FRENCH CHICKEN IN SHERRY SAUCE
This is a good dish to use when entertaining because you can get everything ready ahead of time and then stick it in the oven at the appropriate time with nothing to do but baste a few times during the cooking. It is also a "beautiful" dish when prepared and garnished with the orange slices. It appears to have taken a lot more effort than exerted.

Steps:
- Place chicken breasts, skin-side up, on broiler pan and broil 2 inches from heat for 10 minutes or until skin is browned.
- Place chicken in casserole.
- Sprinkle with salt, onion, mushrooms and green pepper.
- Combine orange juice, water, Sherry, flour, brown sugar, orange rind, salt and pepper in saucepan; blend well.
- Cook over medium heat, stirring constantly, until sauce thickens and bubbles.
- Add parsley; pour over chicken.
- Bake at 375 degrees for 45 to 60 minutes.
- Baste several times during baking.
- Sprinkle with paprika; garnish with orange slices, if desired.

- For brine, in a large saucepan, bring water and salt to a boil. Cook and stir until salt is dissolved. Remove from the heat; cool to room temperature., Place a large heavy-duty resealable plastic bag inside a second large resealable plastic bag; add chicken. Carefully pour cooled brine into bag. Squeeze out as much air as possible; seal bags and turn to coat. Refrigerate 1-2 hours, turning several times., Preheat oven to 400°. Drain and discard brine. Rinse chicken with cold water; pat dry. Sprinkle with 1/2 teaspoon pepper. In a large ovenproof skillet, brown chicken in oil over medium heat. , Bake, uncovered, 20-25 minutes or until a thermometer reads 170°. Remove chicken and keep warm. Drain drippings, reserving 1 tablespoon., In the drippings, saute garlic for 1 minute. Add broth, sherry or additional broth and thyme. Bring to a boil; cook until liquid is reduced to 1 cup. Discard thyme. Stir in the butter, lemon juice and remaining pepper. Serve with chicken.

CHICKEN IN SHERRY SAUCE (GLUTEN FREE)
This is a Bette Hagman recipe. So few ingredients, yet such a rich meal. We made it dairy free also and everyone loved it, although hubby had to dig out the mushrooms! I cut the breasts into strips, although that makes it harder to brown than whole breasts. She says she serves mashed potatoes to put extra sauce over. Prep time depends on the chicken you use.

- In a large skillet, brown the chicken in the olive oil.
- While the chicken is cooking, prepare the soup base. Mix the powdered soup base with the 1/4 C water in a small pan. Add chicken broth and cook over medium heat, stirring constantly, until thickened.
- Add the mushrooms and the sherry. and pour over the browned chicken to cover.
- Reduce heat and cook until the chicken is tender.

Steps:
- Put the chicken in a non-stick frying pan.
- Cook slowly over moderate heat with no fat added until well browned.
- Drain off melted fat.
- Add the onion, broth and sherry.
- Sprinkle with seasonings.
- Cover and simmer over very low heat until nearly tender, 40 to 50 minutes.
- Uncover. Tip pan and skim fat form the liquid with a bulb-type baster.
- Continue to simmer uncovered until the liquid is reduced by half.
- Whisk milk and flour together and stir into the pan.
- Cook and stir until sauce is bubbling and thick.

- Preheat oven to 325 degrees F (165 degrees C).
- Place chicken in a 9x13 inch baking dish. Bake for 25 to 30 minutes, or until chicken is no longer pink and juices run clear.

CHICKEN CREPES WITH ASPARAGUS AND MUSHROOMS

- Make filling:
- Heat 5 tablespoons butter in a 2-quart heavy saucepan over moderate heat until foam subsides. Whisk in flour and cook roux, whisking, until pale golden, about 2 minutes. Gradually add milk and broth, whisking, and bring to a boil, whisking. Reduce heat and simmer gently, whisking frequently, until velouté sauce is silky and thick, about 25 minutes. Reserve 1/2 cup sauce for topping.
- Cook shallot in remaining tablespoon butter in a 10-inch heavy skillet over moderate heat, stirring, until softened, 2 to 3 minutes. Add mushrooms and cook, stirring, until lightly browned, about 4 minutes. Stir into velouté sauce along with chicken and Sherry.

- Make crêpes:
- Sift together flour, salt, nutmeg, and pepper to taste into a bowl. Whisk together milk, whole egg, and yolk in a small bowl, then gradually whisk into flour mixture. Force batter through a fine sieve into a bowl.
- Heat a dry 7- to 8-inch nonstick skillet over moderately high heat until hot, then brush very lightly with some melted butter. Spoon about 2 tablespoons batter into skillet, tilting to coat bottom. (If batter sets before skillet is coated, reduce heat slightly for next crêpe.) Cook until underside is lightly browned, 6 to 10 seconds, then loosen crêpe with a spatula and flip. Cook until just cooked through, about 20 seconds, and transfer to a plate. Make 15 more crêpes in same manner, brushing skillet with melted butter as needed and stacking crêpes on plate.
- Assemble and bake crêpes:
- Preheat oven to 350°F.
- Spread 1/4 cup filling across center of 1 crêpe and roll into a cylinder. Transfer, seam side down, to buttered baking dish, then assemble more crêpes in same manner, fitting them snugly. Bake in middle of oven 15 minutes.
- Make topping while crêpes bake:
- Stir together yolk, 2 tablespoons cream, and reserved 1/2 cup sauce until smooth. Beat remaining 3 tablespoons cream with a whisk until it holds soft peaks, then fold into yolk mixture.
- Spoon topping over crêpes and broil 5 to 6 inches from heat until lightly browned, about 2 minutes.
- Heat butter in skillet, then add reserved asparagus tips and toss until warm.
- Put 2 crêpes on each of 8 plates and top with asparagus tips.
