COLA MARINATED SIRLOIN STEAK
This simple marinade uses ingredients commonly found in your pantry and refrigerator. Heat remaining marinade to a boil and drizzle over steak when done or use as a dipping sauce.

- Whisk together cola, soy sauce, Dijon mustard, horseradish, garlic, and black pepper in a bowl and pour into a resealable plastic bag. Add steak, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 24 hours.
- Preheat the grill to 400 degrees F (200 degrees C).
- Remove steak from resealable bag and discard remaining marinade.
- Cook steak on the preheated grill to desired doneness, about 5 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

MARINATED STEAK TIPS

- For the marinade: Whisk together all the marinade ingredients in a large baking dish. Add the ribs and turn to coat. Cover and refrigerate for at least 1 hour or overnight; it is best if marinated overnight.
- For serving: Heat grill to high. Remove short ribs from marinade and grill short ribs until slightly charred and tender and cooked to desired degree of doneness. Serve short ribs with white rice and kimchee.

- For the sauce:
- In a medium saucepan, over medium heat, add oil. Once heated, add the onion and garlic and saute until tender. Add all the remaining sauce ingredients and bring to a boil. Reduce heat to a simmer and cook uncovered, stirring frequently, for 1 hour 15 minutes.
- For the dry rub:
- Whisk all dry ingredients together in a small bowl. This can be stored up to 6 months in an airtight container.
- For the ribs:
- Rinse and dry ribs. Place on a clean cutting board, pull off the membrane and trim the ribs of excess fat. Liberally season both sides of the ribs with rub. Wrap ribs with plastic wrap and refrigerate 4 to 12 hours so flavors can permeate.
- Preheat grill to 250 degrees F. using hickory and charcoal. Set up your grill for indirect heat.
- Place ribs, meatier side down, on the grill away from the coals. Close grill cover. Cook the pork ribs for 1 hour 15 minutes; flipping several times for even cook. Coat ribs with sweet cola barbecue sauce and cook for another 20 minutes.
COCA-COLA BARBEQUE SAUCE

- Combine the ingredients in a heavy saucepan and gradually bring to a boil over medium heat. Reduce the heat slightly to obtain a gentle simmer. Simmer the sauce until reduced by 1/4, 6 to 8 minutes. Transfer the sauce to clean jars and let cool to room temperature, then refrigerate until serving. The sauce will keep for several months, refrigerated.
- Use as you would any sauce, noting the strong affinity this sauce has for chicken, ribs, and pork.
SMOKY COLA JERKY

- Bring the cola, soy sauce, vinegar, honey and 1 tablespoon salt to a simmer in a saucepan over medium heat. Cook, stirring, until reduced to 1 cup, about 12 minutes. Remove from the heat and stir in the chipotles, paprika and onion powder; let cool completely.
- Trim the excess fat from the beef and slice on an angle into 1/4-inch-thick strips. Combine the strips and cola mixture in a resealable plastic bag and shake to coat. Press the air out of the bag, seal and let marinate in the refrigerator at least 24 hours and up to 3 days.
- Position a rack in the center of the oven; line the bottom of the oven with foil. Drain the meat, discarding the marinade. Stick a toothpick through the end of each strip of meat. Starting at the back of the oven and working forward, arrange each piece of meat between the grates of the oven rack so the toothpicks rest on the grates and the meat dangles below (do not let the meat touch the rack). Alternately, cook the beef in a dehydrator according to the manufacturer's instructions.
- Heat the oven to 200 degrees F. Bake until the jerky is dry but still bendable, 2 to 3 hours. Carefully remove from the oven and remove the toothpicks. Let cool completely. Refrigerate in an airtight container for up to 2 weeks.
COFFEE MARINATED STEAK
This is a recipe I found on-line at the TOH site. It states that this marinade makes the meat so so juicy and adds a great flavor. Preparation time doesn't include marinading time.

Steps:
- In a small skillet, toast sesame seeds in butter. Add onion and garlic; saute until tender. In a large bowl, combine the coffee, soy sauce, vinegar, Worcestershire sauce and sesame seed mixture.
- Pour all into a large resealable plastic bag; add steak. Seal bag and turn to coat; refrigerate for 8 hours or overnight, turning occasionally.
- Drain and discard marinade from steak. Grill steak, covered, over medium-hot heat for 6-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145°; medium, 160°; well-done, 170°). Enjoy the steak.
RIBS COCA COLA RIBS
This is a relatively unusual BBQ pork ribs recipe, whereby Coke is used as a seasoning as well as a rib marinade.

- Pour enough Coca cola over the ribs. I use a vacuum sealer, to make it easier, but any way will do. Marinate for at least 24 hours. Remove the ribs from the marinade and apply more pork dry rub.
- Prepare your smoker and smoke the ribs at approx 225 degrees for 4 hours, basting hourly with Coke. Or, if just grilling, grill ribs over medium to low heat until a nice color develops. You can leaeve them on the grill, covered for approximately 4 hours until you reach your desired tenderness, or alternatively, wrap the ribs in foil and put in a 200 degree oven for about 4 hours or until desired tenderness is achieved.
- Meanwhile, put about 2 cups of Coca Cola in a saucepan and bring to a boil. Reduce until you have about 1/2 cup or it is a syrupy consistency. Keep warm. Now it's money time. Remove the Coca Cola ribs, and brush on the syrup. Now, apply more rub to make a bbq pork ribs recipe that is sweet, and also savory. BBQ sauce is optional!

RUM AND COLA RIBS
Enjoy some al fresco cooking with these summery and unusual rum and cola ribs. Marinate a day in advance for extra flavour. The marinated ribs can be packed into a freezer bag and frozen for up to 1 month. Allow to defrost before cooking.

- Lay the ribs in a pan of cold water, place on the stovetop and bring to the boil. Reduce the heat and simmer the ribs for about 30 mins, or until they are tender.
- Drain the ribs, rinse them under cold running water to cool quickly, then drain well and place in a bowl.
- To make the marinade, put all the ingredients except the rum in a saucepan, place on a low heat and stir until the sugar has melted. Increase the heat and bring the sauce up to a simmer and cook until the volume has reduced by about half. Remove the pan from the heat, stir in the rum, and leave the sauce to cool.
- Pour the cold sauce over the ribs and stir them to ensure they are well coated. Cover the bowl and leave to marinate overnight (or a couple of days) stirring the ribs a couple of times if possible.
- Lift the ribs out of the marinade and cook them on a hot grill for 10-15 mins, turning them occasionally until they are heated through.
- Any extra marinade can be brushed over the ribs during cooking.
- Serve immediately with tomato ketchup as a dipping sauce.

MARINADE FOR WILD GAME
We used this marinade today on some antelope tenderloin and smoked it for 2 hours with charcoal - fabulous! It is so quick and easy to throw together. I marinated the meat for 3 hours. You can just grill with it too. Found this online on a hunters site.
