SLOW-COOKED CARIBBEAN POT ROAST

Slow-Cooked Caribbean Pot Roast image

Steps:

  • Place potatoes, carrots and celery in a 5-qt. slow cooker. In a large skillet, brown meat in oil on all sides. Transfer meat to slow cooker., In the same skillet, saute onion in drippings until tender. Add garlic; cook 1 minute longer. Combine the flour, sugar, brown sugar, seasonings, orange zest and cocoa. Stir in tomato sauce; add to skillet and heat through. Pour over beef., Cover and cook on low until beef and vegetables are tender, 6-8 hours.

Steps:

  • Heat the oil in a large skillet over medium-high heat. Place the roast into the hot oil and cook, turning frequently, until browned on all sides. Remove from the skillet and place in a slow cooker.
  • Cook garlic and onions in the skillet in the meat drippings until tender. Stir in the salt and tomato sauce. Combine the sugar, flour, cocoa powder, chili powder, oregano, cumin, coriander, cinnamon, and orange zest; stir into the tomato sauce. Pour the tomato sauce over the roast in the slow cooker. Add potatoes, carrots and celery. Cover, and cook on Low for 6 to 8 hours, or until meat is tender. Garnish with sliced almonds before serving.

Caribbean Pepper Pot Soup image

Steps:

  • Cook onions in oil in a skillet until tender.
  • Place onions in crockpot along with garlic, ginger, chili powder, scotch bonnet, coriander, celery seeds, salt, pepper, sugar, squash (or carrots), kidney beans, tomatoes and stock.
  • Stir to mix well.
  • Cover and cook on low for 8-10 hours or on high for 4-6 hours or until vegetables are tender.
  • Add coconut milk and stir well.
  • Set crockpot to high and cook for 15-20 minutes more.
  • Garnish with cilantro before serving.

This is a fab recipe I came across whilst looking for someone else! The recipe and text below are reprinted with permission from Sweet Hands: Island Cooking from Trinidad and Tobago by Ramin Ganeshram (2006 Hippocrene Books).

Trini Doubles: Caribbean Fried Dough and Chickpea Sandwiches image

Steps:

  • To make the dough:
  • Place the warm water, sugar, and yeast in a separate small bowl. Set aside until the mixture bubbles.
  • In a large bowl combine the flour, salt, turmeric, cumin, and black pepper. Stir the yeast mixture into the flour mixture and add additional lukewarm water as needed-about 1/2 cup-until the mixture comes together into slightly firm dough. Knead until smooth and elastic and cover with a damp cloth. Set aside in a warm place to rise until doubled in size, about an hour.
  • To make the filling:.
  • If using dried chickpeas, drain, place in a pot with 6 cups of fresh water. Simmer for about 1 hour, or until tender. Drain and set aside.
  • If using canned chickpeas, drain in a colander and rinse well with cold water. Set aside.
  • Heat the oil in a heavy skillet and add the onion. Cook until translucent. Add the garlic and stir well, frying for 1 minute more. Add the curry powder and mix well. Cook for 30 seconds and add 1/4 cup of water. Stir in the chickpeas, cover and simmer for 5 minutes. Remove the lid and add 1 more cup of water. Stir in the cumin, and salt and pepper, and lower the heat. Simmer until the chickpeas are very tender. Set aside.
  • To complete the doubles: Punch down the dough and allow it to sit for 10 minutes. Pinch off walnut-size pieces of dough and flatten each into a circle about 4 1/2 inches in diameter. Dampen your hands with water if the dough is sticky.
  • Heat about 1 cup of canola oil, at least 3 inches deep in a frying pan or medium saucepan. Test the oil by sprinkling a bit of flour into it. If the flour bubbles and sizzles the oil is ready. Add the dough circles and fry, turning once, until lightly browned on both sides, about 40 seconds. Place 2 tablespoons of chickpeas on each piece of fried dough Add the pepper sauce, Kuchela, and cucumber, if desired. Top with another piece of fried dough. Serve.
  • * Kuchela is a spicy condiment made from green mangoes and Scotch bonnet peppers. Check West Indian markets.

Steps:

  • Wash the meat & chop roughly into convenient pieces about 1 1/2 " square.
  • Put into a large heavy saucepan.
  • Cover with some of the water & bring very slowly to the boil.
  • When just beginning to boil, add salt & continue to simmer over a low heat for at least 1 1/2 hours.
  • Skim the scum from the surface.
  • Add a little more cold water, skim again, & repeat the process 3 times.
  • Add all the vegetables & seasonings except the peas.
  • Simmer for a further hour, skimming from time to time if more scum arises.
  • Stir in the peas, cook for a further 5 minutes, and serve very hot with plenty of pepper added.
  • NOTE: split peas can be used instead of pigeon peas.
