CRISPY CHOCOLATE

- Combine the eggs, sugar, milk and vanilla in a medium bowl. While whisking together, stream in the butter, and continue to whisk until incorporated. Whisk in the flour until no lumps remain.
- Preheat your waffle cone iron and coat it with a bit of canola oil to prevent the batter from sticking. Ladle enough of the batter onto the center of the iron to make a 4-inch round. Close the lid and cook until the waffle crisp is a deep golden brown, about 2 minutes. Transfer to a wire rack to cool and crisp. Repeat with the remaining batter until you have 6 to 7 waffle crisps. Crush the cooled waffle crisps into small pieces (about the size of rolled oats) and transfer to a large bowl.
- Put 1 cup of the chocolate in a heatproof bowl set over a saucepan of barely simmering water (do not let the bowl touch the water). Bring the chocolate to 110 degrees F, gently stirring the chocolate as it melts. Remove from the heat and add the remaining 1/4 cup chocolate; gently stir until the chocolate is smooth and reaches 89 to 90 degrees F.
- Pour the chocolate over the crushed waffle crisps and stir to coat all of the pieces, working quickly before the chocolate cools and hardens. Spread the mixture into the cups of a silicone muffin pan, making the crispy chocolate as large or small as you like. Sprinkle the sea salt over the chocolate.
- Let sit at room temperature until the chocolate is fully cooled and hardened. Unmold the crispy chocolate from the cups and enjoy!
CHOCOLATE NUTTY CRISPY TREATS

- Mix corn syrup and sugar in a saucepan over medium heat until bubbling, about 5 minutes. Remove from heat; stir in chocolate chips and almond butter until melted.
- Put rice cereal in a large bowl; mix in almond-chocolate mixture. Pour cereal mixture into a 9x13-inch baking dish; cool for 1 hour before serving.

PERFECT DIPPING CHOCOLATE
Use only shortening for this, do not use butter, margarine or oil! Tips for dipping chocolate on bottom!

Steps:
- Remove the chilled candy from the refrigerator about 10 minutes before coating (dipping cold centers can result in cracked coating).
- Place the chocolate chips and shortening in a 2-cup measuring bowl.
- Place the bowl into a larger bowl which contains very warm water (about100-110F) the water should reach only halfway up the 2-cup bowl with the chocolate (DO NOT LET EVEN 1 DROP WATER MIX WITH CHOCOLATE!).
- Stir mixture constantly with a small spatula until the chocolate is melted and the mixture is smooth (this should take about 16-18 minutes, do not rush the melted process).
- If necessary replace the water with more very warm water.
- remove the 2-cup bowl with melted chocolate from the water and continue to stir until all the chocolate is cooled slightly (about 2-3 minutes).
- Set one candy onto a two-pronged fork, then completely dip candy into melted chocolate.
- Gently tap the fork against side of the bowl to remove any excess melted chocolate.
- Place onto baking sheet lined with waxed paper.
- Repeat with remaining candy.
- If the chocolate becomes too thick for dipping, place the bowl containing the chocolate into the bowl with warm water until desired consistancy.
- TIPS ON HOW TO WORK WITH DIPPING CHOCOLATE.
- Avoid all types of moisture when melting the chocolate, any steam or drops of moisture can cause the mixture to :seize" or become very firm, crumbly and grainy, if this occurs it can be corrected by stirring in 1 teaspoon shortening for each 2 ounces of melted chocolate.
- Chocolate can also be melted over low heat in a double boiler.
- Store the chocolate tightly wrapped in a cool dry place, do not refrigerate.

- Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Combine butter, sugar, and egg in a bowl. Beat with an electric mixer until light and fluffy.
- Mix flour, cocoa powder, baking soda, and salt together. Add to the butter mixture, 1 cup at a time, until evenly incorporated. Gradually beat in water, then vanilla extract.
- Drop spoonfuls of the cookie dough onto the prepared baking sheets. Press gently to flatten the mounds of dough.
