Steps:
- Preheat oven to 400°F (200°C).
- Slice the avocados in half and remove the pits.
- Place the avocado halves on a baking sheet and scoop out some of the flesh to make a bigger hole.
- Crack one egg into each hole and season with salt and pepper.
- Top with toppings of choice and bake for 15 minutes or until yolk reaches desired consistency.
- Sprinkle with fresh herbs, as desired.

- Next time you make an egg-in-a-hole, consider using avocado instead of bread: Cut an avocado in half, remove the pit and scoop out about 1 tablespoon of flesh from each half. Season with salt and pepper and nestle the halves cut-side up in a small pile of salt on a baking sheet so they won't wobble. Crack a medium egg into each (a large egg will overflow). Season with salt and bake at 425 degrees F until the white is just set, 16 to 18 minutes; top with pico de gallo and crushed tortilla chips.

I had these clever breakfast treats at a brunch gathering. They are easy to make for just two people or for a crowd. You can double or triple this recipe for a crowd. I use a muffin tin to hold each avocado half if I am making several of them.

- Place each avocado half in a ramekin. Crack 1 egg into each avocado half; season with salt, black pepper, and cayenne pepper. Place ramekins on a baking sheet.

SOFT SCRAMBLED EGGS WITH AVOCADO

- Crack the eggs into a bowl. Add the cream and whisk until the eggs look foamy and light. Heat a 10-inch non-stick skillet over medium heat. Melt the butter until it foams, then turn the heat down to low and slowly pour in the eggs. Using a heat resistant rubber spatula, slowly stir the eggs from the outside of the pan to the center. Once the eggs begin to set, stirring slowly will create large, cloud-like curds. This sounds easy but perfect scrambled eggs that are soft and custard-like with no brown color are a sign of a really good cook. This process takes about 10 minutes. Season the eggs with a few cranks of black pepper and good salt, like fleur de sel. Serve with a few slices of avocado and a little chopped fresh chive.

- Fill a large saucepan with water, add the vinegar and bring to a hard boil over a high heat. Once boiling, reduce the heat so the water is simmering, then use a spoon to swirl the water into a whirlpool. Crack in both eggs and cook for 2 1/2 mins.

- In a skillet, over medium heat, combine black beans and salsa for 5 minutes, smashing the beans while cooking.
- Meanwhile in a small cup or bowl combine avocado and lime juice; mashing with a fork.
- Whisk together the egg substitute and chili powder in another bowl.

- Mix eggs, cream, salt & pepper with a fork; stir in avocado.
- Heat butter in skillet over medium heat until just hot enough to sizzle a drop of water;.
- Pour mixture into skillet. I personally like to add cream cheese at this time. As egg mixture begins to set at bottom and side, lift cooked portion with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook until eggs are thickened throughout but still moist.
- Sprinkle tomato if desired.
- Remove from heat and sprinkle bacon on servings.
