If you like Asian flavors, this is a great marinade for chicken or pork. This marinade recipe makes enough for 2lb of meat. Marinate red meat or poultry for 2 hours at room temp or 24-48 hours in the fridge.

Chinese Marinade image

Steps:

  • Finely grate the ginger, collect it up into a ball and squeeze out the juice into a bowl.
  • Stir in the other ingredients and use as required.

1 in piece fresh ginger, peeled
4 tablespoons dark soy sauce
2 tablespoons white wine vinegar
1 tablespoon dry sherry or 1 tablespoon rice wine
1 pinch superfine sugar
4 garlic cloves, very finely chopped
2 tablespoons clear honey

Steps:

  • Combine soy sauce, sugar, vinegar, cornstarch, cold water, ginger, garlic, and black pepper in a bowl.
  • Add chicken breasts to marinade and stir to coat.

Chinese Barbecued Chicken image

Steps:

  • Cut the chicken into quarters and rub each piece evenly with the salt.
  • Combine the rest of the ingredients in a blender or food processor and puree them.
  • Place the chicken in a resealable plastic bag and pour the marinade over.
  • Squish around good so the marinade is evenly coating the chicken.
  • Set aside to marinate at least 1 hour at room temperature, or refrigerate overnight.
  • Preheat broiler, light a fire in an open gril or turn on your gas grill.
  • When your chosen cooking method is hot, place the chicken on the grill and cook, over indirect heat, for about 45 minutes turning occasionally, or until meat is no longer pink near the joints.
  • This is really good served with steamed jasmine rice and greens or stir-fried pea pods and mushrooms.

Steps:

  • In a large bowl, thoroughly mix everything except chicken and basting sauce.
  • Add chicken making sure all pieces are well coated, cover bowl and refrigerate overnight.
  • For the basting sauce mix orange juice, lemon juice, pineapple juice and pour mixture into saucepan and bring to boil, reduce heat and simmer for 20 minutes.
  • Add honey, ketchup, duck sauce and mix thoroughly, set aside.

Steps:

  • Combine all ingredients, except pork, in a bowl and mix well.
  • Coat pork in mixture. I store mine in quart sized zipper bags, 2-3 chops per bag.
  • Let pork marinade in refrigerator for a minimum of 1 hour. I marinate for 24 hours.
  • Cook outdoors on grill until done. On my grill that's 4-5 minutes per side.
  • They also cook well indoors on a contact type grill. I generally cook for 5-6 minutes indoors.
  • Pork filled bags may be frozen with marinade and thawed to cook later.
  • **Note - Marinating time is not included in my "time to Make".

Marinated Chinese Chicken Salad image

Steps:

  • Mix marinade ingredients in a small bowl.
  • Place chicken in slow cooker and pour marinade over chicken, coating each piece well.
  • Cover and cook on low 6 to 7 hours or on high for 3 to 4 hours. (Depending on how large your chicken breast are. Mine were small and were done in 5 1/2 hours on low).
  • Remove chicken from slow cooker and cool.
  • Reserve juices and place in a small sauce pan and simmer for 5 minutes then strain if desired. (I didn't strain it but you might want to if you have excess residual.).
  • Shred chicken into bite-sized pieces.
  • In a small bowl, combine the dressing ingredients with 1/2 cup of the juice from the slow cooker.
  • In a large serving bowl toss together the shredded chicken, lettuce, carrots, peanuts, cilantro, and noodles.
  • Just before serving, drizzle with the salad dressing.
  • Toss well and serve.
