Easy, great summer salad for picnics!

Frito® Corn Salad image

Steps:

  • Mix corn, Cheddar cheese, creamy salad dressing, red bell pepper, green bell pepper, red onion, milk, and black pepper together in a bowl. Fold corn chips into salad right before serving to retain crunch.

1 (10 ounce) package frozen corn, thawed
1 cup shredded Cheddar cheese
1 cup creamy salad dressing (such as Miracle Whip®)
½ red bell pepper, diced
½ green bell pepper, diced
¼ red onion, diced
milk, or as needed
ground black pepper to taste
¼ cup corn chips (such as Fritos®), or to taste

This salad sounds weird but it is so surpisingly GOOD!!

Corn Salad with Fritos image

Steps:

  • 1. Don't add the Fritos until you are ready to serve. This recipe does not make good leftovers because the Fritos go soggy. It looks like a small recipe but it does grow once you get the Fritos in.

2 can(s) whole yellow kernal corn - drained
1 small red bell pepper - chopped small
1 small green bell pepper - chopped small
1 small bundle of green onion - chopped small
1/2 to 1 c miracle whip or mayo
1 c shredded cheddar cheese
COMBINE THE ABOVE INGREDIENTS AND MIX WELL.
CHILL FOR AT LEAST AN HOUR BEFORE SERVING
JUST BEFORE SERVING ADD:
1 regular sized bag of chili cheese fritos

I tried this at a Christmas brunch the quilt guild had. I had to hunt down the one who brought this in and get the recipe.

  • Mix all the ingredients except the chips.
  • Add the chips in before serving otherwise the chips will get soggy.
  • Red peppers are expensive so you can just use green instead.

  • Mix all ingredients and refrigerate. Right before serving mix in half bag of crushed fritos and sprinkle the remainder on top of salad.
