Our Test Kitchen created this fresh tasting corn side dish as a great way to dress up frozen corn.

Chive 'n' Garlic Corn image

Steps:

  • In a large skillet, saute corn and onion in butter for 5-7 minutes or until tender. Stir in the chives, garlic, salt and pepper.

1 package (16 ounces) frozen corn, thawed
1/2 cup finely chopped onion
2 tablespoons butter
1/4 cup minced chives
1/2 teaspoon minced garlic
1/8 teaspoon salt
Pepper to taste

CORN WITH GARLIC AND CHIVES

This is a quick and simple way to liven up plain corn. You could use green onions instead of chives but reduce the amount, and adjust the amount of garlic to your taste. Use fresh corn cut off the cobs, or frozen.

Steps:

  • Heat olive oil in a large saute pan over medium low heat.
  • Add garlic and stir about 30 seconds, until fragrant.
  • Add corn and cook 5 minutes, stirring occasionally.
  • Remove from heat, add chives and salt and pepper to taste.

Steps:

  • Preheat oven to 350F.
  • Melt the butter in a small skillet over medium heat.
  • Add minced garlic; saute' 30 seconds or until lightly browned.
  • Remove from heat, and stir in garlic powder.
  • Unroll the dough onto lightly floured surface; brush dough with garlic mixture.
  • Sprinkle dough with chives and cheese; cut dough crosswise into 12 strips Shape each dough strip into a knot.
  • Place the knots on a baking sheet coated with cooking spray.
  • Bake for 17 minutes or until lightly browned.
  • Serve warm.

Mashed Potatoes With Corn and Chives image

Steps:

  • Place potatoes and garlic in pot, cover with water and boil until potatoes are tender, about 10 minutes.
  • Remove with slotted spoon and place in large bowl; add corn to boiling water and cook 2 minutes. Drain.
  • Mash potatoes and garlic or put through a food mill. (A food mill will leave behind much of the skin.)
  • Stir corn into mashed potatoes with enough buttermilk to make a medium-firm texture.
  • Season with salt and pepper and stir in chives.
  • To keep for up to one day, refrigerate, covered.
  • To serve, place in glass dish, cover with plastic wrap and put in a microwave oven for about 8 minutes on high, stirring once or twice while reheating. If potatoes become too dry, stir in a little buttermilk.
