- Cook whole carrots in salted water until tender, saving 1/4 cup cooking liquid.
- Cut lengthwise in narrow strips.
- Arrange in 9 x 9 baking dish.
- Set aside.
- Combine reserved carrot liquid with mayonnaise, onion, horseradish, salt and pepper.
- To serve, pour sauce over carrots.
- Sprinkle cracker crumbs on top.
- Dot with butter.
- Sprinkle with parsley and paprika.
- Bake at 375° for 20 minutes.

- Place carrots in a Dutch oven; add water to cover. Bring to a boil. Cook, covered, 15-20 minutes or until very tender. Drain carrots; return to pan., Mash carrots with remaining ingredients by hand or puree in a food processor until blended.

Steps:
- Set oven to 350 degrees.
- Butter a 2-quart baking dish.
- Cook the carrots in a saucepan until fork-tender, about 15 minutes drain VERY well (you might even want to pat dry with a paper towel) cool slightly.
- Place the cooled carrot in a food processor and process until smooth.
- Add in all remaining ingredients; pulse to combine.
- Transfer to baking dish.
- Bake for about 40 minutes or until puffed and set.

Cut carrots lengthwise in strips about 1/4 to 1/2 inch wide. Bring a large pot of water to a boil. Add salt and then carrots and cook until carrots are fork tender, about 10 minutes. Reserve 1/4 cup of the cooking liquid. Drain the rest of the liquid and place carrots in a shallow baking dish sprayed with cooking spray.
