CHRISTMAS ZUCCHINI BREAD
This tasty loaf is a Christmas Morning staple at our house. It is simple, and makes two large loaves. It's great warm with a little butter.

Steps:
- Preheat oven to 350 degrees.
- Mix oil, eggs, zucchini, and vanilla.
- Add sugar, flour, soda and cinnamon, blending well.
- Stir in coconut and pecans.
- Bake in greased loaf pans about an hour or until a toothpick tests "clean".
- Cool 15 minutes in bread pans.
- Remove from pans-I wrap mine in foil and slice the loaves just before serving.
GRANDMA'S BEST ZUCCHINI BREAD

- Preheat oven to 300 degrees F (150 degrees C). Grease and flour two 9x5 inch loaf pans. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and pepper in a bowl until evenly combined; set aside.
- Beat the eggs, vanilla, sugar, and vegetable oil in a mixing bowl until smooth. Fold in the flour, dates, and zucchini until no dry spots remain. Divide the batter between the two prepared loaf pans.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 70 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

FRUITED ZUCCHINI BREAD
Green flecks of zucchini and red maraschino cherries make this moist quick bread a must for the Christmas season. Keep one loaf and give the other away.

- In a large bowl, combine the flour, sugar, cinnamon, salt, baking soda and baking powder. In another bowl, whisk the eggs, oil and vanilla. Stir into dry ingredients just until moistened. Fold in the zucchini, pineapple, pecans, raisins, dates and cherries., Pour into two greased 9x5-in. loaf pans. Bake at 350° for 55-60 minutes or until bread pulls away from sides of pans and a toothpick inserted in the center comes out with a few moist crumbs. OLD-FASHIONED ZUCCHINI BREAD
Moist, delicious, and not overly sweet, this is my family's favorite quick-bread and a great way to celebrate your garden's summer bounty!

- Beat eggs until fluffy; add oil, sugar, vanilla, and zucchini; mix well.
- Combine dry ingredients and add to wet mixture; mix well.
- Toss nuts and/or raisins in a bit of flour then stir into batter.
- Pour batter into two 9x5" loaf pans that have been sprayed on bottoms only with no-stick cooking spray; bake at 350° for 1 hour or until bread tests (a toothpick inserted near center of loaf comes out clean) done; cool loaves for about 10 minutes in pans then loosen sides of loaves (I do this by running a small plastic knife around the edges) and remove from pans; cool completely before slicing.
- NOTE: I include about 3/4 cup whole wheat flour in the total amount.

- In a small bowl, cream butter and sugar. Add egg; mix well. Combine the flour, baking powder and salt; add to creamed mixture. Fold in the zucchini, cranberry sauce, walnuts and orange zest (batter will be thick)., Transfer to an 8x4-in. loaf pan coated with cooking spray. Bake at 350° for 40-45 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
