- Place sugar in a large bowl; set aside. Combine butter, cream, peanut butter, and vanilla in a saucepan over medium heat. Cook, stirring, until butter and peanut butter are just melted. Pour over sugar in bowl and whisk until smooth. Transfer to an 8-inch-square baking dish and smooth surface. Place parchment or plastic wrap directly on surface of mixture and refrigerate until set, about 2 hours.
- Roll heaping teaspoonfuls of peanut-butter mixture into 1-inch balls. Melt chocolate, stirring until smooth, in a bowl set over a saucepan of simmering water; remove from heat. Working with 1 ball at a time, dip into chocolate and remove with a fork, letting excess chocolate drip off; transfer to parchment-lined baking sheets and immediately sprinkle top and sides with 1/4 to 1/2 teaspoon cocoa nibs. Refrigerate until set, about 30 minutes. Truffles can be made 1 week ahead and stored in a single layer, covered, in refrigerator.

- In a large bowl, sift together confectioners' sugar and cocoa; set aside. , In a small saucepan, melt candy bars and butter. Add cream and reserved cocoa mixture. Cook and stir over medium-low heat until mixture is thickened and smooth. Pour into an 8-in. square dish. Cover and refrigerate overnight. , Using a melon baller or spoon, shape candy into 1-in. balls; press a hazelnut into each. Reshape balls and roll in ground hazelnuts. HEALTHY SALTED DARK CHOCOLATE PEANUT BUTTER OATMEAL TRUFFLES
These healthy truffles will blow you away! The soft, nutty, peanut butter oatmeal center combined with the salted dark chocolate outer layer make them a delicious dessert. They are fairly easy to make with just a handful of ingredients, so I like to whip them up in small batches for the week and keep the in the fridge. If you'd like to make more, you can definitely double or triple the recipe!

- Preheat oven to 350 degrees F (175 degrees C). Spread pecans in a single layer on a baking sheet.
- Bake pecans in the preheated oven until toasted and fragrant, about 10 minutes. Transfer to a bowl and refrigerate until cool, about 10 minutes.
- Combine toasted pecans, rolled oats, and peanut butter in a food processor or blender; blend, stopping to scrape down sides, until a thick "dough" forms.
- Microwave coconut oil in a microwave-safe bowl until melted, 10 to 15 seconds. Stir in cocoa powder and maple syrup until smooth. Line a baking sheet with aluminum foil.
- Roll dough into 1-inch balls with your hands. Dip balls one at a time in the chocolate mixture using a spoon or fork, covering all sides. Transfer to the baking sheet. Let truffles sit, 3 to 5 minutes. Sprinkle sea salt on top.
- Refrigerate truffles until set, about 20 minutes.

Meanwhile, melt chocolate in the top of a double boiler over barely simmering water. When chocolate and peanut butter is smooth, combine with melted chocolate, using a whisk. Force through a medium-mesh sieve into another bowl, using a rubber spatula. Stir in vanilla. Let cool, then cover and chill 2 to 4 hours (or overnight).
- To up to shape truffles: Whisk powdered sugar and cocoa together, then sift into another bowl to combine thoroughly. Grind peanuts, if using, in the bowl of a food processor fitted with the steel blade. Line a large baking sheet or tray with waxed paper or 30 to 50 1-inch paper candy cups (yield will depend on the size of your scoop used to shape truffle).
- To shape truffles: If very chilled, let mixture sit out at room temperature for 20 minutes to soften slightly. Scoop out or spoon small portions of chilled filling and roll into a ball. If desired, push a "Goober" through the side, into center of round and roll to correct shape. Roll truffle in cocoa mixture or ground nuts and place in candy cups. - Remove from heat and stir in vanilla and a pinch of salt.

- In a large, microwave-safe bowl, microwave the chocolate squares on high power for 1 minute.
- Stir chocolate and microwave for another minute or until chocolate is melted.
- Remove bowl from the microwave and mix in peanut butter until smooth.
- Let the mixture sit until it has cooled to room temperature.
- Mix in whipped topping and refrigerate for about an hour.
- Shape the mixture into one inch balls.
- Using a melon baller or teaspoon may make this easier.
- Roll the balls in your choice of coatings.
- This part is the most fun!
- Be creative!
- Store the balls in the refrigerator until serving or gift-giving time.
- These would make a nice gift if you placed the balls in paper candy holders and wrapped them up in a decorated tin or plastic container.
PEANUT BUTTER TRUFFLES
For the maple syrup, ANY sweet, such as maple syrup or honey, is fine. I used Godiva's Caramel liquor. It was amazing. But honey, maple syrup, hazelnut syrup... anything will work. Prep time includes melting down the chocolate and cooking time includes refrigeration.

- Mix peanut butter, butter, and sweet. Blend thoroughly and then refrigerate until it is solid enough to roll into balls. About 2 hours.
- Roll into balls. I found 2 teaspoons to be about right per ball. Put in the freezer for one hour. Before dipping in chocolate, make sure that the balls are formed without peaks sticking out.
- In a double boiler (I prefer a pyrex bowl nestled onto a pot of water), melt down the chocolate. DO NOT STIR beyond blending the two chocolates. Over stirring hardens the chocolate and dipping will fail. I used my ruined dipping chocolate to make a bark, so all was not lost.
- Line a baking sheet with waxed paper. One at a time, drop the truffles into the chocolate, coat, and then place on the waxed paper. I found that chopsticks were the easier to do this with, as I could grip easily and let it drip off excess. I've read suggestions about stabbing with a fork, but that just didn't work for me.
- These will soften quickly. If they start slipping off the chopsticks or smush as you work with them, put them back in the freezer for a bit. I divided my truffles onto to trays so that one was always in the freezer and just swapped them as the ones out softened. I also put an ice bag on the tray with the truffles to help keep them cool while they were out.
- Once all the truffles are coated, let them get hard enough to move. Then you can nestle them all together on the same tray and drizzle them with white chocolate. Alternately, you can sprinkle them with cocoa powder or ground cacao nibs while still soft.
- These are not a truffle you want to just roll in a coating because they are way too soft and melt VERY quickly.

- Semi melt Chocolate In Microwave Safe Bowl.
- Heat Heavy Cream To Low Boil Remove From Heat.
- Let Heavy Cream Stand For 20 Seconds.
- With a wire whisk, slowly stir the cream and chocolates together until the chocolate is completely melted.
- Stir In Coffee.
- Add Peanut Butter & Brown Sugar To Taste.
- Let Stand At Room temperature For 30 minutes.

- In large bowl, combine peanut butter, pecans, powdered sugar, dates, and butter and mix well; form into 1" balls.
- Melt semisweet chips and 1/2 cup milk chocolate chips together in a glass measuring cup in microwave on medium power about 2 minutes, stirring once, until melted and smooth.
- Stir in remaining 1/2 cup milk chocolate chips and stir constantly until smooth (this tempers the chocolate, setting up crystals so it will harden).
