CHINESE PLUM SAUCE

The condiment sū méi jiàng is typically made with plums, vinegar, sugar and some spices. Our version of plum sauce has the perfect balance of sweetness, brightness and light spice. It's traditionally used as a dipping sauce for fried foods like spring rolls, egg rolls and fried wontons, and for basting duck, chicken and pork. But there's no need to stop there. Try it tossed with noodles or a stir-fry, or mixed into a salad dressing for a twist.

Steps:

  • Place the plums, sugar, apple cider vinegar, unseasoned rice vinegar, soy sauce, Chinese five-spice powder, ginger coins, chile and 1/4 teaspoon salt in a small pot. Bring to a boil, reduce the heat to medium, cover and simmer until the plums are soft, about 20 minutes.
  • Allow the mixture to cool for 5 minutes, then transfer to a blender, filling halfway. Put the lid on, leaving one corner open. Cover the lid with a kitchen towel to catch splatters, and pulse until smooth. Alternatively, use an immersion blender until smooth.
  • Transfer the blended plum mixture back to the same pot and cook over medium heat, stirring frequently, until the mixture is thick and you can see the bottom of the pot when you run a rubber spatula across the bottom, about 5 minutes.
  • Transfer to a medium bowl or plate to cool to room temperature, about 2 hours.
  • The sauce can be stored in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 2 months.

1 pound fresh plums, preferably red plums for color, pitted and chopped (about 4 cups)
2 sticks brown slab sugar or 1/2 cup light brown sugar (see Cook's Note)
1/4 cup apple cider vinegar
2 tablespoons unseasoned rice vinegar
1 tablespoon soy sauce or tamari
1/4 teaspoon Chinese five-spice powder
2 coins ginger, about 1/2 inch thick
1 dried chile pepper, such as chile de árbol or dried Thai chile, optional
1/4 teaspoon kosher salt

CHINESE PLUM SAUCE RECIPE - HOW TO MAKE PLUM SAUCE
This takes about 20 to 35 minutes. Move all the plums to a food mill. Pick out as many pits as you can right off the bat. Mill the plums into a …
From honest-food.net
Estimated Reading Time 7 mins
  • You will need to pit the plums sooner or later. If you are using domestic, freestone plums, cut them in half and pop out the pit. Most plums, however, have fruit that sticks to the pit. In this case, you can do one of three things: Use a cherry pitter to remove the pits; slice and cook, then strain; or freeze the plums whole to soften, then cook and strain. Freezing loosens the fruit's grip on the pit. Either way you will need some way to strain the pulp from the pits. I use a simple food mill.
  • I cook the plums in two stages. In the first stage, I put just a little water in the bottom of a heavy pot and add all the plums. Turn the heat to medium and, once they are simmering a little, use a potato masher to squash them as they cook. Keep agitating the plums as you simmer them gently -- you will probably need to turn the heat down at some point -- until most of the flesh comes off the pits. This takes about 20 to 35 minutes.
  • Move all the plums to a food mill. Pick out as many pits as you can right off the bat. Mill the plums into a coarse puree, removing pits as you go. This is actually really easy with domestic plums, as both the pit and the plum itself is larger than its wild cousin. Wild plums are only about the size of a large cherry, so this stage will take a bit longer with them.
  • Once the cooked plums are free of pits, return them to the pot along with all the other ingredients. Simmer gently for another 30 minutes, until all the flavors are melded and the garlic, shallot and ginger have softened. Pour everything in to a blender and puree until smooth.

Chinese Plum Sauce is a slightly sour but mostly sweet sauce made from plums, and sometimes apricots and/or pineapple, depending upon the brand you buy. It bears a faint resemblance to the duck sauce you get in packets at your favorite Chinese takeout place, only more flavorful (as it’s made with real ingredients, rather than corn syrup and artificial colorings!)
