HAM WITH BOURBON-CHERRY GLAZE

- Heat oven to 350°F. Lightly spray 13x9-inch pan with cooking spray. Remove skin from ham; trim fat to 1/4-inch thickness. Make shallow cuts in fat 1 inch apart in diamond pattern. Rub peppercorns over surface of ham; insert cloves in centers of diamonds.
- Place ham in pan. Insert ovenproof meat thermometer so tip is in thickest part of ham and does not touch fat or bone. In small bowl, mix 1 1/4 cups of the cola, 2 tablespoons of the bourbon and 1/4 cup of the brown sugar; pour over ham. Bake uncovered 2 hours, basting with pan drippings every 15 minutes.
- In 1-quart saucepan, mix remaining 1/4 cup cola and remaining 2 tablespoons each bourbon and brown sugar. Add 2/3 cup of the preserves. Cook over medium heat 3 minutes or until glaze is hot and sugar is dissolved. Brush glaze over ham. Bake 1 hour 45 minutes longer or until thermometer reads 140°F. Transfer ham to serving platter; cover with foil. Let stand 30 minutes before carving.
- Skim fat from drippings in pan. Stir remaining 1/2 cup preserves into drippings with whisk. Transfer mixture to a saucepan. Heat to boiling; reduce heat. Simmer 8 to 10 minutes or until thickened. Serve glaze with ham.

BAKED HAM WITH SPICED CHERRY GLAZE

- Preheat the oven to 350 degrees F. Line a roasting pan with foil and spray it with nonstick spray.
- Score the top and sides of the ham with a small sharp knife in a crisscross pattern. Put the ham in the pan, pour 1/2 cup water or white wine into the bottom of the pan and bake, covered loosely with a tent of foil, 45 to 60 minutes.
- To make the glaze, combine the preserves, horseradish, brown sugar, cinnamon, cumin, cardamom, salt, and lemon juice in a medium bowl. Transfer the cherry mixture to a small saucepan and bring to a boil over medium heat. Boil until the glaze is slightly thickened, 2 to 3 minutes. Remove from the heat; stir in the lemon zest.
- Remove the ham from the oven and brush the top with 1/4 cup of the glaze. Bake, uncovered, until the ham is hot and an instant-read thermometer inserted into the center registers 140 degrees F, about 20 minutes longer. Remove the ham from the oven to a cutting board and let stand 10 minutes before slicing. Arrange the sliced ham on a serving platter and serve with the reserved glaze.

This cherry ham glaze give any ham a delicious, sweet, and slightly tart taste. I glazed a ham for Thanksgiving with this, and my company couldn't get enough of it. I was out of ham by the next day!

- Stir together water, vinegar, corn syrup, preserves, cinnamon, cloves, and nutmeg in a saucepan over medium-high heat. Bring to a boil, then reduce heat to low and simmer for 2 minutes.
- Brush 1/4 to 1/3 cup of this glaze over your ham about 30 minutes before it is finished baking. Stir any ham drippings into the remaining glaze and serve alongside the sliced ham.

Steps:
- Score the surface of the ham, making diamond shapes about 1/2-inch deep. Place the ham in a large, resealable bag. Add the bourbon, brown sugar, crushed pineapple, honey, and garlic to the bag; refrigerate at least 8 hours, turning the bag over several times while marinating.
- Preheat oven to 350 degrees F (175 degrees C).
- Transfer the ham and marinade to a large baking dish; pour the water into the dish. Attach the pineapple rings around the surface of the ham with toothpicks.
- Bake in preheated oven until the internal temperature reaches 165 degrees F (95 degrees C), basting occasionally with the sauce in the pan, 90 to 105 minutes.

BOURBON-GLAZED HAM
This recipe is from Favorite Lake City Recipes, a cookbook from the Army ammunition plant my husband works for. It was submitted by Mrs. Charles P. Longgood, Bldg. 1. It's become a family favorite and has been requested for Christmas dinner for several years now. I prefer using a spiral-cut ham as the flavor really gets into it better. Southern Comfort is my whiskey of choice, and I use either sliced or chunk pineapple.

- Preheat oven to 325 degrees F.
- Place ham fat side down on rack in shallow roasting pan.
- Bake for 2 hours, without basting, or until meat can be pierced easily with a fork.
- Remove ham from oven and let cool.
- When ham is cool enough to handle, cut away rind with a sharp knife.
- Score ham by cutting deeply through fat until you reach the meat.
- Make incisions about 1 inch apart, crosswise and lengthwise.
- Baste ham on all sides with 1/2 cup of bourbon.
- Combine dark brown sugar, dry mustard and 1/4 cup of bourbon and pat the mixture into the fat.
- Stud intersections with whole cloves.
- Arrange orange sections (or pineapple chunks) attractively.
- Baste ham with pan drippings and bake undisturbed for 15 to 20 minutes, to melt sugar and glaze.

BAKED HAM WITH BOURBON GLAZE
This is a classic Southern recipe for Easter or Christmas. The sweetness of the honey and molasses is cut by the bourbon and orange juice, making for a perfect glaze. Once the ham is cool and chilled, be sure to remove the fat from the drippings to save and serve with the leftovers...that is one of the best parts of the recipe!

- Microwave honey and molasses in a 1 quart glass dish at high 1 minute. Whisk to blend. Whisk in bourbon, juice, and mustard.
- Remove the skin and fat from the ham. Place ham in a lightly greased 13x9 inch pan. Make 1/4 inch cuts in ham in a diamond pattern. Pour glaze over ham.
- Bake on the lower oven rack at 350° for 2 to 2 1/2 hours or until a meat thermometer inserted into thickest portion registers 140°, basting every 15 minutes with glaze.
- Remove from pan, reserving drippings. Cover ham, and chill, if desired. Chill reserved drippings.
- Remove and discard fat from the drippings. Bring drippings to a boil in a small saucepan. Serve warm with the ham.

- Cut ham into 2-in. pieces; place in a food processor. Process until ground; transfer to a large bowl. Add ground pork, bread crumbs, eggs, onion, ground mustard and pepper; mix lightly but thoroughly. Shape into 1-1/2-in. balls., Place trivet insert in a 6-qt. electric pressure cooker. - Meanwhile, make glaze: In a small saucepan over medium heat, combine preserves, bourbon, honey, cloves, and cayenne. Bring to a boil, then reduce heat and let simmer, stirring occasionally, until liquid is slightly reduced, about 10 minutes.
- After ham reaches at least 120°, remove from oven and remove foil. Brush with about half of the glaze, aiming between all the slices.
- Place back in oven, uncovered for 15 minutes. Remove from oven once more and brush with remaining glaze all over top and between slices again.
- Place back in oven and continue to cook until ham reaches an internal temperature of 145°, 15 to 20 minutes more. Let ham cool for 10 minutes before carving.
