CANDIED PINEAPPLE
Steps:
- Preparing the Pineapple
- If you are using a small Victoria pineapple, leave the greens attached and remove the skin, but keep the fruit whole. Otherwise, peel the pineapple, taking care to remove all of the eyes, then cut the pineapple crosswise into slices 1/2 inch thick. Remove the center with a round cutter. Place the whole pineapple in a deep bowl or arrange the slices in a single layer in a large, wide nonreactive dish.
- Soaking in the Syrup
- In a medium saucepan, combine the water and 3 cups of the sugar and bring to a boil over high heat. Pour the boiling syrup over the pineapple, cover, and set aside overnight.
- Cooking and Steeping
- The next day, pour the syrup into a large saucepan, add 1 cup sugar, and bring to a boil. Add the pineapple to the syrup, boil for 3 minutes, then remove from the heat, cover, and set aside overnight. Repeat this process two more times over two more days, adding 1 cup sugar to the syrup each time, then allow the pineapple to steep in the syrup for 1 week at room temperature. Remove from the syrup and enjoy!

Steps:
- Bring pineapple juice, sugar, and corn syrup to a boil; cook on medium heat 4 minutes. Add pineapple slices; simmer on low heat, turning frequently, 45 minutes or until translucent.
- Transfer slices to a wire rack set over a baking sheet and bake at 200 degrees until pineapple caramelizes and is less sticky, 60 to 90 minutes. Let cool on rack.

CANDIED FRUIT SLICES
This is a very prosaic name for a beautiful and delicious Christmas cookie, but it is the name Pillsbury, who originated the cookie, gave it. Candied cherries and nuts are added to a refrigerated cookie dough. When sliced, the fruit glistens in each slice. For the sake of appearance use equal parts of red and green cherries. You can even add candied yellow pineapple for more color in the cookies. I used to call these stained glass window cookies until a completely different cookie came out with that name (which tells you how old this recipe is!). But no matter what you call them, you'll enjoy their appearance on your cookie tray. Oh, you'll enjoy their taste, too! (Preparation time includes 4 hours chilling time.)

- Cream the butter. Gradually add the sifted confectioners' sugar, creaming well.
- Blend in the unbeaten egg and vanilla. Add the sifted flour; mix well.
- Stir in the pecan halves and cherry halves. (I like to substitute some yellow candied pineapple for a portion of the cherries to add more color to the cookies. Cut the pineapple into pieces about the size of the cherry halves.).
- Chill the dough 1 hour.
- Divide the dough into thirds. Shape into rolls 12 inches long. Wrap each roll in waxed paper or foil; chill at least 3 hours.
- Preheat oven to 325 degrees F. Cut each roll into slices 1/8th inch thick and place on ungreased cookie sheets.
- Bake in preheated oven for 13 to 15 minutes or until edges are delicately browned.

- Peel the pineapple, remove the eyes, then slice in about 3/8" slices. (You don't have to be super accurate, but you want the slices thicker than 1/4" and not quite 1/2".) As the slices dehydrate, they become thinner.
- Core the slices. If you can core the pineapple before you slice it, then that's okay. I find it easier to core each slice with my apple corer.
- Stir together the water and sugar in a large pot (I used my Dutch oven) over high heat. (If it doesn't look like this will cover all the pineapple, then add another 1/2 cup of sugar and one cup of water.)
