Steps:

  • In a medium mixing bowl combine tomato, zucchini, green onions, basil, and Italian salad dressing. Toss lightly to mix.
  • Line 4 salad plates with lettuce. Divide tomato mixture among plates. Sprinkle each serving with some of the cheese. Makes 4 servings.

  • Slice the kernels off the corn cobs and transfer to a large mixing bowl. Combine with the tomatoes and red onion. Make a dressing of the olive oil mustard and vinegar and season to taste with salt and pepper. Add the dressing to the vegetables and toss; marinate overnight.   • Trim off ends of zucchini. Cut it on bias into 12 slices of about the same size.
  • Bring enough water to boil to cover zucchini slices when added. Add slices and cook 1 1/2 minutes; do not overcook. Drain.

  • Preheat oven to 375 degrees F (190 degrees C). Lightly butter a 9x9-inch pan.
  • In a large bowl, combine Cheddar, Parmesan, oregano, basil, and garlic. Season with salt and pepper, and set aside.

  • Chop finely the onion.
  • Slice the zucchini (not to thick).
  • Saute the zucchini with the onion, garlic.
  • Add all your seasonings.

  • Working with 1 zucchini at a time, cut lengthwise into very thin (julienne) strips with slicer, turning zucchini and avoiding core. Discard core.

Warm Zucchini and Tomato Salad image

Steps:

  • Preheat oven to 450 Farenheit, and get a glass pie dish.
  • Slice zucchini lengthwise into ½ inch strips.
  • Lay zucchini strips on bottom of pie plate to roughly cover the bottom. Small spaces are ok.
  • Sprinkle ~1/3 to 1/2 cup of the croutons (I really just eyeballed it - a couple of handfuls).
  • Slice the stem end of the tomato off, then slice the rest of the tomato into six ½ inch slices. Arrange the largest 5 slices around the edge, and put the smallest slice in the center.
  • Sprinkle another layer of croutons, 1/3-1/2 cup or so.
  • Drizzle a tablespoon or two of olive oil all around (again I just eyeballed it).
  • Grind pepper over the top so the whole top is dusted lightly (~1/4 to 1/2 tsp worth, or to your liking).
  • Sprinkle sea salt all around (again 1/4 to ½ tsp or to your liking).
  • Cover with layer of whatever shredded cheeses you have.
  • Bake in 450 F oven for about 11 minutes. Reduce heat to 350 and bake until the cheese looks browned and sort of crispy ~3-5 minutes (or whenever it looks good to you - my croutons got pretty brown).
  • Remove from oven. Slice, like a pie, between each tomato slices (i.e. into fifths).
  • Remove piece with spatula, to plate or bowl and drizzle with balsamic vinaigrette to your taste.

Fresh Tomato and Zucchini Tart image

Steps:

  • Make the pastry: Blend the cream cheese and the butter.
  • Add the flour and salt and mix just until the dough starts to form a ball.
  • Sprinkle the chives on a work surface.
  • Turn out the dough and knead lightly until the chives are incorporated.
  • Pat the dough into a disc about ½ inch thick.
  • Wrap and refrigerate for atleast 30 minutes and up to 1 day.
  • Remove the dough from the refrigerator and let stand at room temperature to soften slightly.
  • On a well-floured work surface, roll the dough into a 13 to 14 inch round.
  • Roll the pastry onto the rolling pin and gently unroll it over an 11 inch fluted tart pan with a removable bottom.
  • Fit the dough evenly into the pan without stretching.
  • Trim the overhanging dough to 1 inch from the rim.
  • Fold the excess dough over and press it into the side of the pan.
  • Refrigerate for 20 minutes, or until firm.
  • Preheat the oven to 400F.
  • Line the chilled tart shell with foil and weigh down with pie weights or dried beans.
  • Bake for 15 minutes.
  • Remove foil and weights and bake 10 minutes longer, or until just set and golden.
  • Transfer to a rack to cool completely; then remove the fluted rim and place the shell on a serving platter.
  • Prepare the filling: In a medium bowl, stir together the olives, anchovies and capers.
  • Spread the mixture evenly over the bottom of the baked shell.
  • Starting at the edge, layer the tomato slices in overlapping, concentric circles.
  • Season generously with lots of freshly-ground black pepper and salt.
  • Heat the olive oil in a medium skillet.
  • Add the garlic and stir, over medium-high heat, for 1 minute, or until fragrant.
  • Add the zucchini, season with salt and pepper and stir until softened slightly, about 1 minute.
  • Spoon the zucchini over the tomatoes and garnish with fresh basil leaves.
  • Serve at room temperature.

TOMATO AND ZUCCHINI CASSEROLE WITH CRISP CHEDDAR TOPPING

This casserole is a modern twist on an old favorite, the tomato-zucchini bake. But instead of a Parmesan and bread-crumb topping, this one is covered in a savory oat and Cheddar crumble that crisps and browns in the oven. Dollops of garlicky, herbed ricotta make the casserole wonderfully rich and creamy, while olives liven it up with their salty tang. This is equally good warm or at room temperature, preferably served within four hours of baking so the topping stays crunchy. Or you could make it the night before and reheat it in a 375-degree oven until bubbling. It makes an excellent side dish or meatless main course.

Tomato and Zucchini Casserole With Crisp Cheddar Topping image

Steps:

  • Heat oven to 400 degrees and butter a 9- by 13-inch casserole dish or 2-quart gratin dish.
  • In a food processor or blender, purée the ricotta, basil and garlic.
  • Toss tomatoes, zucchini and 1 teaspoon salt in casserole to combine, then spread into an even layer. Dollop with ricotta mixture and scatter olives evenly across the top.
  • In a medium bowl, combine flour, oats, cheese, oregano or marjoram, lemon zest, cayenne and a large pinch of salt. Use your fingertips to work in the 5 tablespoons butter; you should end up with small clumps. Scatter clumps over vegetables, then drizzle liberally with olive oil.
  • Bake until golden and bubbly, 35 to 45 minutes. Serve warm or at room temperature.
