This is a wonderful variation of classic pot roast. My family really enjoys it. The fruit is a nice change from the usual vegetables that normally accompany this dish.-Linda South, Pineville, North Carolina

Steps:

  • Place fruit and onion in a 3- or 4-qt. slow cooker; add apple juice. Top with roast; sprinkle with seasonings. , Cover and cook on low until meat is tender, 6-8 hours. Serve beef with fruit mixture.

Steps:

  • In the crock pot, soak the dried fruits and ginger in the beer for 1 to 2 hours.
  • Stir in brown sugar, cinnamon, and honey.
  • Brown meat in oil over medium high heat.
  • Place the meat on top of the fruit in the crock pot.
  • Cook on low setting for 10 to 12 hours, or on high for 5 to 6 hours.

Steps:

  • In 5-quart Dutch oven over medium-high heat, in hot shortening, cook chuck roast until well browned on all sides.
  • Add onions, apple cider or juice, brown sugar, salt, seasoned pepper and cloves; heat to boiling. Reduce heat to low; cover and simmer 3 1/2 hours or until meat is almost fork-tender, turning meat occasionally and adding more cider or juice during cooking, if necessary.
  • Add the apricots and the pitted prunes to the mixture in the Dutch oven. Continue cooking 20 minutes or until the meat is fork-tender. Place the meat on a warm platter.
  • Spoon the fat from liquid in the Dutch oven. If you like, blend flour and water until smooth; gradually stir into the pan liquid and cook over medium heat. If you like, for a little extra flavor, you can add 2 teaspoons of Gravy Master cooking and browning sauce. Stir constantly until the mixture is thickened. Serve sauce with the meat.

Pork Pot Roast with Root Vegetables image

Steps:

  • Preheat the oven to 300 degrees F. Season the roast very generously with salt and pepper, and then dust lightly with the flour.
  • Put a Dutch oven over medium-high heat, and then add the olive oil. When the oil is hot, add the roast, and brown deeply on all sides, about 4 minutes per side.
  • Remove the roast to a platter. Stir in the vinegar, shallots, celery, carrots, parsnips and garlic, and then set the roast on top of the vegetables. Pour the chicken stock and bourbon around the meat, cover, and roast in the oven for 2 hours.
  • Transfer the roast to a cutting board. Spoon the vegetables and pan juices onto a large serving platter. Slice the roast, arrange the meat on top of the vegetables, and serve family style.

One 3-pound boneless pork shoulder roast, fat trimmed, at room temperature

Steps:

  • Preheat oven to 350°F. Mix first 6 ingredients in small bowl. Rub spice blend all over beef.
  • Cook bacon in heavy large ovenproof pot over medium heat until browned and lightly crisp. Using slotted spoon, transfer bacon to paper towels to drain. Pour off all but 2 tablespoons drippings from pot. Increase heat to medium-high. Add beef and cook until browned on all sides, about 12 minutes total. Transfer beef to plate. Add red wine to pot; bring to boil, scraping up browned bits. Boil until reduced to 1/2 cup, about 5 minutes. Add broth and bacon. Place beef atop bacon. Scatter onions, shallots, garlic, and bay leaves around beef.
  • Cover pot, transfer to oven, and roast 1 hour. Turn beef over; stir onions. Cover and roast 1 hour longer, adding water by 1/4 cupfuls if dry. Transfer beef to plate. Add carrots, parsnips, and celery to pot; stir to coat. Place beef atop vegetables, cover, and roast until beef and vegetables are tender, about 45 minutes longer. Transfer beef to platter. Spoon off fat from surface of sauce. Season sauce to taste with salt and pepper. Pour sauce over beef and serve.

  • Preheat oven to 325° F. Sprinkle all sides of roast with garlic salt. In a Dutch oven over medium-high heat brown roast in butter or margarine on all sides. Remove from heat.In a small metal saucepan warm brandy. Ignite and pour over roast spoon liquid over roast until flame dies.Add pineapple syrup and bouillon to roast. Sprinkle with fines herbes. Add prunes and apricots. Cover tightly and bake for 4 to 4 1/2 hours or until meat is tender, adding water if needed. Transfer roast to a heated platter cover and keep warm. Skim fat from surface of pan juices.In a small bowl mix water and cornstarch until smooth. Stir into pan juices. Stirring over medium heat, bring to a boil and boil for 1 to 2 minutes or until thickened. Add pineapple slices and green onions, spooning gravy over to heat through. Place fruits around and on top of meat cover with sauce.

Steps:

  • Preheat oven to 350°F. Using long slender knife, carve out 3/4-inch-diameter horizontal tunnel through center of pork. Chop carved-out meat and reserve. Using handle of wooden spoon, firmly pack apricots and prunes into tunnel of roast. Place roast on rack in roasting pan; rub with 1 tablespoon oil. Sprinkle roast with 1/2 teaspoon marjoram, salt, and pepper. Scatter onion, carrots, garlic cloves, and chopped meat around rack in pan. Drizzle vegetables with 1 tablespoon oil; sprinkle with 1 teaspoon marjoram. Roast pork until instant-read thermometer inserted into thickest part of meat (not stuffing) registers 150°F, stirring vegetables occasionally, about 1 hour 25 minutes. Transfer pork to cutting board; tent with foil to keep warm.
  • Whisk butter, flour, and both mustards in small bowl to blend. Add broth and wine to roasting pan; place on 2 burners and simmer juices over medium heat until mixture is reduced to 1 1/2 cups, scraping up browned bits, about 3 minutes. Strain liquid into small saucepan; skim fat from surface. Bring liquid to boil. Whisk in mustard mixture; simmer until sauce thickens slightly, whisking frequently, about 3 minutes. Season with salt and pepper.
  • Cut pork between ribs into chops. Serve with sauce.
