Steps:

  • Make the lemon syrup: Bring the lemon zest, 1 1/2 cups sugar and 1 1/2 cups water to a boil in a medium saucepan, stirring, until the sugar dissolves; let cool to room temperature.
  • Meanwhile, make the strawberry syrup: Toss the strawberries and the remaining 1/2 cup sugar in a bowl and let sit at room temperature until the sugar dissolves, about 45 minutes. Strain the strawberry mixture; reserve the strawberry syrup and berries separately.
  • Make the lemonade: Combine the lemon juice, lemon syrup, salt and 2 cups cold water in a pitcher. For each drink, put about 1 tablespoon of the strawberry syrup in a tall glass. Fill with ice, then top with the lemonade and some of the reserved strawberries.

Zest of 1 lemon, in wide strips
2 cups sugar
2 cups chopped hulled strawberries
2 cups fresh lemon juice (from about 10 large lemons)
1/4 teaspoon salt

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Line a 9-by-13-inch glass baking dish with foil leaving a 2-inch overhang on two sides. Grease the foil and dish with 1 tablespoon of the butter.
  • For the crust: Combine the flour, butter, sugar cornstarch and salt in a food processor and pulse until the dough comes together, about 1 minute. Press the dough evenly into the bottom of the pan. Bake until the crust is golden at the edges, pale golden in the center, and firm, about 30 minutes. Transfer to a wire cooling rack.
  • Reduce the oven temperature to 300 degrees F. For the filling: Wipe out the food processor bowl and pulse the freeze-dried strawberries into a powder; reserve. Whisk together the eggs, egg yolks, sugar, and flour in a medium bowl until smooth. Whisk in the lemon juice, strawberry powder and melted butter.
  • Pour the filling over the warm crust and return to the oven. Bake until the filling is just set, 30 to 35 minutes.
  • Cool the lemon bars on a wire rack, 30 minutes. Use the foil to lift the bars from the pan and place on a baking sheet. Refrigerate until firm, at least 1 hour. Peel the foil off the bars, trim the edges and cut into 24 bars. Dust with confectioners' sugar and serve.

1 1/2 cups all-purpose flour (see Cook's Note)
3/4 cup (1 1/2 sticks) unsalted butter, diced, at room temperature, plus more for greasing the pan
1/3 cup granulated sugar
3 tablespoons cornstarch
1/4 teaspoon fine salt
2 cups freeze-dried strawberries (from a 1.2 ounce bag)
4 large eggs
2 large egg yolks
2 1/3 cups granulated sugar
1/3 cup all-purpose flour
3/4 cup freshly squeezed lemon juice, strained (from 6 to 7 lemons)
4 tablespoons (1/2 stick) unsalted butter, melted
Confectioners' sugar, for dusting

STRAWBERRY LEMONADE

I made this reciepe up because of a medical need to drink lemon juice and this is the best way to get it. I love this lemonade, it makes me thinking of nice hot summers by the beach. It is super simple to make and if you have a hand juicer it goes that much faster. ***P.S. When I make this for parties, I make special ice cubes. I will fill up the ice tray and then place a piece of strawberry and a piece of mint in each ice cube section. Once it's frozen I add the ice to the serving pitcher. It's beautiful and I get a lot of comments on it.***

HARD STRAWBERRY LEMONADE

Another yummy drink my hubby invented. Wonderful on the rocks, or strain into a martini glass. I buy very large IQF strawberries from a warehouse club - if your frozen strawberries aren't large, add more. Be sure to use Chambord for the liqueur. You can really taste it in this drink, and cheaper raspberry liqueurs taste like cough medicine.

CAN YOU EAT WILD STRAWBERRIES? (AND HOW TO IDENTIFY THEM)
When watering, there are two keys. The first is to not overwater. You will want to give your plants somewhere in the range of an inch to an inch and a half of water every week. The second key is to not wet the leaves while watering. Keep your strawberries fed with a fertilizer that is continuous release.
