sauce for fish fillets like salmon or cod. Just spread some evenly over the top of each piece and bake as usual.
- Drizzle it over corn on the cob. Corn on the cob is wonderful with nothing more than a little butter and salt, but try switching up your routine next time by drizzling a little Caesar dressing over the cooked ear.
