- Heat a 10-inch heavy skillet over medium high heat.
- Slice potatoes and onions very thin. Salt potatoes and onions. Add oil and butter to the pan. When the butter foams, add potatoes and onions to the skillet.
- Place a dinner plate on top of potatoes and weight it with any heavy object: a sack of flour, heavy canned goods, etc. Let the potatoes and onions crust, 2 to 3 minutes, then turn, replace weights, and let them crust again. Keep turning the potatoes and onions over for about 20 minutes, until they are evenly golden and crusted.
CREAMY AU GRATIN POTATOES
This is my husband's favorite dish, and he considers it a special occasion every time I make it. The creamy cheese sauce and the tender potatoes in this classic French dish combine to make a deliciously addictive experience. It's a great side dish with a roast pork loin or beef tenderloin. Add a green salad and French bread, and you have found the magic path to a man's heart. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

- Preheat oven to 400 degrees F (200 degrees C). Butter a medium casserole dish.
- Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.
- In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour cheese over the potatoes, and cover the dish with aluminum foil.
- Bake 1 1/2 hours in the preheated oven.

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Meanwhile, in another saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened., Drain potatoes and place in a large serving bowl. - Add onions and sauté until soft, about 5 minutes.
- Add potatoes and 2 cups water; bring to boil.
- Cover and simmer until potatoes are tender, stirring occasionally, about 25 minutes.
- Uncover and simmer until almost all water evaporates, about 5 minutes.
- Remove from heat.
- Add crème fraîche and 1 tablespoon butter.
- Stir gently to blend, being careful not to break up potatoes.
- Season with salt and pepper.
- Can be made 2 hours ahead- Let stand at room temperature and rewarm over low heat before serving.
- Sprinkle with parsley.

- Melt 1 tablespoon butter with oil in heavy large pot over medium heat. Add onions and sauté until soft, about 5 minutes. Add potatoes and 2 cups water; bring to boil. Cover and simmer until potatoes are tender, stirring occasionally, about 25 minutes. Uncover and simmer until almost all water evaporates, about 5 minutes. Remove from heat. CREAMY MASHED POTATOES WITH CRISPY BROWN ONIONS
Steps:
- Fill a large mixing bowl with cold water. With a swivel-bladed vegetable peeler, peel each potato and remove any "eyes," then cut it in quarters with a sharp knife and put in the bowl of water.
- Put the potatoes in a large pot and add cold water to cover them. Salt the water. Over high heat, bring the water to a boil, skimming off foam that rises to the surface; then reduce the heat to maintain a simmer and cook the potatoes just until tender enough to be pierced easily with a skewer or a sharp knife tip.
- While the potatoes are boiling, prepare the onions: In a deep-fryer or a deep, heavy saucepan, heat about 3 inches of oil to 375 degrees F. Lightly dust the onion rings with flour and carefully drop them into the hot oil, cooking them in batches if necessary to avoid overcrowding. Fry them until golden, 3 to 5 minutes, removing them with a slotted spoon or wire skimmer to drain on paper towels. Season lightly with salt and keep warm.
- When the potatoes are done, drain them immediately. Using a ricer or a food mill, puree the potatoes into a mixing bowl. Add the nutmeg, 8 tablespoons of the butter, and the hot cream. With a wooden spoon, stir them into the potatoes. Season, to taste, with salt and pepper.
- Mound the potatoes in a heated serving bowl. Put the remaining butter in a saucepan or skillet and, over medium-high heat, melt it and continue cooking just until it turns golden brown. Lightly season the butter with salt and immediately drizzle it over the potatoes.
- Pile the crispy onions on top of the mashed potatoes. Garnish with parsley and serve immediately.

- Pre-heat oven to 190c.
- Cut the potatoes into small chips (about 5cm x 0.5cm) and place in a shallow oven dish.
- Add the onions and season well with salt and pepper, mixing everything together well.
- Drizzle the cream over the top ensuring that all the potato is covered.
- Cover the dish with foil and bake for approximately 1.5hrs.
- Remove the foil and bake for a further 30 mins or until the potatoes are really soft and have absorbed most of the cream.

- Wash & pat dry 3 medium sized yukon gold potatoes, cut each one into 4 evenly sized quarters, cut each quarter down the middle and into 1/2 inch pieces, add the cut potatoes into a large bowl, drizzle in a generous tbsp of extra virgin olive oil, season with sea salt & black pepper and toss together until well combined, add the coated potatoes into a baking tray lined with parchment paper, make sure they´re all in a single layer, add into preheated oven, bake + broil option 250 C - 475 F

- About 25 minutes after adding the potatoes into the oven, they should be perfectly roasted, remove from the oven, transfer the roasted potatoes into a large bowl, add the caramelized onions over the potatoes, 1/2 cup green yogurt at room temperature, 1 tbsp of the chopped chives and some black pepper, mix together until well combined
