This is my mother's Christmas recipe. She made these every year and whenever I smell them baking, I think of her. -Beth Cates, Hampton, Tennessee

Creme de Menthe Cookies image

Steps:

  • In a large bowl, cream margarine and sugar until light and fluffy, 5-7 minutes. Beat in egg. In another bowl, whisk flour and salt; gradually beat into creamed mixture. Divide dough in half. Shape each into a disk. Cover and refrigerate 1 hour or until firm enough to roll., Preheat oven to 325°. Roll each portion of dough between 2 sheets of waxed paper to 1/4-in. thickness (dough will be soft). Cut with a floured 2-in. round cookie cutter. Place 2 in. apart on ungreased baking sheets. Bake until set, 7-8 minutes. Remove from pans to wire racks to cool completely., In a small bowl, mix confectioners' sugar and enough creme de menthe to reach a spreading consistency. Spread evenly on bottoms of half of the cookies; cover with remaining cookies. In a microwave, melt chocolate chips; stir until smooth. Frost cookies.

Steps:

  • Preheat oven to 350°. In a large bowl, beat cookie dough and flour until blended and dough is softened. Beat in egg. Add cream cheese; beat until smooth. Stir in baking chips. (Dough will be soft.), Drop dough by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until bottoms are golden brown, 11-13 minutes. Cool 2 minutes before removing from pans to wire racks to cool completely., If decorating cookies, melt candy coating in a microwave. Cut a small hole in the tip of a pastry bag; insert a small round pastry tip. Fill bag with melted coating. Pipe designs onto cookies; decorate with sprinkles. Freeze option: Freeze undecorated cookies in freezer containers. To use, thaw and decorate as desired.

Creme De Menthe Balls (No-Bake Cookies) image

Steps:

  • Combine wafer crumbs, pecans, 1 cup powdered sugar, corn syrup and creme de menthe, blending to make a stiff dough.
  • Roll into 1" balls, then roll in additional powdered sugar to coat.
  • I use the food processor makes life alot easier!

12 ounces vanilla wafer crumbs
3/4 cup finely chopped pecans

CREME DE MENTHE BROWNIES

First had these from a neighbor years ago, but I lost the recipe. I think this replicates it nicely. Creme De Menthe is a creamy, minty liqueur that's often used to make beverages and desserts. You can find it at most liquor stores. You can purchase clear or green Creme De Menthe, of course to get this fabulous green color in the minty layer I would highly suggest you get the green version. You use very little of the liqueur in this recipe, but the bottle will last a lifetime, it is fairly inexpensive. Maybe $6 a bottle. The brownie part is very rich and dense.

Creme De Menthe Brownies image

Steps:

  • BROWNIES:.
  • Preheat the oven to 350 F, and grease a 9x13" baking pan. Set aside.
  • Cream the sugar and butter together, then add the vanilla. Add the beaten eggs, 1 cup of flour, and the chocolate syrup. Mix the batter well, and spread into the prepared pan. Bake for around 30 minutes, but check early. Allow the batter to cool completely while you make the next layers.
  • MINT LAYER:.
  • Mix the butter with the powdered sugar and the crème de menthe. Spread it over the cooled brownie layer.
  • CHOCOLATE LAYER:.
  • Melt the chocolate chips together with the butter, either in the microwave or in a double boiler on the stove. Pour the chocolate layer over the crème de menthe layer.
  • Transfer the baking pan into the freezer or refrigerator and allow to cool before you cut and serve.
  • I like to serve them in little petit fours size bites. They are VERY RICH!

  • Preheat oven to 350°F Do not do this until after dough has been refrigerated.
  • Blend butter, brown sugar, white granulated sugar, baking soda, baking powder, vanilla and eggs until ingredients are mixed.

Steps:

  • Preheat oven to 350 degrees.
  • Mist 9x13 baking pan with cooking spray.
  • Prepare brownies: In double boiler, melt baking chocolate and 1 cup butter over simmering water; cool slightly.
  • In medium mixing bowl, beat eggs with a whisk until blended, then add the 2 cups granulated sugar and continue whisking until mixture is light and fluffy.
  • Add cooled chocolate mixture, salt, vanilla and flour.
  • Keep whisking until thoroughly blended.
  • Pour batter into prepared pan and bake 25 minutes.
  • Remove from oven and leave brownies to cool in pan.
  • Make filling: Using an electric mixer on medium speed, beat the 1/2 cup butter and confectioners' sugar together until well blended.
  • Stir in the creme de menthe and blend well.
  • Spread over cooled brownies.
  • Refrigerate in original baking pan until filling is firm.
  • Make icing: Melt the chocolate chips and 6 T butter in the top of a double boiler, stirring until smooth. (You can do this in the microwave, just monitor closely and stir a few times.).
  • Pour the warm glaze over the filling and tilt pan to distribute the icing evenly.
  • Refrigerate until chocolate hardens.
  • To cut, allow brownies to come to room temperature in the pan so chocolate doesn't crack.

his is a very easy recipe. My son won a purple ribbon (which is higher than a blue ribbon) at the county fair when he was 10 years old. This was also his first paid 'catering' job for a graduation party when he was 12 (he's married now, so that gives you a clue as to how long I've had this recipe). Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.
  • Beat the white sugar with 1 cup of the butter or margarine until light and fluffy. Beat in the eggs. Then stir in the flour, salt, chocolate syrup and vanilla. Mix until combined.
  • Pour batter into the prepared pan and bake at 350 degrees F (175 degrees C) for 30 minutes. Let cool then frost with Creme de Menthe Frosting. Refrigerate until set. Then spread Melted Chocolate topping over top. Let sit until set and cut into bars.
