EASY PEACH COBBLER FROM SOUTHERN LIVING
Delish Summer dessert. Must serve with real vanilla ice cream for the full effect! I omit the nutmeg, always use the cinnamon. Southern Living, JUNE 1997

Steps:
- Melt butter in a 13- x 9-inch baking dish.
- Combine flour, 1 cup sugar, baking powder, and salt; add milk, stirring just until dry ingredients are moistened.
- Pour batter over butter (do not stir).
- Bring remaining 1 cup sugar, peach slices, and lemon juice to a boil over high heat, stirring constantly; pour over batter (do not stir).
- Sprinkle with cinnamon, if desired.
- Bake at 375° for 40 to 45 minutes or until golden brown. Serve cobbler warm or cool.

- Preheat the oven to 350 degrees F.
- Drain 1 can of peaches; reserve the syrup from the other. Place the butter in a 9- by 12-inch ovenproof baking dish. Heat the butter on the stove or in the oven until it's melted. In a medium bowl, mix the flour and sugar. Stir in the milk and the reserved syrup. Pour the batter over the melted butter in the baking dish. Arrange the peaches over the batter. Bake for 1 hour. The cobbler is done when the batter rises around the peaches and the crust is thick and golden brown. Serve warm with fresh whipped cream
- Chill a large metal mixing bowl and the wire beater attachment in the freezer for about 20 minutes. Pour the chilled cream and sugar into the cold mixing bowl and beat until it forms soft peaks, about 5 minutes. The mixture should hold its shape when dropped from a spoon. Don't overbeat or you'll have sweetened butter!
EASY PEACH COBBLER
This cobbler recipe is just little different from all the others, because of the peach nectar. In my neighborhood grocery store, the nectar is found in the Mexican food aisle. If you don't have any on hand, you can use milk or even apple juice.

- Preheat oven to 350 degrees.
- Melt butter in oven in a large casserole dish.
- Pour the peaches in the pan with melted butter.
- Combine the flour, sugar, and peach nectar in a separate bowl and stir until well mixed. Pour over the top of the peaches. It will sink to the bottom but will rise during cooking.
- Bake 45- 50 minutes or until golden brown on top.
- Serve warm with vanilla ice cream.

- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
- Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
