HOMEMADE HOT MUSTARD
I got this recipe years ago from a neighbor. (thanks John) It is a simple, no cook recipe. You will want to make it a few days to a week in advance. The longer it sits the sharper the flavor. People swear it has horseradish in it. I like to make this to serve with cheese & cracker plates. It's so good on a hot dog that was just roasted on a campfire. Have some of this mustard in baby food jars or empty grey poupon jars so you can send home with your friends after they try it. The recipe doubles and triples easily. Hope you enjoy !!

Steps:
- Mix dry ingredients in bowl.
- Add vinegar in 1/4 cup intervals so it is easier to incorporate. I use a wisk.
- You may need to add additional vinegar to get a consistancy a little thinner than regular mustard. It will thicken up in the frig.
- Place in refrigerator and stir couple times a day.
- Serve after a few days. It it seems too thick, simply add more vinegar.

SWEET AND HOT MUSTARD
A few tablespoons of this mustard may be whisked into homemade mayonnaise and served with anything poached. It also is a tasty addition to a vinaigrette dressing.

Steps:
- In a nonmetallic bowl, preferably china or glazed pottery, blend together the dry mustard and sugar. Whisk in both vinegars and the salt. Let this stand, uncovered, for 24 hours.
- To finish the mustard, transfer the mustard solution to a nonmetallic saucepan (I use enameled cast iron). Whisk in the beaten eggs. Cook the mixture over moderately low heat, stirring continuously, for about 17 minutes, or until dense enough to thickly coat a spoon.
- Pour the cooked mustard into a jar, cool to room temperature and then cover and refrigerate.

EASY HOT HOMEMADE MUSTARD
This was a staple as I grew up. We used it on ham, and any cold cuts of meat. I am told that as a toddler I sucked my thumb, so my parents thought if they put some of this hot mustard on my thumb,I would stop sucking it. I fooled them and asked for more!
