Cornbread Dressing image

Steps:

  • Preheat oven to 350 degrees F and lightly grease an 8 inch baking dish.
  • Combine the corn bread, toasted bread, and crackers in a large mixing bowl. Pour the stock into a saucepan and add celery and onion. Bring to a boil and cook for 10 to 15 minutes. Remove the stock mixture from the stove and allow it to cool for about 10 minutes before proceeding.
  • When it has cooled, add the stock mixture to the bread crumb mixture along with the eggs, butter, sage, and salt and pepper. Mix well and pour into the baking dish. Bake until heated through, puffed, and golden brown, about 45 minutes.
  • Preheat the oven to 375 degrees F.
  • In a mixing bowl, combine all of the ingredients and mix well. On the stove top, heat the oil in a large skillet until hot but not boiling. Pour the hot oil into the bowl with the other ingredients and mix well. Pour the batter into the skillet and bake for 35 to 50 minutes. Start checking for doneness after 35 minutes; it should be golden brown when done.

My mom passed this recipe down to me before she passed away. I have had this dressing since I was a child, and to me it is the best I have ever tasted. This recipe is not a quick side dish, it needs time and work for prep and cooking, but is very worth it.

Mom's Sausage and Cornbread Dressing image

Steps:

  • Bring water to a boil in a saucepan. Add giblets and boil for 10 to 15 minutes. Remove and discard giblets, reserving water.
  • Preheat the oven to 400 degrees F (200 degrees C). Grease an 8-inch square baking pan.
  • Mix corn muffin mix, milk, egg, and shortening together in a bowl. Pour into the prepared baking pan.
  • Bake in the preheated oven until golden brown, 15 to 20 minutes. Set aside to cool.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Add celery, onion, and hot peppers and continue cooking 3 to 5 minutes more. Drain and discard grease. Transfer sausage mixture to a large mixing bowl.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole pan.
  • Add giblet water, turkey broth, bread crumbs, cornbread, remaining eggs, sage, salt, and black pepper to the sausage mixture in the mixing bowl. Mix together well and transfer to the prepared casserole pan.
  • Bake in the preheated oven until slightly brown on top with darker brown edges, about 45 minutes, checking often. Let cool 10 to 15 minutes before serving.

CORNBREAD DRESSING (SOUTHERN W/SAGE, AKA HOLY GRAIL DRESSING)

For me, and particularly from the perspective of a Southerner, dressing is one of those traditional dishes which becomes dog-eared in your life's history. Most folks I know still prefer the dressing or stuffing recipe which arcs back to their childhood, and I am no exception. I was raised by my grandmother, and after her passing, I became obsessed with trying to duplicate the dressing she made which I loved so very much. After innumerable attempts, and a search that took roughly 10 years and FAR too much experimentation on my part (hence the nickname, "Holy Grail Dressing"), the recipe below produces a dish that is (REALLY) always moist and full of flavor. (I love sage and usually add more--3 to 4 TABLESPOONS ;o], but the quantity listed below should be "safe" for those who aren't as addicted to sage as I am. I also bump up the other spices a bit a well, but didn't want to freak anybody out so am posting the basic measurements.)

Cornbread Dressing (Southern W/Sage, Aka Holy Grail Dressing) image

Steps:

  • Preheat oven to 350º.
  • Melt margarine in skillet & saute onion & celery.
  • Add salt, pepper, sage, thyme, & poultry seasoning to the cooked onions & celery--I usually will mix the spices together in a separate container before adding to the vegetables.
  • In large bowl (I use the largest stainless steel bowl I own) combine bread crumbs, cornbread.
  • In smaller bowl, blend soup, water, eggs, & vinegar.
  • Add celery & onions to bread mixture, toss lightly, then add liquid mixture & blend thoroughly.
  • Turn into 9x13 baking dish and bake @ 350º for an hour. (Can also be used as a stuffing.).
  • If desired, dressing may be prepared ahead of time, baked 30 minutes, cooled and frozen, then baked about 45 minutes when ready to serve.
  • NOTE: Mama also stuffed the bird with hers--it was wonderful--but my dressing needs are fully satisfied baking it separately.

  • Preheat the oven to 350 degrees.
  • Put the corn bread and white bread into a mixing bowl.
  • Melt the butter in a heavy skillet and add the scallions, celery, onion and green pepper. Cook, briefly, stirring until onion is wilted. Add this to the mixing bowl and add the parsley, poultry seasoning and broth and blend thoroughly. Pour and scrape the dressing into a deep skillet and bake 45 minutes.

Steps:

  • 1. Preheat the oven to 350°F. Spritz a 13 x 9 x 2-inch baking pan with nonstick cooking spray and set aside.
  • 2. Place the two breads, pecans, and parsley in a very large mixing bowl and set aside.
  • 3. Brown the bacon in a very large, heavy skillet over moderate heat, stirring often, for 12 to 14 minutes until all the drippings render out. Drain the bacon on paper toweling and if you intend to use the drippings in the dressing, pour them into a measuring cup. You should have about 1 cup; if not, round out the measure with melted butter or vegetable oil.
  • 4. Heat 1/2 cup of the melted butter or bacon drippings in the same skillet for about 1 minute over moderately high heat. Add the onions and celery and cook, stirring often, for 10 to 12 minutes until lightly browned. Add the sage and thyme, and cook and stir for 1 to 2 minutes more.
  • 5. Scoop the skillet mixture into the mixing bowl along with the reserved bacon and remaining melted butter or bacon drippings; toss well. Add 3 cups of the chicken broth, the eggs, salt, and pepper and toss well again.
  • 6. Transfer the dressing to the baking pan, spreading to the edges, then drizzle the remaining 3 cups chicken broth evenly on top.
  • 7. Cover snugly with heavy-duty foil and bake on the middle oven shelf for 25 minutes. Stir the dressing well, cover again with foil, and bake 20 minutes more or until steaming.
  • 8. Serve hot with roast turkey, chicken, or pork and top with lots of gravy.

Steps:

  • For Corn Bread.
  • Preheat oven to 450 degrees.
  • Whisk eggs and buttermilk in medium bowl to blend.
  • Mix in baking powder, salt and baking soda; stir in cornmeal.
  • Heat oil in heavy 9-inch skillet (preferably cast iron) over high heat.
  • Pour oil into cornmeal batter and mix well.
  • Pour batter back into skillet and bake until firm to touch, about 25 minutes (cornbread will be flat).
  • Run small sharp knife around pan sides to loosen.
  • Turn bread out onto plate and cool completely.
  • Tear cornbread into pieces and then blend to fine crumbs in processor in batches.
  • (Can be prepared 1 day ahead. Store airtight at room temperature.).
  • For Cornbread Terrine.
  • Position rack in center of oven and preheat to 350 degrees.
  • Butter 13x4x2 1/2 -inch rectangular pan; line bottom and sides with parchment paper, extending 2 inches over along long sides. Butter parchment.
  • Melt 6 tablespoons butter in heavy large skillet over medium-high heat.
  • Add onion and celery and saute until soft, about 8 minutes.
  • Mix corn bread crumbs and bread crumbs in large bowl.
  • Add onion mixture, 6 crumbled bacon slices, dried sage, salt and pepper.
  • Mix in beaten eggs and stock; taste and adjust seasoning, if necessary.
  • Transfer mixture to prepared pan;smooth top.
  • Bake until top forms golden brown crust, about 40 minutes.
  • Run small sharp knife around pan sides to loosen.
  • Unmold onto platter and peel off parchment.
