This recipe makes small flakes that can be added to your favorite muffin or bread recipe to get that 'cinnamon burst' that usually is found in store brand muffin mixes.

Steps:

  • Preheat oven to 225 degrees F (110 degrees C).
  • Stir sugar, ground cinnamon, shortening, and corn syrup together in a small bowl until dough comes together. Place dough between two layers of parchment paper; roll to 1/8- to 1/4-inch thick. Transfer to a baking sheet; remove top piece of parchment paper.
  • Bake in preheated oven until golden and bubbly, about 35 minutes. Cool completely and break into pieces.

Cinnamon Chip, Cranberry and Pecan Cookies image

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • In a stand mixer fitted with the paddle attachment, combine the butter and brown sugar, and mix well. Add the pudding and mix until incorporated, then add the eggs and vanilla, and mix well.
  • In a separate bowl, mix together the flour, baking soda, cinnamon and salt. With the mixer set to low speed, add the dry ingredients to the butter mixture. Continue mixing on low speed and add the cinnamon chips, pecans and cranberries until just combined. Portion the cookies out using a 2-tablespoon cookie scoop and place on the prepared baking sheet. Bake for 13 minutes.

Stone Fruit Salsa with Cinnamon Chips image

Steps:

  • For the salsa: In a large mixing bowl, combine the mixed stone fruits, honey, basil, lemon juice, cinnamon and salt. Stir to coat the fruit evenly. Taste and season accordingly. Refrigerate until ready to serve.
  • For the chips: Preheat the oven to 350 degrees F.
  • In a small bowl, combine the sugar and cinnamon. Brush both sides of the flour tortillas with the melted butter. Sprinkle the cinnamon sugar over both sides of the tortillas. Cut the tortillas into 8 wedges. Place on a baking sheet and bake until crisp, about 20 minutes, flipping half way through. Serve with the fruit salsa.
  • Cook's Note: Feel free to add in other fruits to the salsa. Try strawberries, nectarines and mango.

Steps:

  • Heat oven to 350°F
  • Beat butter, brown sugar and granulated sugar until creamy.
  • Add eggs and vanilla; beat well.
  • Combine flour and baking soda; add to butter mixture, beat well.
  • Stir in oats, cinnamon chips and raisins (batter will be stiff).
  • Drop by heaping teaspoons onto ungreased cookie sheet.
  • Bake 10-12 minutes or until lightly browned.

Steps:

  • 1. Preheat oven to 325�F. Combine graham cracker crumbs, 2 tablespoons sugar and melted butter in medium bowl. Press crumb mixture evenly onto bottom and about 1-1/2 inches up side of 9-inch springform pan. Bake 8 minutes. Remove from oven.
  • 2. Increase oven temperature to 350�F. Beat cream cheese, remaining 1 cup sugar and vanilla on medium speed of mixer until well blended. Add sour cream; beat on low speed until blended. Add eggs; beat on low speed just until blended. Do not overbeat.
  • 3. Pour half of filling into prepared crust. Reserve 1/3 cup cinnamon chips for drizzle. Sprinkle remaining 1-1/3 cups chips evenly over filling in pan. Carefully spoon remaining filling over chips. Place on shallow baking pan.
  • 4. Bake about 1 hour or until center is almost set. Remove from oven; cool 10 minutes on wire rack. Using knife or narrow metal spatula, loosen cheesecake from side of pan. Cool on wire rack additional 30 minutes. Remove side of pan; cool 1 hour.
  • 5. Combine shortening and reserved 1/3 cup chips in small microwave-safe bowl. Microwave at MEDIUM (50%) 30 seconds; stir until chips are melted. Drizzle over cheesecake; cover and refrigerate at least 4 hours. Cover; refrigerate leftover cheesecake.
