- Brown bacon in a large (8-quart capacity) pot. Add beef and brown in the bacon fat. Add onions, celery and carrots and saute for about 5 minutes. Add red wine and beef broth, and simmer until reduced by half. In a small bowl, mix flour and oil, then stir this mixture into the stew and let simmer for a few minutes to thicken and integrate flavors. Add potatoes, okra and bay leaves to the stew and let cook until potatoes are fork tender. Season, to taste, with salt and pepper.

- Place the stew meat in the bottom of a 5 qt or larger crock pot. Stir in seasoning salt and pepper. When meat is coated with seasonings, spread evenly.
- Layer the onion, then the potatoes, carrots, celery and then green beans on top.
- In a medium sized bowl, stir together the tomatoes, soup and tapioca. Pour over the meat and vegetables.
- Cover the pot and cook on high for 5-6 hours or on low 9-10 hours on low-until vegetables are tender.
- Stir once during the last hour of cooking. Serve with cornbread or rolls.

This is delicious and very easy to make! I like making this because it's tasty and it makes plenty of leftovers for later in the week. And it's even better heated up a day or two later! Serve with homemade cornbread! Found this recipe in the Texas Country Reported Cookbook, which is one of my favorites! I'm not real sure about the cooking time, but I think it takes about an hour!

I learned this recipe in the Boy Scouts and it is the perfect recipe for guys living on their own. It's quick and easy and very difficult to mess up. - Add cumin, ground chili, black pepper, salt, garlic and flour. Turn off burner, stir to combine and place meat mixture into bottom of crockpot. (I use a 6 quart)
- Add in sausage rounds, potatoes, baked beans, diced tomatoes, diced green chilis (or 1 can or rotel tomatoes), corn, parsley and beef broth. Mix well to combine.
