- In large nonmetal bowl, mix vinegar, oil, honey, lemon juice and salt. Stir in chopped cilantro. Add shrimp; toss to coat. Cover; refrigerate at least 1 hour to marinate.
- To serve, remove shrimp from marinade; reserve marinade. Arrange shrimp on large platter. Add avocado, mango and strawberries to marinade; toss to coat. Surround shrimp with avocado, mango and strawberries. Drizzle some of the reserved marinade over top; discard remaining marinade. Garnish with cilantro sprigs. Serve with decorative toothpicks or cocktail forks.

CILANTRO MARINATED SHRIMP

Steps:
- Heat broiler. If using an electric oven, place rack on top level and heat to broil/high.
- Puree lime juice, oil, cilantro and peppers in a blender until smooth. Toss shrimp in this mixture and marinate for 30 minutes.
- Place shrimp in single layer in 12 1/2-by-14 1/2-by-2-inch roasting pan.
- Broil 1 1/2 minutes. Turn each shrimp and broil another 1 1/2 minutes. Repeat with remaining shrimp.
- Sprinkle with salt. Using a toothpick, stick a cilantro leaf on top of each shrimp. Serve on a platter with wedges of lime. Serve hot, chilled or at room temperature.

- Mix together garlic and 1 teaspoon salt.
- Whisk together garlic paste, lime juice, marmalade, cilantro, 3 tablespoons oil, soy sauce, red pepper flakes, remaining 1/8 teaspoon salt and pepper in a small bowl.
- Transfer 1/3 of mixture to small serving bowl and reserve for dipping sauce.
- Combine shrimp with remaining mixture in a large sealable plastic bag and seal bag, pressing out excess air.
- Marinate shrimp, refrigerated, turning bag once, for 15 minutes.
- Drain shrimp and gently pat dry.

- Heat 1 1/2 teaspoon oil in a large non-stick skillet over moderately high heat.

- Tranfer to a platter and cook the remaining shrimp in 1 1/2 teaspoons of oil.
- Garnish with cilantro and serve with dipping sauce.

- In a blender or food processor place the cilantro leaves and stems, scallions, chilies, garlic, lime juice, cumin, and turmeric.
- Puree, adding a little water if necessary to achieve the desired consistency.
- Peel the shrimp, leaving the tail intact.
- Devein them, place them in a bowl, and toss with the cilantro puree.
- Marinate for 8-12 hours.
- Prepare a moderately hot charcoal fire.
- When ready to cook, scoop up the shrimp so that more of the marinade remains on one side of each one.
- Place the shrimp marinade-side up pon the grill.
- Cook until almost done, about 2 minutes.
- Turn shrimp over and cook quickly on marinade side, about 1 minute.
- Remove shrimp from grill.
- Divide shrimp among serving plates.
- Pass garnishes at table.
- Each guest should sprinkle the shrimp with coarse salt, pepper, chili powder, a squeeze of lime juice, and a few cilantro leaves.
TEQUILA-MARINATED SHRIMP PIZZA WITH CHORIZO, ONIONS, BELL PEPPERS, AND CILANTRO PESTO

- In a large mixing bowl, stir together the water, yeast, and sugar. Let sit until foamy, about 5 minutes. Add 2 cups of the flour, salt, and 2 teaspoons of the oil, stirring with a heavy wooden spoon to incorporate. Turn out onto a lightly floured surface and knead until smooth and pliable, yet slightly sticky, 5 minutes, adding more flour as needed 2 teaspoons at a time to prevent from sticking to the board.
- Lightly oil a large mixing bowl with the remaining 1/2 teaspoon oil. Place the dough in the bowl and turn to coat with the oil. Cover with plastic wrap and set in a warm, draft-free place. Allow the dough to rise until nearly double in size, 1 to 1 1/2 hours.
- At least 45 minutes before baking pizza, put a pizza stone on the bottom rack of the oven and preheat the oven to 500 degrees F.
- While the dough is rising, marinate the shrimp. In a large bowl, combine the shrimp, tequila, lime juice, crushed garlic, cilantro, lime zest, pepper flakes, kosher salt, and cumin. Let marinate for no more than 1 hour. Remove the shrimp from the marinade and pat dry.

- In a small saucepan combine tequilla, lime juice and honey. Bring just to a boil to melt honey and evaporate most of the alcohol. Set aside.
- Bring 2 quarts of water to a boil. Add lemon, onion, bay leaves and peppercorns to boiling water. Simmer for 5 minutes.
- Add salad shrimp and simmer until shrimp are thawed, about 2 to 3 minutes. Drain shrimp and place in bowl. Add Tequilla mixture, cilantro and jalapeno to shrimp and toss.
- Chill in refrigerator, covered until ready to use or for a quick chill, place bowl over ice. Serve on platter with endive spears, crackers or alone with toothpicks for spearing.

- Using a medium sauce pot, place the shrimp in 1 inch (or more) cover the shrimp.
- Bring to a boil.
- Cover and immediately remove from heat. Set aside 1 minute.
- Drain and rinse the shrimp under cold water to stop the cooking and put into a bowl.
- Cut the jalapeños in half lengthwise, devein and deseed. Place in a bowl with the shrimp.
