DREAMSICLE COOKIES
This is truly a different type of cookie. When mixed with a plate full of cookies at a luncheon, these disappeared first and my guests all went home with the recipe.

Steps:
- Preheat oven to 350 degrees.
- In a large bowl, cream the butter, eggs, vanilla, and water.
- Add the remaining dry ingredients and stir until the mixture is well blended.
- Spread batter into a lightly greased 9x12 pan.
- Bake for 20 to 25 minutes.
- Cool in pan.
- Cut into 2-inch squares.
ORANGE DREAMSICLE CUPCAKES
"Since I was a kid, my family has competed in food competitions at the Texas State Fair. I have a basic cupcake recipe from my grandmother and I change the flavor every year. Orange and vanilla is my showstopper -- the combination reminds me of buying Creamsicles in the summer," says Emily.

- Make the cupcakes: Preheat the oven to 350 degrees F. Line 18 muffin cups with paper liners. Sift the flour, baking powder and salt into a medium bowl; set aside. Beat the egg whites in a large bowl with a mixer on medium-high speed until stiff peaks form, about 4 minutes; set aside.
- Beat the butter, granulated sugar, egg yolks, orange zest and orange oil in a separate large bowl with a mixer on medium speed until smooth and combined, about 4 minutes. Reduce the speed to low; beat in the flour mixture in three batches, alternating with the orange juice. Fold in the beaten egg whites. Spoon the batter into the muffin cups, filling each about halfway. Bake until a toothpick inserted into the centers comes out clean, about 15 minutes. Let cool 10 minutes in the pans, then remove to racks to cool completely.
- Make the frosting: Beat the butter and vanilla in a large bowl with a mixer on medium-high speed until light and fluffy, about 6 minutes. Reduce the speed to low; gradually beat in the confectioners' sugar. Add the milk, increase the speed to medium and beat until light and fluffy. Frost the cupcakes. Top with sanding sugar and orange gummy candies.
- Orange oil gives the cupcakes an intense orange flavor that you can?t get from just extract or zest.
CREAMSICLE SMOOTHIE

- Blend 3/4 cup frozen orange or orange-tangerine concentrate with 1/2 cup cold water and 1 cup each vanilla ice cream and ice.

- In a bowl, beat the cream with a whisk until soft peaks form. Set aside.
- In another bowl, beat the egg whites until soft peaks form. Add the honey and vanilla extract and continue beating until firm peaks form.
- Combine the egg whites mixture to the cream and add the orange juice and orange zest.
- Using a popsicle mold or wax paper cups, fill the molds and insert the popsicle sticks. Place in the freezer overnight and serve.
CREAMSICLE® COCKTAIL
In June of 2020 we were still dealing with the Coronavirus ravaging our country and making us pretty much stir-crazy. Luckily in California the lockdown rules were loosening, and my husband and I were able to host some good friends at our home for the weekend. The weather was heating up and while we were spending the day by the pool (pretending we were at an exotic resort) my friend asked if I could make her a foofie drink. I went inside, took an inventory of my ingredients, and the COVID Creamsicle® cocktail was created.

DREAMSICLE-CREAMSICLE ON THE ROCKS!
I searched thru all the recipes posted here for this type of cocktail but most of them had ice-cream as an ingredient. So, I created this one, without ice-cream. It is very smooth, slightly creamy and definitely reminiscent of those wonderful ice-cream confections we all loved. But be careful...it's surprisingly potent!

- Mix the sugar and the food coloring until its the shade of orange you desire, a few drops should work fine.
- Place the orange and white marshmallows in a ziplock bag (small one to fit inside the top of the jar).
- Layer in a pint size jar in the following order:.
- orange colored sugar.
- 1/2 the milk mixture.
- orange drink mix.
- remaining milk mixture.
- mini marshmallows.
- There are 3 recipes you can attach to the jar.
- Dreamsicle Warmer:.
- Remove bag of marshmallows from jar and set aside.
- Empty mix into a large bowl and mix together.
- Place mix back into jar or other container.
- Place 3T mix into a cup and add 1 C of boiling water.
- Stir until mixture is dissolved- top with marshmallows.
- Dreamsicle Cooler:.
- Place in blender.
- 1/3 C drink mix.
- 8 ice cubes.
- 1 C milk.
- Blend until ice is crushed.
- Dreamsicle Shake:.
- Place 1 scoop of soft vanilla ice cream and 1 C milk into a quart jar.
- Add 1/3 C drink mix.
- Place lid on the jar and shake, shake, shake!

DREAMSICLE DESSERT
Steps:
- Mix gelatin mix with 1 cup boiling water till dissolved. Add 1 cup cold water plus 3 ice cubes and stir into the hot gelatin mix. Set aside 5 minutes to cool.
- Add the instant pudding to the gelatin mixture, stir for about 2 minutes and then let set for approximately 15 minutes to thicken. Fold in the mandarin oranges and Cool Whip.
- Refrigerate for approximately 30 minutes or can be frozen for a more ice cream like dessert.

- Combine sherbet and ice cream in a large ziplock plastic bag. Massage the bag to slightly mix the 2 colors. Make a 3/4-inch cut in bottom corner of bag. Squeeze about 3 tablespoons of sherbet mixture into each of 10 (3-oz) popsicle molds.
- Stir together orange juice, simple syrup, and cream in a liquid measuring cup. Pour juice mixture into popsicle molds allowing liquid to fill in all the air pockets of the ice cream. Insert popsicle sticks, and freeze at least 8 hours.
