Tasty meal for a family on the go. This is one of my go-to meals when it's dinnertime and I haven't had the time to plan for our meal. Serve over pasta, rice, steamed veggies, or by itself.

FRENCH FRIED ONIONS
A homemade alternative to the Durkee® brand. I use these for casserole recipes. I will never buy store-bought French fried onions again. This recipe makes a lot! I often just use one onion and about 1/2 cup of milk and 1 cup of flour with seasonings if I just want to use them for one dish. Warning: You may have to make what the original recipe calls for because they are so yummy and you won't be able to stop eating them!

Easy gravy-like sauce accompanies flavorful chicken. Crunch of veggies is nice contrast in texture. Hubby (who isn't crazy for onions, raved...3-year-old even ate it up!). Makes a nice one-dish meal.

FRENCH FRIED CHICKEN
When fast-food restaurants first started, their goal was to serve good, old-fashioned, country-style home-cooking. These days, it's the reverse...home cooks try to reproduce fast-food. A recipe such as this is similar to what Colonel Sanders wanted to mass market as good as home-cooking when he established KFC, but this old timey recipe is nothing like take-out food. Turkey can also be prepared using this method. From the Mississippi Valley chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Overnight resting time not included in preparation time. Preparation time approximate.
