- In a large bowl, combine 3 cups flour, yeast and salt. In a small saucepan, heat milk, butter and sugar to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Add eggs; beat to combine. Stir in enough remaining flour to form a soft dough (dough will be sticky). , Turn dough onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch down dough. Turn onto a lightly floured surface. Divide into 24 portions; shape into balls. Place in a greased 13x9-in. baking pan. Cover and let rise in a warm place until almost doubled, about 1 hour. Bake at 375° until golden brown, 15-18 minutes.

- Melt 1/2 stick (4 tablespoons) of the butter and brush two 12-cup muffin tins with it. Put the frozen rolls in the cups of the muffin tins. Cover and allow to rise for several hours at room temperature or in the fridge overnight.
- Melt the remaining 3 1/2 sticks butter in a skillet over medium-low heat. Mix in the rosemary, thyme and lemon zest and heat until warmed through. Lightly brush the risen rolls with the butter mixture.
- Bake the rolls according to the package directions (usually 400 degrees F for 6 to 8 minutes), until the rolls are a deep golden brown on top. Dab with more of the butter mixture and serve warm.

- Combine the warm milk (110-115˚F or 45˚C), melted butter, warm water (110-115˚F or 45˚C), and sugar in a large bowl and stir until mixed.
- Sprinkle the yeast evenly over the top of the mixture and let sit for 1 minute.
- Add the salt, egg, and 4 cups (500g) of flour. Mix until the mixture just comes together and forms a dough.
- Cover for 30 minutes with a towel or plastic wrap.
- Uncover, and mix in the remaining cup of flour, and turn out onto a well-floured surface.
- Knead the dough until it forms a smooth ball and loses some of its stickiness.
- Cover for 30 more minutes with a towel or plastic wrap.
- Preheat the oven to 375˚F (190˚C).
- Uncover, and roll dough into 16 equal balls, roughly the size of a tangerine. Ensure the rolls are smooth with no cracks.
- Place the rolls in a greased cast iron pan and brush with water.
- Add desired toppings, or customize with your own!
- Honey Butter - Combine the melted butter with the honey and brush onto rolls.
- Jalapeño Cheddar - Top the rolls with cheddar and diced jalapeño.
- Garlic Parmesan - Top the rolls with melted butter, parsley, garlic, and Parmesan.
- Bacon Cheddar Chive - Top the rolls with cheddar, diced cooked bacon, and chives.

- Mix the flour, yeast, sugar, salt, water and 1/4 cup (60ml) of the melted butter in a large mixing bowl with a sturdy spoon until a shaggy dough forms, then knead until the dough comes together and becomes smooth, about 4 minutes by hand or machine. Form a smooth ball. Return the dough to the bowl, cover with a clean tea towel, and let rise in a warm place for 15 minutes. Lightly spray a 9 x 13 inch baking pan with non-stick cooking spray.
- Divide the dough in twenty equal-size pieces. Roll each piece of dough into a tight ball and arrage in five rows of four each in the prepared pan. Place on the middle rack of a COLD oven with a pan of hot tap water below it. *Close the oven, set the heat at 400 degrees F and set the timer for 35 minutes.

- Place 5 Tbsp. butter in a medium bowl. Cook remaining 5 Tbsp. butter in a small saucepan over medium heat, swirling often, until butter foams, then turns golden brown, about 5 minutes. Remove from heat and stir in garlic; scrape butter mixture and all those toasty milk solids at the bottom of the pan into bowl with butter pieces. Reserve saucepan. Stir until all the butter is melted and mixture is smooth. Let sit, stirring occasionally, until butter is room temperature and solidified, 15–20 minutes.
- Meanwhile, whisk ¼ cup milk, 3 Tbsp. flour, and ¼ cup water in reserved saucepan until smooth, then set over medium heat and cook, whisking constantly, until it becomes a very stiff paste resembling mashed potatoes, about 2 minutes. Scrape into the bowl of a stand mixer; reserve saucepan.
- Gently heat remaining ½ cup milk in reserved saucepan over low (it should be warm to the touch but not steaming hot). Remove from heat and let sit 1 minute. Add yeast and whisk until dissolved. Let mixture sit until foamy, about 5 minutes.
- Meanwhile, brush bottom and sides of a 13x9" baking dish with 2 Tbsp. garlic butter; set aside. Set aside another 2 Tbsp. garlic butter in a small bowl for brushing over baked rolls.
