DUSTIN'S STUFFED CHICKEN
I really love the combination of the shrimp and pepper in the stuffing mix. I cooked both the chicken and shrimp for a bit in the over as well just to assure doneness, but other than that I can't imagine changing a thing! Delicious.

Steps:
- 1. wash chicken well. pound out chicken breast season with salt, pepper, garlic powder, and set to side.
- 2. In your favorite skillet place oil, diced onion, hot pepper, garlic, mushrooms, and sautee for 2 min. Then add shrimp and sautee until cooked thru. Then set to side
- 3. Fill the middle of the chicken breast with all of the ingredients from the skillet, and roll the breast up around them and secure with toothpics
- 4. Season flour with salt, pepper, and garlic powder. Roll your chicken rolls in the flour until covered.
- 5. Deep fry your Chicken Rolls until done. if you have a problem getting them done all the way threw with out burning the outside you can finish them in the oven. Enjoy
DUSTIN'S CHICKEN SPIEDINI
Steps:
- Preheat oven to 350 degrees F.
- Spray a baking pan lightly with cooking spray. Wrap each chicken strips around each cheese cube and secure with a toothpick. Dip chicken in olive oil and then roll in bread crumbs. Place chicken in the baking pan. Top with bay leaves and sliced onions. Bake for 15 to 20 minutes, or until chicken is fully cooked through, and cheese has melted, and bread crumbs are golden brown. Serve.

- Place the lime juice, cilantro or Italian parsley, garlic cloves, sugar, cumin, turmeric, black pepper, and salt in a food processor and give it a few good chops. Preheat oven 375°F. Gently pull the skin from the leg back and stuff the mixture into under the skin. Place the legs on a baking dish and bake for 45 to 50 minutes or until a beautiful golden color appears and the juices run clear.

Steps:
- Heat oven to 200C/180C fan/gas 6. Toss the potatoes in the stuffing mix, tip into a roasting tin, drizzle over the olive oil, season and roast for 30 mins.
- Cut the chicken breasts in half horizontally, carefully cutting halfway through, and open them out like a book. Spread 1 tbsp Boursin cheese and ½ tbsp cranberry inside each chicken breast. Close the breasts, then wrap each in a slice of Parma ham. Line a baking tray with foil and put the chicken breasts on top. Once the potatoes have been cooking for 10 mins, put the chicken tray in and cook for the remaining 20 mins.
- Remove the chicken and potatoes, and toss the potatoes with the lemon juice and rocket. Serve the oozing chicken breasts with the potatoes on the side.
