Steps:
- Mix tomatoes, onions, apple cider vinegar, green bell peppers, seeded chopped chile peppers, sugar, unseeded chopped chile pepper, salt, allspice, cinnamon, and cloves together in a large mixing bowl.
- Ladle enough of the tomato mixture into the pitcher of a blender to fill to about 3/4-full; blend until smooth. Pour blended mixture into a large pot. Repeat blending until entire mixture has been pureed.
- Bring the mixture to a boil, reduce heat to medium-low, and simmer until thickened, 7 to 8 hours.

- Preheat oven to 325°. Place ribs on a greased rack in a shallow roasting pan. Cover and bake 1-1/4 hours. Meanwhile, in a large skillet, saute onion in oil until tender. Add the chili sauce, water, lemon juice, brown sugar, vinegar, ketchup, Worcestershire sauce, salt and pepper. Reduce heat; simmer, uncovered, 5 minutes or until slightly thickened. , Drain ribs; brush with half of sauce. Cover and bake 30 minutes. Uncover; baste with remaining sauce. Bake 15-20 minutes or until meat is tender. Serve with rice.

CHILI-ORANGE COUNTRY-STYLE RIBS

- 1. Heat oven to 350°.
- 2. Place ribs in rectangular pan, 13x9x2 inches. Sprinkle both sides with salt, marjoram and pepper. Cover tightly with aluminum foil.
- 3. Bake 1 hour 30 minutes to 1 hour 45 minutes or until tender; drain.
- 4. While ribs are baking, mix chili sauce, marmalade, Worcestershire sauce and mustard in 1-quart saucepan. Cook over medium-low heat 5 minutes, stirring occasionally, or until flavors are blended. Stir in chives. Brush sauce over ribs.
- 5. Bake uncovered 15 minutes. Brush again with sauce. Bake 10 to 15 minutes longer or until ribs are glazed. Serve with remaining sauce.

COUNTRY-STYLE CHILI SAUCE
There is nothing like homemade chili sauce, it's well worth the effort to make, especially when tomatoes and fruit are at there cheapest. This is wonderful with chicken, turkey, even on burgers, you can process this is you wish, but it will keep refrigerated for up to 3 weeks and only gets better with chilling time! You can also make this using apples, peeled and chopped in place of peaches, or use a mixture of peaches AND nectarines! If you prefer a spicy sauce like my family does then add in some dried chili flakes to taste.

- Slice the peaches or nectarines in half, discard the pits and coarsely chop the fruit into about 1/2-inch pieces.
- Peel the tomatoes if you wish, then chop into the same size pieces as the fruit.
- Place the peaches, tomatoes, onion, bell pepper and garlic in a large saucepan; stir in vinegar, sugar, salt, ginger, allspice and cinnamon, bring to a boil uncovered, stirring often over high heat.
- Reduce the heat to medium; boil gently uncovered, stirring occasionally until peaches become soft and the mixture thickens a little (about 20 minutes).
- Reduce the heat to medium-low and continue to simmer uncovered until the mixture is very thick like applesauce and a small amount of liquid remains (about 20-25 minutes, to prevent sticking to the pan stir frequently near end of cooking).
- Cool and pour into glass jars and chill for up to 3 weeks, or process in a water bath to store for a longer time.

- Put the chili pepper, garlic, sun-dried tomatoes and basil on a cutting board. Crush the chili pepper and the garlic. With a mezzaluna or sharp knife, finely chop the ingredients and bring to a mulch consistency.
- Put the mixture in a jar. Add the olive oil to cover the chili paste. Mix well.

Serve this spicy-sweet sauce with thick-cut fried potato wedges, or use it as a glaze for pan-seared chicken thighs.

- Put peppers in an enamel saucepan. Add vinegar and cook, covered, over moderate heat for about 10 minutes or until they are very soft.
- In a blender, purée the peppers with the cooking liquid for 30 seconds, or force them through the fine disk of a food mill. Do not discard seeds, as the sauce should be very hot.
- In a heavy enamel saucepan combine the purée with sugar and pickling salt. Simmer mixture until it is thick but still liquid enough to pour. Pour the sauce into sterilized Mason-type jars and seal the jars with lids. Use the sauce sparingly for seasoning.

- Peel tomatoes by placing them in boiling water for 30 seconds and then plunging them into cold water. The skin will slide right off. If it doesn't, plunge them in the hot water again.
- Rough chop the remaining ingredients. Don't worry about it being pretty, just chop them up into pieces between 1/4" - 1/2".
- Put all the ingredients into a large stock pot and bring to a boil. Once boiling, reduce heat to a simmer and simmer until thick and reduced by 1/3rd. This will take many hours. 5-10 hours depending on the type of tomatoes you use.
