EASY STRAWBERRY JELLO SALAD WITH COOL WHIP
Steps:
- Boil one cup water on stove top, and mix into bowl with jello powder in mixing bowl. Add in one cup cold water and stir. Chill jello, preferably in a shallow pan, for about 45 minutes or until it is completely cool, just starting to set. Pour the jello into a large mixing bowl. Mix the jello up vigorously, for about one minute. Using an electric mixer is great for this step. But watch out it splashes. This breaks up any jello bits that have started to set, and adds air to the mix. Then fold in the Cool Whip and then strawberries. Mix completely, but be gentle and don't deflate the mix by stirring too aggressively. If you want to add in mini marshmallows, do it now. Add them in about 1/2 cup at a time to make sure you don't overdo it. Transfer to a 9×13 pan for serving, or into individual dishes if you prefer. You can top with whipped cream and sliced strawberries if you prefer. If you want to dress up this dish, spread a spoonful of strawberry jam in the bottom of a glass dessert dish or shallow glass. Then add the salad mix. After the dish has chilled, dollop with some fresh whipped cream and a slice of strawberry.

Light-tasting and delicious! My mother's famous dessert recipe has completed many holiday meals and makes a stunning summery cake. This works beautifully with strawberries as well.

- Butter a 9-inch tube pan. Break angel food cake into chunks; set aside.
- Stir raspberry gelatin and boiling water together in a bowl until gelatin is dissolved; place gelatin in the refrigerator to cool slightly, about 10 minutes. Stir raspberries with syrup into gelatin.
- Beat cream in a chilled glass or metal bowl with an electric mixer until soft peaks form; fold whipped cream into raspberry mixture.
- Pour about 1/4 cup of raspberry mixture into prepared pan. Place 1/3 of cake chunks into pan; pour 1/3 of remaining raspberry mixture over cake. Repeat layering with remaining ingredients, ending with the raspberry mixture. Chill in refrigerator until firm, about 2 hours.
- To remove from pan, center a serving plate over tube pan; invert.

- Put gelatin mix in bowling water. Stir until dissolved.
- Add cold water and enough ice cubes to equal 1 1/4 cup of water.
- Put in blender and blend 30 seconds.
- Add whipped topping.
- Blend until smooth.
- Pour into four dessert dishes. Refrigerate at least 20 minutes or until set.

FROZEN CREAMY JELLO
One of our favorite summer side dishes - Creamy Frozen Jello!

Steps:
- In a saucepan, bring pineapple and sugar to full rolling boil on stove-top; remove from heat.
- Stir in box of jello and let cool.
- In a separate bowl, whip whipping cream (unflavored - don't worry about adding any sugar because this dish is sweet enough). Fold in sour cream to whipped cream, then add to jello mix and whip until it's completely mixed together.
- Line bottom of 9 x 5" loaf pan with wax paper. Gently pour creamy jello mix into prepared pan.
- Cover with aluminum foil and freeze for at least 4-6 hours (preferably overnight).
- When ready to eat, remove from the freezer and let it sit for 5 minutes.
- Slice in half lengthwise, and then into 3/4" slices.

- Make the first peach flavored jello according to package instructions (I used 2 cups ice water for it to cool faster), pour into a 9x13" glass pan and refrigerate until set (1-2 hrs).
- After the first layer of jello has been in the fridge at least 45 mins, start on your cream layer: In a medium bowl, combine 2 packets of unflavored gelatin with 1 cup boiling water and stir until fully dissolved. Stir in 1 cup cold water. Pour in condensed milk and stir with a spoon until blended. Let cream layer sit at room temp (no more than 45 min), then gently pour over your set jello layer.
- Once cream layer is nearly set (this takes about 5 min in the fridge), top with slices of peaches. Note: If you want the peaches to stay put in a pattern and not float up, you want to place them on the cream layer before it is fully set. Place back in the fridge to fully set.
- You want to start your last jello layer right after the cream layer goes into the fridge. Make the second package of peach flavored jello according to package instructions and let sit on the counter until it is room temperature (30 min - it's faster if you use ice water) then gently pour over the top of your set peaches and refrigerate until entire jello is fully set. Note: Do not pour warm jello over the cream layer or it will start to melt and become mottled.
