HEALTHY LOW FAT LASAGNA
I altered the ingredients to make a lasagna for the more health-conscious. My boyfriend is not a health freak but LOVED this dish. Very easy to freeze leftovers and just pop back in the oven for 1.5 hours when you want to have it again for dinner. Let me know what you think! --_^

- In a large saucepan, cook ground turkey, onion& garlic in a combination of the oil and nonstick cooking spray. Add sauce and simmer 15 minutes.
- In a medium sized bowl, mix ricotta,1 cup mozzarella, all of Parmesan and the eggstirs.
- In 9x13 baking dish, layer 2 cups sauce, half of noodles, half of remaining sauce, all of ricotta mixture, half of what is left of the mozzarella, remaining noodles & sauce.
- Cover with foil sprayed with cooking spray and bake at 350 F for 45 minutes or until hot.
- Uncover, top with remaining mozzarella.
- Bake 15 minutes.
- Sprinkle some Parmesan on top, let cool down for 15 minutes, and Enjoy your healthy, yet delectable, meal -- with plenty of leftovers to boot!
FAST & EASY SPINACH/GREEK YOGURT LOW-FAT LASAGNA
This lasagna is simply delicious, low-fat, and easy to make. I use whatever pasta sauce and cheeses are on hand to make this crowd-pleaser. I hope your family enjoys this as much as we do! (No one has any idea that the "ricotta" is actually low-fat greek yogurt+veggie broth... mwahahaha!)

Steps:
- Heat oven to 400°F.
- In medium saucepan heat up vegetable broth.
- Add Greek yogurt and half the cheese to the hot broth.
- Add spinach gradually to the yogurt/broth mixture. Set aside.
- Drizzle olive oil on the bottom of a 13X9 inch baking dish. Spread a small amount of pasta sauce on bottom of dish.
- Add a layer of noodles.
- Spread sauce on top of noodles.
- Add a layer of 1/3 of the spinach/yogurt/cheese broth.
- Sprinkle with 1/3 of remaining cheese.
- Repeat previous 3 directions twice more.
- Bake for 30 minutes covered, then 10-15 minutes uncovered.
- Let stand at least 10-15 minutes before serving.

QUICK AND HEALTHY LASAGNA
Can't give up lasagna? Try this low-fat version instead!! I got this recipe from a friend. If you must, add ground turkey or beef.

Steps:
- Preheat your oven to 350 degrees.
- Use a non-stick spray to grease a 9-inch by 13-inch baking pan.
- Mix ricotta cheese, parsley, and garlic.
- Pour one cup of sauce onto the bottom of baking pan.
- Arrange 1/3 of the noodles in the pan.
- Make sure they touch but do not overlap Spread half of the cheese mixture over noodles.
- Top with half of the mozzarella cheese.
- Pour another cup of sauce, add another layer of noodles, and the remainder of the sauce Sprinkle with Parmesan cheese.
- Bake it covered tightly with aluminum foil for about one hour.

- Preheat oven to 350 degrees F (175 degrees C).
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, add the lasagna noodles a few at a time, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 10 minutes. Remove the noodles to a plate.
- Place the ground beef into a skillet over medium heat, add the garlic, garlic powder, oregano, salt, and black pepper to the skillet. Cook the meat, chopping it into small chunks as it cooks, until no longer pink, about 10 minutes. Drain excess grease.
- In a bowl, mix the cottage cheese, eggs, and Parmesan cheese until thoroughly combined.

- Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain noodles as directed on package. Place in cold water.
- Meanwhile, in 12-inch skillet, cook beef and garlic over medium-high heat 5 to 7 minutes, stirring frequently, until beef is thoroughly cooked; drain. Stir in pasta sauce, ground red pepper and 1 teaspoon of the basil. Heat to boiling, stirring occasionally. Remove from heat.
- Heat oven to 350°F. In medium bowl, beat egg slightly. Stir in ricotta cheese and remaining 1/2 teaspoon basil until blended. Drain noodles. - Cook lasagne according to package directions; drain.
- Preheat oven to 350ºF. Warm oil in a large saucepan over low heat.
- Add onion, garlic and eggplant. Cover and let vegetables cook until very soft, about 10 minutes. Meanwhile, stir together the Ricotta, Feta and yogurt.
- When vegetables are done, stir in tomato sauce. Remove from heat and set aside 1 cup of eggplant mixture.
- In a 9 × 13 × 2-inch baking dish, spread a little of the eggplant mixture over the bottom and cover with 3 pieces of lasagne. Spoon some of the Ricotta over the lasagne. Continue to layer with eggplant mixture, lasagne, and Ricotta. Place a layer of lasagne on top. Spread the reserved eggplant over lasagne and sprinkle with Parmesan. Bake uncovered for 45 minutes, until cheese is brown.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, cook and stir ground beef until brown. Add mushrooms and onions; saute until onions are transparent. Stir in pasta sauce, and heat through.
- In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.
- Spread a thin layer of the meat sauce in the bottom of a 13x9 inch pan. Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used, reserving 1/2 cup mozzarella. Cover pan with aluminum foil.

- Preheat oven to 350°.
- In a mixing bowl, combine the egg, parmesan cheese, Italian seasoning, cottage cheese, and 1 cup mozzarella cheese; set aside.
- In a large skillet, brown the beef, onion, and garlic together until the beef is done; drain excess grease.
- Add water and all but 1 cup of spaghetti sauce to beef.
- Spread reserved spaghetti sauce into the bottom of a greased 13x9 inch pan.
- Layer 5 to 6 lasagna noodles over the sauce, overlapping or breaking to fit.
- Spread half the cheese mixture over the noodles.
- Spoon a third of the beef mixture over the cheese layer.
