DUCK A L'ORANGE

Until recently, we had always thought of duck à l'orange as a tired cliché of the 1960s, so it was a surprise to find out how delightful this old recipe actually is. We have reduced the original quantity of sugar and caramelized it (along with the aromatic vegetables which balance out the sweetness) for a rich sauce with layers of flavor. One thing that hasn't changed: Cooking a whole duck still feels wonderfully extravagant.

Duck a l'Orange image

Steps:

  • Roast duck:
  • Put oven rack in middle position and preheat oven to 475°F.
  • Stir together salt, coriander, cumin, and pepper. Pat duck dry and sprinkle inside and out with spice mixture. Cut 1 half of orange into quarters and put in duck cavity with thyme, marjoram, parsley, and 4 onion wedges.
  • Squeeze juice from remaining half of orange and stir together with wine and stock. Set aside.
  • Spread remaining 4 onion wedges in roasting pan with carrot and celery, then place duck on top of vegetables and roast 30 minutes.
  • Pour wine mixture into roasting pan and reduce oven temperature to 350°F. Continue to roast duck until thermometer inserted into a thigh (close to but not touching bone) registers 170°F, 1 to 1 1/4 hours more. Turn on broiler and broil duck 3 to 4 inches from heat until top is golden brown, about 3 minutes.
  • Tilt duck to drain juices from cavity into pan and transfer duck to a cutting board, reserving juices in pan. Let duck stand 15 minutes.
  • Make sauce:
  • While duck roasts, cook sugar in a dry 1-quart heavy saucepan over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a fork, until sugar melts into a deep golden caramel. Add orange juice, vinegar, and salt (use caution; mixture will bubble and steam vigorously) and simmer over low heat, stirring occasionally, until caramel is dissolved. Remove syrup from heat.
  • Discard vegetables from roasting pan and pour pan juices through a fine-mesh sieve into a 1-quart glass measure or bowl, then skim off and discard fat. Add enough stock to pan juices to total 1 cup liquid.
  • Stir together butter and flour to form a beurre manié. Bring pan juices to a simmer in a 1- to 2-quart heavy saucepan, then add beurre manié, whisking constantly to prevent lumps. Add orange syrup and zest and simmer, whisking occasionally, until sauce is thickened slightly and zest is tender, about 5 minutes. Serve with duck.

1 teaspoon black pepper
1 (5- to 6-lb) Long Island duck (also called Pekin)
1 juice orange, halved
4 fresh thyme sprigs
4 fresh marjoram sprigs
2 fresh flat-leaf parsley sprigs
1 small onion, cut into 8 wedges
1/2 cup dry white wine
1/2 cup duck stock, duck and veal stock*, chicken stock, or reduced-sodium chicken broth
1/2 carrot
1/2 celery rib
For sauce
1/3 cup sugar
1/3 cup fresh orange juice (from 1 to 2 oranges)
2 tablespoons white-wine vinegar
1/8 teaspoon salt
2 to 4 tablespoons duck or chicken stock or reduced-sodium chicken broth
1 tablespoon unsalted butter, softened
1 tablespoon all-purpose flour
1 tablespoon fine julienne of fresh orange zest, removed with a vegetable peeler
1 13- by 9-inch flameproof roasting pan

It was near my husband's birthday when a dear friend gave me two ducklings. Michael loves duck, so I asked him how he wanted them fixed. This is my adaptation of Julia Child's recipe for Duck a l'Orange. The ducklings were a perfect one serving size, 15 ounces, and 17 ounces. The recipe that I had, said that a 5 pound duck would take 1 hour and 30 minutes. Since ours were just about a pound each, they only took 25 minutes. Thank you, Jenny!

Roast Duck With Orange Sauce - Canard a L' Orange Julia Child image

Steps:

  • Start the stock for the sauce well in advance.
  • Brown duck parts with carrot and onion in oil. (or brown carrot and onion with gleaned duck fat).
  • Add bullion and water.
  • Simmer with herbs and reduce to 2 cups.
  • Skim fat, any scum, strain, and set aside, or refrigerate until needed.
  • To begin the sauce, bring water to simmer while preparing orange peel.
  • The peel is for both the roasting duck, and the sauce. This also, needs to be done in advance.
  • Peel oranges, making sure that the strips are only the orange colored part, not the bitter white.
  • Julienne into strips about 1/8" or less by 1 1/2 ".
  • Simmer in water 6 minutes, drain, rinse in cold water, dry, and set aside.
  • Peel orange segments, put in covered container, and set aside, or refrigerate.
  • Prepare duck by trimming loose fat, making sure all feathers are gone, and remove wishbone from breast (optional).
  • Prick skin to allow fat to escape, and to baste the duck during the cooking.
  • Season cavity of ducks with salt and pepper, and place 1/3 of orange peel and 1/3 of orange segments inside.
  • The small ducklings will take about 25 to 30 minutes to roast, so you might want to continue the sauce at this point and preheat the oven to 450°F.
  • In a saucepan, blend sugar and vinegar over low heat to dissolve.
  • Boil rapidly until mixture begins to caramelize.
  • Lower heat to simmer, add half the duck stock, and stir until mixture is no longer caramelized.
  • Remove from heat.
  • Add remaining stock, blended cornstarch with 2 tablespoons of the port, remaining orange peel, and all but a few orange segments (saved for garnish).
  • Simmer for 3-4 minutes, correct seasoning, and keep warm. Sauce should be clear and slightly thickened.
  • Place ducklings on rack in small roasting pan, breast side up and place in oven.
  • Roast 5 minutes, reduce heat to 350°F, and turn on side, and place back in oven.
  • Continue to roast and turn, until duck is breast up. Roast 25 to 30 minutes total.
  • When ducklings are done (juice will be rosy clear) place on warmed individual platters and keep warm.
  • Finish sauce by removing fat from roasting pan and deglaze with port.
  • Add to sauce.
  • Bring sauce to simmer, add orange liqueur, and correct seasoning with lemon juice if sauce seems too sweet.
  • Remove sauce from heat, swirl in butter and spoon some over ducks and put remainder in a warmed sauceboat.
  • Garnish ducks with remaining orange segments, place rice and peas on platters and serve.

ROAST CRISP DUCK

Served with a delicious orange sauce. NOTE: Do not prick duck! It remains more crisp without pricking. There is much waste in duck. For adult portions and healthy appetites, even a 6-pound duck will serve no more than 3 good-sized portions.

Steps:

  • Wash duck with cold water. Dry it well. Salt inside and out. Sprinkle lemon juice in cavity and rub skin with lemon juice too. If duck is fresh killed, refrigerate it for 1 or 2 days.
  • Place orange, apple and onion in cavity of duck. These will be removed after roasting and discarded. Preheat oven to 350°F.
  • Truss bird by bringing cord under back and around sides of breasts, under tail, and then tie around legs. Place duck on a rack in an open roasting pan and cook for 1 hour.
  • Set oven up to 400°F and roast 30 to 60 minutes more. During this time, turn bird for even browning and baste with orange juice.
  • Remove duck from oven and drain all fat from pan. Save brown drippings and 2 tablespoons fat for your sauce.
  • Duck may be kept in oven while you cook the sauce.
  • If you own a rotissierie by all means use it. This is an excellent method for duck. Allow about one hour on high heat. Entire cooking time for oven roasting should be 2 to 2 1/2 hours.
  • For family style service, cut duck into eighths 30 minutes before dinner. Place duck and orange slices on an ovenproof platter. Coat all with sauce. Before serving, broil for 1 minute, 4 inches below flame. Yield: 2 to 3 servings.
  • FOR THE SAUCE:.
  • Simmer rind and water for 5 minutes. Add duck fat with brown sugar, orange juice, jelly, lemon juice and duck broth. Simmer all gently for 2 to 3 minutes. Blend cornstarch with water in a cup. Add the cornstarch mixture slowly, if you obtain the desired thickness before you have used it all, stop.
  • *If you have not used giblets to prepare broth, hold roasted duck over sauce to allow cavity juices to run down into sauce. This fortifies the duck flavor of the sauce.

  • Skin and bone chicken breast halves.
  • Sauté chicken in butter in a large skillet over medium heat until browned and cooked through (about 8 minutes).
  • Remove to a platter, cover and keep warm.
  • In the same skillet, sauté onion until tender but not browned; add juice concentrate, tarragon, pepper and salt.
